EVERYONE'S FAVORITE SPINACH SALAD WITH POPPY SEED DRESSING
This recipe quickly becomes the favorite of pretty much everyone that tries it. It's so tasty, it's easy to make, and the ingredients are interchangeable! You can use the dressing immediately or make it in advance and store in refrigerator up to a couple of days. I have substituted pears and mandarin oranges for the strawberries and feta instead of blue cheese. Be creative! YUM!

Steps:
- Toast the pecans: Preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake for 8 to 10 minutes, until the pecans smell fragrant and the center of a pecan is tan when the pecan is broken in half. (Do not walk away from the oven in the last few minutes of cooking. This is when nuts love to burn.) Transfer to a cutting board and roughly chop.
- Place the sliced onions in a bowl and cover with cold water. Let sit while you prepare the rest of the salad (this keeps their flavor but removes the harsh onion bite).
- Prepare the dressing: In small mixing bowl or large liquid measuring cup, whisk together all of the dressing ingredients-vinegar, oil, poppy seeds, honey, mustard, salt, and pepper-until well combined. (Alternatively, you can shake the ingredients together in a mason jar with a tight-fitting lid).
- Assemble the salad: Place the spinach in a great big serving bowl. Add the strawberries. Drain the red onion and add it as well. Drizzle about half of the dressing over the salad and toss to coat the leaves. Assess the amount of dressing. You want the spinach leaves to be nicely moistened but not swimming in dressing. Add a little more if needed to suit your preferences. Add the feta and pecans. Toss lightly to combine. Serve immediately, with extra dressing on the side as desired.

SPINACH, STRAWBERRY, MANDARIN SALAD WITH POPPY SEED DRESSING
This is a wonderful and refreshing salad that I got from Best of Bridge. I played around with it a bit and added a few other fresh fruits to it. This is yummy and great to offset a very rich main dish, such as my Death to Dieter's Lasagna.

SPINACH SALAD WITH POPPY SEED DRESSING
I like this salad because it isn't fruity like many spinach salads out there. My cousin always brings this to family dinners and everybody loves it, even the ones that don't like spinach! Be sure to make the dressing the night before! The original recipe called for 1 lb. of swiss cheese. I think that's a bit much and usually make it with 1/2 lb.

- Whisk the white wine vinegar and sugar until the sugar is mostly dissolved (it's okay if there is still some undissolved sugar). Peel the shallot and grate it on a microplane or the smallest holes on a box grater directly into the bowl. Add the poppy seeds, salt, and ground mustard, and whisk to combine.
- Whisking the dressing steadily, pour the olive oil into the dressing in a slow stream. Continue whisking until completely combined.
- Transfer to a covered container and store in the fridge for several weeks. The dressing will separate as it sits; shake to recombine before using.

- For the salad: Add all of your ingredients to a bowl and toss to combine. Or you can add the spinach to a shallow bowl and then line the toppings on top (this is what I did), toss before serving.
- For the dressing: Add everything to a mason jar, add the lid, shake to combine. Shake well before using.
- You can dress the salad right before serving (the recipe makes more than you will need) or you can let everyone dress their own, pouring the dressing right out of your mason jar. I like to let everyone add their own dressing.

- Dressing: Combine all the ingredients for the dressing in a food processor starting with 3 tablespoons of honey and a big pinch of salt and pepper. Blend until the dressing is smooth. Taste and adjust with additional honey or salt and pepper as desired. I prefer this one with around 3½ tablespoons of honey.
- Broccoli Salad: Steam the broccoli if you'd like, I did because I wanted it to have a more vibrant color. Combine the ingredients for the salad in a large bowl. Dress the entire salad if you'll finish it all within 24 hours. Otherwise, mix just what you need and keep the two separate, they'll last much longer this way.
