Easy Poached Salmon With Dill image

This is a simple recipe that tastes gourmet. Even your picky eaters will enjoy this one. Add more of the ingredients you love and omit any you don't enjoy or don't have on hand. This one is easy to prepare and hard to ruin. Great served with rice and veggies or salad **Extra fresh dill weed can be frozen in a plastic bag and keeps it's flavour beautifully.**

Number Of Ingredients 6

1 kg thawed salmon fillet, with skin on 1 side (may substitute with steelhead trout)
1 -1 1/2 tablespoon pickled capers (can be found in grocery store located in same aisle as pickles)
1 tablespoon chopped dill weed (use fresh or frozen but not dried)
1/4 cup thinly sliced onion
1 tablespoon lemon juice or 1/2 fresh lemon, peeled and sliced
salt and pepper

Steps:

  • Pre-heat oven to 350 degrees fahrenheit.
  • Remove any visible bones and cut off the head and tail (if it hasn't already been done for you) If using a poacher place the tray in the poacher, add 1/4 cup water and place your salmon in the tray skin side down.
  • If you do not have a fish poacher (how many of us do?) you can use any oven safe pan large enough to hold your fish.
  • Just crumple and crinkle a medium sized sheet of tin foil and place your fish on the foil skin side down.
  • Add enough water to just come to the edge of the foil without spilling onto the fish (approx 1/3 cup).
  • On top of the fish sprinkle all ingredients.
  • Cover with lid or tin foil.
  • Cook for 12-20 min's.
  • For RARE fish, cook just until white liquid emerges from fish (this is the cooked fish oil).
  • It will be pinky white on the outside and peachy pink inside.
  • For more well done fish, cook until fish is a pinky white color all the way through.
  • Place on a platter to serve.
  • Leave onions, capers and dill on the fish.
  • Slice lemons on the side for those who like fresh lemon juice.
  • This salmon is great served with rice and steamed veggies or a salad.

½ cup dry white wine (a good Sauvignon Blanc)
½ cup water
Several sprigs of fresh dill or sprinkle of dried dill
A sprig of fresh parsley
1 shallot, peeled and thinly sliced or a few thin slices of onion
Salt
1 to 1½ pounds salmon fillets, pin bones removed
Freshly ground black pepper
A few slices of fresh lemon to serve

Steps:

  • Prepare the poaching liquid: Put the wine, water, dill, parsley and shallots or onions in a sauté pan, and bring to a simmer on medium heat.
  • Add the salmon: Sprinkle the salmon fillets with a little salt. Place salmon fillets, skin-side down on the pan, and cover.
  • Cook and serve the salmon: Cook 5 to 10 minutes, depending on the thickness of the fillet, or to desired done-ness. Do not overcook. Serve sprinkled with freshly ground black pepper and a slice or two of lemon on the side.

6 tablespoons chopped cornichons
3 tablespoons chopped fresh dill
1 tablespoon fresh lemon juice
1 cup crème fraîche or sour cream
Salmon
3 8-ounce bottles clam juice
3 cups dry white wine
10 whole peppercorns
8 fresh dill sprigs
6 lemon slices
8 6- to 8-ounce salmon fillets
Butter lettuce, lemon slices and fresh dill sprigs

Steps:

  • For Sauce:
  • Place cornichons, dill and juice in small bowl and stir to blend. Add crème fraîche and stir gently just until combined; do not overmix or sauce will thin out. Season with salt and pepper. (Can be made 2 days ahead. Cover; chill.)
  • For Salmon:
  • Combine first 5 ingredients in large, deep skillet; bring to simmer over medium heat. Simmer 5 minutes. Reduce heat to medium-low. Add half of salmon, cover and simmer until just cooked through, about 7 minutes. Transfer to platter. Repeat with remaining salmon. Cover salmon; chill until cold. (Can be made 1 day ahead. Keep chilled.)
  • Line platter with lettuce. Top with salmon. Garnish with lemon slices and dill sprigs. Serve with sauce.

Salmon recipes can be cooked many ways, but in my book, there's nothing as easy as oven baked salmon in white wine and lemon for a healthy dinner, or to make and use for meal prep all week long.

