ORECCHIETTE WITH FRESH TOMATOES AND SAUSAGE
It's one of those dishes I always come back to for more. Best thing is, there is room to tweak it a bit to suit your style. The type of sausage you use will greatly affect the taste of the whole dish. I'm partial to Sicilian-style chicken sausage for this recipe. Garnish each bowl with Parmesan cheese.

Steps:
- Heat butter and oil in a large skillet over medium heat. Add onion and garlic; cook and stir until the onion starts to soften, about 2 minutes.
- Increase heat to high and add pancetta to the skillet. Cook and stir until crispy, 3 to 5 minutes. Remove casings from the sausages; add sausage meat to skillet. Cook and stir until browned, 3 to 5 minutes. Pour in wine and scrape the bottom of the skillet.
- Toss mushrooms into the skillet. Cook, stirring occasionally, until slightly softened, 5 to 10 minutes. Add tomatoes, basil, oregano, and salt. Stir to combine. Reduce heat to low; cover and simmer, stirring occasionally, until the sauce is thick, 1 to 2 hours.
- Fill a large pot with salted water and bring to a rolling boil. Stir in orecchiette and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Reserve 1/2 cup of cooking water and drain without rinsing the pasta.
- Stir spinach into the sauce in the skillet. Cook until wilted, about 1 minute. Toss pasta into the skillet and stir to combine everything. Stir until heated through, adding some reserved pasta water if the sauce seems too thick.

ORECCHIETTE WITH FRESH TOMATOES AND SAUSAGE
The extra effort of using fresh tomatoes is so worth it...a fresh, sweet taste that you just can't get out of the can.

Steps:
- Heat a large skillet over medium heat. Add butter and oil. Once the butter is melted, add the onion and garlic. Cook until the onion is starting to get soft.
- Turn the temp up to medium high and add the pancetta, cook until crispy. Remove the casings from the sausage then add to skillet and brown. Pour in the wine and scrape up those delicious browned bits.
- Toss in the mushrooms and stirring occasionally, cook till they are slightly softened.
- Add the tomatoes (any extra juices too), basil and oregano, and salt to taste, and stir to combine. Turn heat to low, cover and simmer for one to two hours, stirring occasionally.
- While the sauce is simmering, cook the pasta (make sure you have good salty water) until just al-dente. Drain the pasta, reserving 1/2 cup pasta water (DO NOT RINSE).
- Back to the skillet -- add the spinach and cook till it begins to wilt. Then toss in the pasta and stir to combine everything -- stir frequently until everything is heated through. (add some reserved pasta water if the sauce seems too thick)
- Spoon into bowls and top with fresh Parmesan cheese. Enjoy!

Steps:
- Bring a pot of salted water to a boil and cook the orecchiette according to package instructions.
- Meanwhile, heat the oil in a large, heavy-bottomed skillet over medium-high heat. Add the sausage and cook, breaking it up with the back of a spoon, until it starts to brown, 4 to 5 minutes. Remove the sausage to a bowl with a slotted spoon, leaving all the oil in the skillet.
- Add the onions to the oil and cook until they start to soften and turn translucent, about 2 minutes. Add the garlic to the skillet and cook, stirring, for 30 seconds. Add the tomatoes and red pepper flakes and cook, stirring occasionally, until the tomatoes start to blister and split, about 4 minutes. Add salt and pepper.
- Add the beans and return the sausage to the skillet. Cook until warmed through. Add the pasta and toss until it is completely coated. Add the Parmesan in batches, stirring to incorporate and letting it melt before more is added. Stir in the basil.
- Plate the pasta and top with more Parmesan and basil. Serve immediately.
ORECCHIETTE WITH SAUSAGE AND RED PEPPER SAUCE
Steps:
- Make sauce:
- Remove sausage meat from casings. In a large heavy skillet heat oil over moderately high heat until hot but not smoking and cook sausage, stirring to break up lumps, until golden. Transfer sausage with a slotted spoon to a plate and pour off all but about 3 tablespoons of fat from skillet. Add bell peppers and garlic to skillet with salt and pepper to taste and cook over moderate heat, stirring, until bell peppers are softened, about 5 minutes.
- In a blender or food processor coarsely purée tomatoes with juice and stir into bell pepper mixture with sausage. Simmer sauce, covered, stirring occasionally, 15 minutes. Sauce may be made ahead, cooled completely, uncovered, and chilled, covered, 1 day or frozen 1 month.
- In an 8-quart kettle bring 7 quarts of salted water to a boil. Cook orecchiette until al dente (about 6 minutes for fresh, longer for dried) and drain in a colander. In a large heated bowl immediately toss pasta with sauce.
ORECCHIETTE WITH SAUSAGE, BEANS, AND MASCARPONE
Another one from Giada off of Food Network. I love this recipe because its light in fat and calories, yet rich, savory, and satisfying. I like to use hot turkey sausage to give it some zing. This is a very simple recipe, with a huge payoff. Enjoy!!

ORECCHIETTE WITH ROASTED AND SUNDRIED TOMATOES
The comforting flavours in this dish make it one of my favourites to serve up during the colder fall and winter months. Topped with roasted grape tomatoes and grated cheese, orecchiette pasta is the ideal domed pasta shape for cradling savoury sun-dried tomato pesto and aromatic fresh basil.
