1/4 cup salt
4 cups water
2 tablespoons brown sugar
2 tablespoons apple cider vinegar
3 cloves garlic (smashed)
3 rosemary sprigs
4 pork chops

Steps:

  • Add salt, brown sugar, and apple cider vinegar to the water in a large bowl. Whisk until salt and sugar dissolve.
  • Add rosemary and garlic to the bowl.
  • Pierce the pork chops with a fork on both sides.
  • Place them in the brine solution to submerge fully. Then cover with plastic wrap.
  • Place in the refrigerator for 1/2 hour to 2 hours.
  • When you are ready to cook the brined pork chops, remove them from the brine and rinse with cold water.
  • Let them sit at for 15 minutes at room temperature before cooking. Pat dry with paper towels.

1/4 cup kosher salt
1/4 cup sugar
2 cups water
2 cups ice water
4 center-cut pork rib chops (1 inch thick and 8 ounces each)
2 tablespoons canola oil
BASIC RUB:
3 tablespoons paprika
1 teaspoon each garlic powder, onion powder, ground cumin and ground mustard
1 teaspoon coarsely ground pepper
1/2 teaspoon ground chipotle pepper

Steps:

  • In a large saucepan, combine salt, sugar and 2 cups water; cook and stir over medium heat until salt and sugar are dissolved. Remove from heat. Add 2 cups ice water to cool brine to room temperature., Place pork chops in a large resealable plastic bag; add cooled brine. Seal bag, pressing out as much air as possible; turn to coat chops. Place in a 13x9-in. baking dish. Refrigerate 8-12 hours., Remove chops from brine; rinse and pat dry. Discard brine. Brush both sides of chops with oil. In a small bowl, mix rub ingredients; rub over pork chops. Let stand at room temperature 30 minutes., Grill chops on an oiled rack, covered, over medium heat 4-6 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving.

Brining pork is a way of improving texture and flavor, since brining meat causes meat to absorb liquid, a seasoned brining liquid makes a for a much juicier and tastier cut of pork. This is a brine I have used in the past when I grill thick-cut pork chops, I really believe that you will never go without brining your chops again after you have tasted this. I have also used this same brine on my pork roasts when I rotisserie them on the outdoor grill. Plan ahead the chops or roast need to brine for a minimum of 10 hours, but no longer than 10 hours, they will start to take on the texture and flavor of a ham, brine your meat early in the morning to grill in the evening, I have even brined for 5 hours and the pork was till moist, remember Kosher salt only, regular coarse salt will create an overpowdering salty taste.

1/3 cup kosher salt (use ONLY Kosher salt!)
3/4 cup sugar
1 cup maple syrup
3 tablespoons Dijon mustard
1 -2 teaspoon dried red pepper flakes
1/2 cup gin
1/2 teaspoon whole cloves
1/4 cup fresh rosemary, chopped
10 -12 garlic cloves, minced (or smashed)
2 tablespoons chopped fresh ginger
8 cups water
10 -12 thick-cut pork chops (center cut, about 1-1/2 inch thick)

Steps:

  • Mix all the brine ingredients together in a pot and bring to a boil.
  • Turn off heat and stir the brine well with a spoon to insure the sugar, salt and maple syrup has dissolved.
  • Let the brine cool, then place brine in a large glass dish or bowl.
  • Add in pork chops (making certain that all the chops are covered completely with brine).
  • Cover and refrigerate for NO MORE than 10 hours.
  • Remove the pork from the brine and pat dry without rinsing.
  • Season the pork with pepper ONLY (do not season with salt they are salty enough from the brine!).
  • Grill as desired.

2 cups apple juice
1 tablespoon coarsely ground black pepper
1/4 cup salt
1/4 cup light brown sugar
1 teaspoon red pepper flakes
5 rib end pork chops, about 1 1/2 pounds
1 tablespoon grill seasoning

Steps:

  • In a large pot over medium-high heat, add 1 cup of water, apple juice, pepper, salt, sugar and red pepper flakes. Bring to a simmer making sure to stir occasionally to dissolve the salt and sugar. Remove from heat and add to a large bowl with 2 cups of ice.
  • Once the brined has cooled add pork chops. Brine for at least 4 hours or up to 24 hours in the refrigerator.
  • Remove pork from brine, rinse with cold water and pat dry with paper towels.
  • Heat grill or grill pan over medium heat. Sprinkle 1 side of the pork chops with 1/2 the grill seasoning. Place chops on hot oiled grill, seasoned side down. Sprinkle the topside with remaining grill seasoning. Grill chops for 4 to 5 minutes per side. Let rest for 5 minutes before serving.

6 pork chops, about 1 inch thick each
2 cups cold water
3 tablespoons brown sugar
1 tablespoon kosher salt
1 cup apple cider
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon fresh ground black pepper
3 stalks fresh rosemary, whole branches
2 bay leaves

Steps:

  • In a bowl add the brown sugar, kosher salt and apple cider. Stir to dissolve.
  • Add 2 cups of cold water to the bowl. Add two tablespoons of olive oil, balsamic vinegar, pepper, rosemary branches and bay leaves.
  • Place the pork chops into a large sealable plastic bag. Place this plastic bag into another of equal size to offer extra safety. The plastic bags can be standing in a large pot to make it more secure. Pour the brine overtop of the chops and seal the plastic bags. Place in the refrigerator to rest for a minimum of 4 hours up to overnight.
  • After the required time has passed, remove the pork chops from the brine and place on a large tray. Pat them dry with paper towel and dispose of the brine. The pork chops have to come to room temperature before grilling.
  • Preheat the barbecue to 500°F/250°C with heat on one side of the grill and no heat on the other.
  • Lightly brush both sides of the pork chops with olive oil and season with salt and pepper. Sear the pork chops over direct high heat for 6 minutes, turning once halfway through cooking time. Lower the temperature to 300°F/150°C and move the chops to the cool side of the grill.
  • Continue to cook the pork chops over indirect medium heat for about 8 minutes per side with the lid closed.
  • Once the juices run clear, take the pork chops off the grill and tent with aluminium foil. Allow to rest before serving.