6 6-ounce salmon filets
1/8 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1 lemon (, sliced)
1/2 cup white wine
8 ounces creme fraiche ((or mix 3 parts sour cream and 1 part plain yogurt))
2 tablespoons minced shallot
2 tablespoons fresh dill

Steps:

  • Preheat the oven to 425°F.
  • Season the salmon with the salt and pepper. Place the salmon, skin side down, in a baking dish or on a high-rimmed baking sheet. Top the salmon with the lemon slices and add the wine to the dish or baking sheet.
  • Bake until the salmon is cooked through, about 12 to 15 minutes.
  • In a medium bowl, mix the creme fraiche, minced shallot, and dill. Spoon over each of the salmon filets and serve.

1 tbsp olive oil
1 leek , thinly sliced
250ml chicken or fish stock
100g crème fraîche
140g frozen peas
140g frozen broad beans
4 skinless salmon fillets
small bunch chives , snipped
mash , to serve

Steps:

  • Heat the oil in a large, deep frying pan with a lid. Cook the leek for 5-10 mins until soft but not coloured, then pour in the stock. Simmer for a few mins until reduced slightly then add the crème fraîche and season. Cook for 1 min more.
  • Tip in the peas and beans, nestle in the salmon fillets, then turn down to a simmer and cover. Cook for 12-15 mins, depending on the thickness of the salmon, until cooked through. Sprinkle on the chives and serve with mashed potato, if you like.

1 lemon
200g half-fat crème fraîche
small pack tarragon , leaves only, chopped
1 garlic clove , crushed to a paste
400g green beans , trimmed and halved
4 salmon fillets
cooked baby new potatoes , to serve

Steps:

  • Zest the lemon and cut into wedges. Mix together the crème fraîche, tarragon, garlic, lemon zest and a squeeze of juice, season to taste and set aside.
  • Bring a large shallow pan of salted water to the bowl and cook the green beans for 3 mins until just done. Remove with a slotted spoon, drain and cool under cold running water before tossing with the crème fraîche mixture.
  • Bring the pan back to the boil, then turn the heat down to a very gentle simmer and slide in the salmon pieces. Poach for 8-10 mins or until cooked to your liking. Remove from the pan and put on kitchen paper before plating up. Serve with the green beans and baby new potatoes.

6 fresh dill sprigs, plus extra to serve
1 lemon, thinly sliced
450 ml boiling water
720 g salmon fillets
1 small cucumber, roughly chopped
2 fresh dill sprigs
200 ml creme fraiche

Steps:

  • Place the peppercorns, dill and four lemon slices(reserve the remaining slices for the garnish) in a large saute pan and pour in the boiling water. Add the salmon, cover with a tight fitting lid and cook for 5 minutes. Turn off the heat and allow salmon to cool completely in the water-this should cook it perfectly. Remove from the pan then transfer to a plate, cover and chill until ready to serve.

6 lightly smoked salmon fillets
15g unsalted butter , melted
200ml crème fraîche
50g salmon roe
100g cucumber
3 tsp sea salt flakes
350ml white wine vinegar
2½ tbsp granulated sugar
2 tsp celery seeds
1 tsp black peppercorn , bruised
150g carrots
100g radishes
150g cauliflower , cut into small florets
½ red onion , finely sliced
½ small bunch dill , torn into little sprigs

Steps:

  • First, for the pickles, cut the cucumber into rounds and layer it in a sieve, sprinkling with 2 tsp salt as you go. Set over a bowl and leave for a couple of hours - the salt will draw out the moisture.
  • Bring 200ml water to the boil in a pan with the white wine vinegar, sugar, 1 tsp salt, celery seeds and black peppercorns. Leave to cool.
  • Peel the carrots and cut them into batons. Clean the radishes really well, then cut them in half lengthways. Squeeze the drained cucumbers of excess moisture.
  • Put all the vegetables in a 1-litre sterilised jar with the dill and pour the cooled vinegar over them, then seal with a lid. Leave to sit at room temperature for two days before serving, or keep chilled. Will keep in the fridge for four weeks.
  • Heat the oven to 190C/170C fan/gas 5 and put the salmon fillets on a baking sheet. Brush the fillets with the melted butter and scatter with black pepper. Cook for 14 mins.
  • Serve the salmon with some of the pickled vegetables, a generous tablespoon of crème fraîche on each fillet, finished with a spoonful of salmon roe on top.
