SAUSAGE AND SAUERKRAUT
This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

Steps:
- Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
- Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
- Bake in the preheated oven until bubbling, about 1 hour.

Steps:
- Put the cold butter in a cold pan with the diced onion, and slowly bring to a simmer on medium heat.
- This brings out the sweetness of the onions.
- Simmer for about 10 minutes.
- Add minced garlic and simmer 2 more minutes.
- Add next 3 ingredients.
- Combine with the sauerkraut (undrained and not rinsed), kielbasa and potatoes.
- Bring to a simmer on the stove top.
- Cover loosely with foil and place in a preheated 225°F oven for 3 hours.

- Preheat oven to 350 degrees F. Lay a large sheet of Reynolds Wrap® Heavy Duty Aluminum Foil on a baking sheet. In the center of the foil, combine the sausage, onion, sauerkraut, oil, butter, pepper and caraway seeds; mix well. Bring up foil sides. - Heat the butter in a large skillet with a lid over medium heat; cook and stir the onion and garlic until the onion is translucent, about 5 minutes. Stir in the water, potatoes, carrots, beef bouillon granules, sugar, and caraway seeds; bring to a boil. - Preheat oven to 300ºF.
- Place bacon, onion and carrot in heavy large ovenproof Dutch oven over medium-high heat.
- Saute until onion is tender but not brown, about 5 minutes.

SAUSAGES AND SAUERKRAUT

- In a large skillet over medium-high heat, fry the onion in the goose fat until it starts to brown. Add the sauerkraut, and heat it through for 5 minutes. Then add 1 cup of water, cover with a lid, and cook for 20 minutes. Then add the apple, juniper berries, and the bacon. Stir well, add 3 fluid ounces white wine, and 2 tablespoons water. Cook for 35 minutes. After 30 minutes of cooking, add the remaining 2 fluid ounces of white wine.
- Put the cabbage and salt alternately in a terra cotta pot, and press down with a weight or heavy pan until juice covers the shredded cabbage. Cover the pot with a cloth, and weight it down with planks and stones. Place in the refrigerator for 4 to 6 weeks before cooking it.
- All ingredients and equipment need to be very cold when making sausage.
- Cut the neck and belly of pork, and grind it into a large bowl. Add the mace, cardamom, marjoram, salt, and pepper, and mix it all together with your hands. Add the eggs, and mix again. Then add the milk, and mix again.
- Place the casing over a funnel. Stuff the casing with the meat mixture, and then tie the casing to make your desired size of sausage links.
- Once you have made all of the sausages, heat a large skillet over medium-high heat. Add enough oil to lightly film the pan, and let oil heat. In batches, add the sausages to the hot oil, and fry until browned and fully cooked through. Serve with the steaming sauerkraut, and mustard, if desired.

- In a large saucepan, cover the potato cubes with water and boil until just slightly tender, 5-7 minutes. Drain the potatoes and set aside.
- In a large, non-stick skillet, add the Polish sausages and 1/2 cup of water. Cook the sausages over medium heat until the water evaporates. Then pan-fry the sausage until golden. (7-10 minutes total) Remove the sausages from pan.
- If the sausages did not release much grease, heat 1 tsp of butter in the pan.
- Add the onions and sauerkraut and saute until dry and golden, 3-5 minutes. Push onion mixture to one side of the pan.
- Add the remaining 2 tsp of butter to the empty side of the pan and add the boiled potatoes. Gently toss the potatoes in the hot butter before mixing all the ingredients in the pan together.
- Let mixture fry, stirring every 1-2 minutes, until the potatoes are golden and begin to crisp, 4-5 minutes.
- Taste the hash and season with salt and pepper, as desired.
- Return sausage to the pan and heat for 1-2 minutes. Serve hot!

- Preheat oven to 325 degrees Fahrenheit.
- Bring sausage to boil and simmer 15 minutes; drain and set aside.
- Cut bacon into small pieces.
- Begin browning, then add diced onion.
- Saute together until bacon is almost crisp.
- Drain mixture, reserving bacon grease.
- Drain sauerkraut (do not rinse).
- Add sauerkraut and brown sugar to bacon mixture.
- Mix in about 2 Tablespoons reserved bacon grease and water.

- Have a little taste of the sauerkraut. If it's too sour, use a colander and rinse it in cold water, then drain it.
- Roughly chop the sauerkraut, pieces shouldn't be longer than 1 inch (2.5 cm).
- Peel the onion, chop it finely.
- Peel the apples, cut into quarters and remove the core.
- Slice both sausages into rounds, roughly 0.5 inch (around 1 cm) thick. Slice the bacon into thin slices.
- Set up your oven to 356°F / 180°C, we'll need it soon.
- Heat up 2 tablespoons of butter. Add chopped onion, season it lightly with salt, cook for a minute on medium heat, stirring from time to time.
- Add in sausage and bacon slices. Fry for 2 to 3 minutes, stirring regularly, as the onions start to brown. Take it off the heat. If you're using a regular frying pan, move its contents into an oven-proof dish.

- Pour in the chicken stock, enough to cover the sauerkraut. Cover the dish with a lid.
- Place the dish in the oven for 90 minutes. After that time take the dish out and stir well. If it's too dry, add some more stock (or water).
- Cover again and return to the oven for another 90 minutes.
- Serve warm with some bread or potatoes on the side.

- Ingredients! Nothing too fancy in this one: 4 large or 8 small sausages of the kielbasa or bratwurst variety. two good handfuls of sauerkraut (about 2 cups, I would guess)
- Brown the Sausages! Heat a pan over medium heat, add a tiny bit of oil if you like, and cook the sausages for about five minutes or so. Stir them often so they get brown all over.
- Add Onions and Cook Until Softened. Cook them until they begin to get translucent and soft. :) This will take another five minutes or so... make sure to stir them around quite often.
- Add the Sauerkraut. How you process the sauerkraut in this step is up to you. Some people like to rinse then squeeze their sauerkraut, and some people choose to just squeeze out the excess liquid.
- Add Water and Vinegar and Simmer. Add about 1/3 cup of water and the vinegar to the pan and mix well. Let cook on low heat, stirring often, until the water is mostly evaporated.
- Serve! I especially like this with mustard and boiled potatoes. Would also be good as a filling for a sandwich! :D It also keeps well for a few days, so you could have a delicious but stinky lunch at work.
