BEEF & BEAN BURRITOS RECIPE BY TASTY
Here's what you need: ground beef, taco seasoning, flour tortillas, refried bean, shredded mexican cheese blend

Steps:
- Add ground beef to a large skillet over high heat and sprinkle with taco seasoning. Cook, breaking up the meat, until browned. Drain the fat and set aside to cool.
- Assemble the burritos by microwaving the flour tortilla for 20 seconds, and begin to layer burrito starting with refried beans, followed by the cooked beef and cheese.
- Fold in the left and right sides of the tortilla and roll it up from the bottom, tucking the bottom edge under the filling. Wrap in parchment paper and label. Freeze up to 1 month.
- To reheat from frozen, wrap the burrito in a damp paper towel and microwave for 2-3 minutes, flipping halfway or until the center is hot. Let stand 1 minute before eating.

- In a small saucepan, bring water to a boil. Add rice. Return to a boil. Reduce heat; cover and simmer for 5 minutes. Remove from the heat. Let stand until water is absorbed, about 5 minutes. , Meanwhile, in a large skillet, saute green pepper and onion in oil until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Stir in the chili powder, cumin and pepper flakes until combined. Add beans and rice; cook and stir until heated through, 4-6 minutes., Spoon about 1/2 cup of filling off-center on each tortilla; top with 2 tablespoons salsa. Fold sides and ends over filling and roll up. Serve with cheese and sour cream if desired.

- Preheat the oven to 170 to 180 degrees F.
- In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
- Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
- Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
- When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
- Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.

- Heat the oil in a large pan - a casserole is ideal. Fry the onions for 8 mins, then add the garlic, spices and oregano and cook for 1 min. Crumble over the mince and sizzle for 5 mins, stirring, until browned. Stir in the sugar and leave for a minute, then splash in the vinegar and pour in the tomatoes.
- Simmer for 5 mins then tip in the beans and the water from the can. Season, stir and simmer everything for 20 mins until the beef is in a thick gravy. The sauce can be prepared up to 2 days ahead, chilled and reheated with a splash of water or frozen for 6 months.
- To make the burritos, heat the tortillas following pack instructions. Pile some rice and beef sauce along each tortilla and scatter over your choice of topping. Fold over the ends and roll up to seal. Secure by wrapping with foil if you want. Eat immediately.

SPEEDY BEEF AND BLACK BEAN BURRITOS

- 1. Preheat oven to 350 degrees. Wrap tortillas in foil; place on center rack in oven; heat for 15 minutes.
- 2. Meanwhile, combine beef, onion and garlic in skillet; cook and stir over medium heat until done; drain fat.
- 3. Stir beans, salsa, and cumin into beef mixture. Cover and simmer over medium heat for 10 minutes, stirring once.
- 4. Stir cilantro into filling; spoon filling down center of warm tortillas. Top with cheese. Roll up and serve immediately with your favorite toppings (sour cream, guacamole, tomatoes, more cheese -- yum).
CHEESY BEEF AND BEAN BURRITOS

- To Make the Filling: Brown the ground beef together with onion. Once the meat is brown, drain off the fat and add all of the spices and the refried beans. Mix to incorporate. Once it is heated through, add the enchilada sauce. Stir to combine. Once that is heated through, cover with shredded cheese and mix to combine. Once the mixture is fully heated and the cheese is melted, decided if you need to thin out the filling. If so, add the 1/2 cup of water. If you are happy with the consistency, omit the water.
- Bring the mixture to a low simmer. Continue to cook for about 10 minutes to allow the flavors to meld and develop. Then remove from the heat and set aside.
- To Fill the Burritos: Spoon 1/4-cup of the meat mixture onto the center of a tortilla shell. Wrap the burrito by folding in the sides and rolling up tightly. I do this by folding in the sides on the ends of the filling first. I then fold the bottom half of the shell over the filling, pressing it firmly towards me and then rolling toward the top.
- To freeze: I wrap each burrito in a piece of foil. I allow the burritos to cool completely and then I place them in two airtight zip-top freezer bags. These store in the freezer for up to 3 months.To serve: Remove foil and heat in the microwave for about 1 minute to 1 minute 30 seconds. Rotate the burrito and check to see if it's heated through. If not, heat for another 15-30 seconds. Microwave times vary due to size and type of microwave being used.

- Heat a tablespoon or so of Olive Oil in skillet and add garlic and onion. Saute for a minute or two.

- Add onions and beef to a large skillet and cooked over medium heat until onions are softened and meat is cooked through. Add garlic and sauté for 30 seconds. Drain off any excess fat (if there is any).
- Stir in all of the spices/seasonings, followed by refried beans until well incorporated, followed by sour cream and salsa. Heat through.
- If using raw tortillas, cook according to package directions. If using cooked tortillas, stack them together on a plate, cover with a damp paper towel and microwave for 30 seconds or until warmed through.

- In a 12" skillet set over medium-high heat add ground beef and yellow onion.
- Cook the meat until it's no longer pink and the onions are translucent. Drain any fat.
- Add in the taco seasoning and prepare according to the packet directions.
- When the meat is fully cooked stir in the cilantro and remove from the heat.
- Lay out the flour tortillas and spread a layer of refried beans into the middle of each tortilla.

- Add half of taco seasoning packet and cook 2 more minutes.
- Stir in tomatoes with chiles, and refried beans. Cook 5 minutes.

- First, make the rice. Get a medium saucepan that has a lid onto the stove and heat the butter in it over medium high heat. Once it is nearly melted, add the rice and let it lightly toast in the butter for just a minute. While it cooks stir in the packet of Sazon Goya seasoning. Then pour in the chicken stock. Let the liquid come to a gentle boil, then put the lid on and turn the heat to low. Let the rice cook until tender for about 20 minutes.
- While the rice cooks, make the beef and bean filling. Get out a large skillet with deep sides and heat the olive oil in it over medium high heat. Brown the beef in it while you break it up. As the beef cooks through, season it with the salt, chili powder, smoked paprika and pepper. Once the beef is fully cooked add in the lime juice, beer and black beans. Let the mixture simmer for 10 minutes for the flavors to meld together.
- The rice and the beef mixture should be done at around the same time. Take them off of the heat. Stack the tortillas on a microwave safe plate and just warm them up a little in the microwave on high for about 15-20 seconds. Plate the first tortilla and pile on a generous scoop of the rice, followed by a big scoop of the beef and bean mixture. Sprinkle cheddar cheese on top, then salsa and guacamole as desired. Sour cream would also be a great topping. Fold in the short sides of the burrito, then roll it up tightly. Serve immediately and repeat to assemble 7 more burritos!
