PASTA WITH CHICKEN IN CREAMY GARLIC SAUCE



Pasta With Chicken in Creamy Garlic Sauce image

Wonderful pasta dish in a great creamy garlic sauce. I also have used crab meat instead of the chicken.

2 cups shell pasta
2 tablespoons canola oil
4 boneless skinless chicken breasts, cubed
4 cups 2% low-fat milk
3 tablespoons flour
3 tablespoons butter or 3 tablespoons margarine
2 -3 minced garlic cloves
1 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon nutmeg
1/2 cup grated parmesan cheese
3/4 sliced mushrooms, sauteed
1/3 cup frozen peas

Steps:

  • Boil pasta in lightly salted water.
  • Fry chicken in canola until lightly browned, set aside.
  • In large pot sauté garlic in butter or margarine, do not brown.
  • Add flour, salt, pepper, and nutmeg to garlic and butter or margarine and mix to form a roux.
  • Slowly add milk, whisking to prevent lumps.
  • Add parmesan cheese and mix well.
  • Cook over medium heat stirring often until sauce thickens.
  • Add chicken, mushrooms, and peas to the sauce.
  • Drain cooked pasta and mix into sauce.
  • Serve immediately.

This simple recipe developed by my father is delicious to any garlic lover. This is a great one dish meal when served over pasta or rice.

4 boneless chicken breasts
3/4 cup sour cream
1/4 cup butter
4 -5 cloves garlic, crushed
3 tablespoons fresh parsley, chopped
salt and pepper

Steps:

  • Melt butter in skillet over medium/low heat and add garlic.
  • When garlic becomes fragrant add the chicken and sour cream, increase heat.
  • Cook until chicken is cooked thoroughly and sauce has slightly reduced.
  • Add parsley and salt and pepper and allow flavors to blend.
  • Serve chicken over rice or pasta with extra sauce.

Serve up creamy garlic chicken with fluffy mashed potato and spinach for a comforting family dinner. This simple and satisfying recipe is the perfect midweek meal

1kg floury potatoes , peeled and chopped
50g Flora Buttery, plus 2 tbsp
1 onion, finely chopped
3-4 garlic cloves, crushed
4 skinless chicken breasts , cut into strips
150ml white wine
300ml crème fraîche
½ small bunch parsley , finely chopped
200g baby spinach
½ lemon, juiced

Steps:

  • Cook the potatoes in boiling salted water for 20-25 mins until tender when pierced with a knife. Meanwhile, heat the 2 tbsp Flora Buttery in a frying pan over a medium heat until melted, then fry the onion for 10 mins until softened. Stir in the garlic, fry for a minute more, then add the chicken and fry for 5 mins until lightly golden.
  • Pour in the wine, bring to a simmer and reduce until halved. Stir in 250ml of the crème fraîche. Cook for 5 mins until the chicken is cooked through, and the sauce has thickened slightly.
  • Drain the potatoes, leave to steam dry for 1 min, then mash with the 50g Flora Buttery, remaining crème fraîche and some seasoning, until smooth. Stir the herbs and spinach through the chicken and cook for a minute or so until the spinach wilts. Add the lemon juice and some seasoning. Serve spooned over the creamy mash.
