My grandmother often made rice dishes when I was young. I forgot about this casserole until I found myself one day adding the same ingredients to leftover rice. The memories came flooding back, and I've made this recipe regularly since then. -Lorna Moore, Glendora, California

1 pound ground beef
1/3 cup chopped onion
1/2 cup chopped green pepper
2 cups cooked long grain rice
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (11 ounces) whole kernel corn, drained
1 can (2-1/4 ounces) sliced ripe olives, drained
6 bacon strips, cooked and crumbled
2 teaspoons chili powder
1 teaspoon garlic powder
1/2 teaspoon salt
1-1/2 cups shredded cheddar cheese, divided
1/2 cup dry bread crumbs
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink; drain., Stir in rice, tomatoes, corn, olives, bacon and seasonings; heat through. Stir in 1 cup cheese until melted., Transfer to a greased 11x7-in. baking dish. Sprinkle with remaining cheese. Toss bread crumbs with butter; sprinkle over top., Bake, uncovered, 15-20 minutes or until cheese is melted.

Baked Tasty Rice was my grandma's specialty and always a favorite of anyone who tried it. It's so easy - and really is amazingly tasty - that it may become your family's favorite, too. Both oven and Instant Pot directions are included.

1 tablespoon organic bullion (the original recipe always used beef, but chicken works well, too)
3 tablespoons butter (cut into three pieces)
1/2 teaspoon marjoram
1 cup long grain white rice (*see notes for adapting to brown rice)
2 cups chicken or beef broth (or water, but broth gives more flavor)

Steps:

  • Place the bullion, butter, marjoram, rice, and broth (or water) in a 2-qt. baking dish, preferably one with a cover. Do not stir or mix. (See Notes for Instant Pot directions.)
  • Place in the oven, covered with lid or tin foil, at 350 degrees for one hour.
  • Stir before serving.

1 lb ground beef
1 small onion, chopped
1/2 cup chopped green pepper
2 cups cooked rice
1 (14 ounce) can diced tomatoes, undrained
1 (11 ounce) can whole kernel corn, drained
1 (2 1/4 ounce) sliced olives, drained
6 bacon, strips cooked and crumbled
2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon salt
1 1/2 cups shredded cheddar cheese, divided
1/2 cup dry breadcrumbs
1 tablespoon butter or 1 tablespoon margarine, melted

Steps:

  • In a a skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink. Drain grease. Stir in rice, tomatoes, corn, olives, bacon, chili powder, garlic powder and salt. Bring to a boil, then remove from heat. Add 1 cup of the cheese, stir until melted.
  • Transfer to a greased 11x7x2 inch baking dish. Sprinkle with remaining cheese. Toss bread crumbs with butter, sprinkle over cheese. Bake, uncovered, at 350 for 15-20 minutes or until cheese is melted.

Steps:

  • In a skillet, cook ground beef, onion, and green peppers over medium heat until done, drain.
  • Stir in rice, tomato, corn, olives, bacon, chilli powder, garlic, and salt.
  • Bring to a boil; remove from heat.
  • Add 1 cup of the cheese; stir to melt.
  • Transfer to a 11x7x2 baking dish.
  • Sprinkle with remaining 1/2 cup cheese.
  • Toss bread crumbs with melted butter & sprinkle over top of cheese.
  • Bake uncovered in a 350 deg oven for 15-20 minute.
  • You can also at step 5 transfer to a crock pot follow steps 6 & 7 and then cook in the crock pot for 2 hours on low.

This chicken and rice casserole is one of my favorite recipes from my grandmother. It makes great leftover meals, too, perfect for someone with a busy lifestyle.

1 teaspoon butter
2 cups diced cooked chicken
1 (10.5 ounce) can condensed cream of chicken soup
1 cup cooked rice
1 cup diced celery
¾ cup creamy salad dressing (such as Miracle Whip®)
4 large hard-cooked eggs, chopped
1 tablespoon lemon juice
1 teaspoon minced onion
½ cup cornflake crumbs
½ cup slivered almonds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 11x7-inch baking dish with butter.
  • Stir chicken, soup, rice, celery, salad dressing, eggs, lemon juice, and onion together in a large bowl. Pour into the prepared baking dish. Sprinkle with cornflake crumbs.
  • Bake in the preheated oven for 45 minutes. Sprinkle with almonds and bake until bubbly, about 15 minutes longer.
