This baked fish is our absolute favorite baked white fish recipe. It's cooked in a delicious lemon garlic butter sauce until tender and flaky. It's a 20-minute dinner recipe you don't want to miss!

EASY LEMON BUTTER BAKED FISH
Lemon butter baked fish is the perfect, easy sheet pan dinner recipe. Baked with asparagus and a delicious lemon butter sauce.

Steps:
- Pre-heat the oven to 200ºC/400ºF and line a sheet pan with parchment/baking paper.
- Combine the butter, lemon, garlic and herbs in a saucepan and bring to a simmer. Cook for 2-3 minutes until fragrant then remove from the heat and set aside to cool slightly.
- Place the fish and asparagus onto the lined sheet pan then season with salt and pepper.
- Pour the lemon butter sauce over the fish and asparagus and top the fish with lemon slices (optional).
- Place in the oven and bake for 10-12 minutes or until the fish and asparagus are cooked. Fish is cooked when it flakes easily and the flesh is opaque, white throughout.
- Remove from the oven and serve.

LEMON BUTTER SAUCE FOR FISH
Recipe VIDEO above (helpful for pre-post browned butter). A Lemon Butter Sauce with Crispy Pan Fried Fish that would be perfectly at home in a posh restaurant, yet is so quick to make at home! Browning the butter gives the sauce a rich, nutty aroma which pairs beautifully with fresh lemon, as well as thickening the sauce and giving it a gorgeous golden colour.

- Place the butter in a light coloured saucepan or small skillet over medium heat.
- Melt butter then leave on the stove, whisking / stirring very now and then. When the butter turns golden brown and it smells nutty - about 3 minutes, remove from stove immediately and pour into small bowl. (Note 2)
- Add lemon juice and a pinch of salt and pepper. Stir then taste when it has cooled slightly. Adjust lemon/salt to taste.
- Set aside - it will stay pourable for 20 - 30 minutes. See Note 3 for storing.
- Pat fish dry using paper towels. Sprinkle with salt & pepper, then flour. Use fingers to spread flour. Turn and repeat. Shake excess flour off well, slapping between hands if necessary.
- Heat oil in a non stick skillet over high heat. When the oil is shimmering and there are faint wisps of smoke, add fish. Cook for 1 1/2 minutes until golden and crispy on the edges, then turn and cook the other side for 1 1/2 minutes (cook longer if you have thicker fillets).
- Remove immediately onto serving plates. Drizzle each with about 1 tbsp of Sauce (avoid dark specks settled at the bottom of the bowl), garnish with parsley and serve with lemon on the side. Pictured in post with Kale and Quinoa Salad.

POACHED COD WITH LEMON-BUTTER SAUCE
From Pierre Franey, a very simple presentation of cod that really brings out the best in the fish. Delicious with a rich, spicy vegetable dish. If you want to concentrate the lemon flavor, grate a little lemon peel over the finished cod. You can also add chopped capers to the sauce.

- Cut cod fillets into four serving size pieces and place in large pan in one layer.
- Add the milk and the water to the pan so that the fish is barely covered--if necessary add more water.
- Add the bay leaf, the parsley sprigs, peppercorns and cloves.
- Bring to a simmer and cover and cook gently for three to four minutes until fish just flakes--cooking time will depend upon the thickness of the fish--do not overcook.
- While the fish is poaching, start the sauce by melting one tablespoon of the butter in a saucepan and briefly cooking the garlic and the shallots in the butter.
- Remove 1/4 cup of the poaching liquid and add it to the sauce, stirring all the while.
- Bring the sauce to a boil, add the lemon juice and swirl in the remaining butter, one tablespoon at a time.
- Remove from the heat and add the minced parsley.
- Taste the sauce and adjust seasoning.
- Drain the fish and serve it hot with the lemon-butter sauce poured over it.

POACHED HAKE W/LEMON BUTTER SAUCE

Steps:
- Fill a saute pan fitted with a lid with water at least 1" deep.
- Throw in parsley, lemongrass, tarragon and peppercorns. Then add the wine.
- Cover the pan and allow the poaching liquid to come to a rolling boil then turn the heat down to low. Cook for 20 minutes to infuse the flavors.
- Bring the liquid back up to a rolling boil. Turn heat back down to the lowest setting. This is done so that the fish will not come apart due to creating violent currents. When the boil settles down, using a thin, flat, slotted spatula, place the fillets gently in the water, and cover for 5 minutes. Remove the fillets to a platter and keep warm. If you need to poach in batches, remember to bring the liquid back to a rolling boil and then back down.
- Heat lemon juice to boiling in a small saucepan.
- One piece at a time, whisk butter into lemon juice, until the sauce is fully emulsified. You should have a thin and creamy sauce.
- Whisk in chervil and your salt and pepper. Pour over fish and serve immediately.
