creamy oat milk, great for making with the leftovers from your morning serving and costs you pennies compared to the products you find on the shelves at the supermarket. This recipe has basically the same quantities and ratios for making rice milk.

1 cup cooked oats (i use thick rolled)
4 -5 cups hot water
1 -2 teaspoon cornstarch
1 tablespoon sugar
1 dash nutmeg
1/2 teaspoon vanilla
1 pinch sea salt

Steps:

  • (To cook steel cut or thick rolled oats, bring 1 cup of water to a boil in a small sauce pan, add 1/2 cup of oats and turn the heat down to med/low, they just want to gently simmer for about 10 minutes. Give it a stir to check to see if the oats have absorbed all of the water.).
  • Bring 5 cups of water to a boil.
  • As you are waiting for the water to boil, add the rest of the ingredients to a blender. As soon as your water is boiling add 3-4 cups to the blender. Be sure that there is room left in the top of the blender and that the lid fits securely or you could risk splashing yourself with hot water when you flip the switch.
  • Turn your blender on low and increase to high speed, blending for about 20 seconds or so. Check the consistency, add more water as necessary to achieve the desired thickness. The mixture will thicken a little as it cools off and eventually chills.

¼ cup rolled oats
1 tablespoon maple syrup
1 splash vanilla extract
1 pinch salt

Steps:

  • Put water, oats, maple syrup, vanilla extract, and salt into a blender. Blend until combined, about 1 minute. If you blend it for too long, it will become slimy.
  • Pour mixture over a thin towel, or very fine strainer, into a bowl. Strain again for the smoothest result. Pour oat milk into a container or cup and refrigerate until cold, about 30 minutes.

You do need to soak the oats overnight, so start soaking the night before you plan to make it. There are several benefits associated with drinking oat milk, including prevention of cancer, stroke and heart disease. Oat milk has no lactose or cholesterol, and is full of vitamin E, fiber and folate. Unlike other dairy alternatives, oat milk can be made easily (and cheaply) at home. 1 cup rolled oats
6 1/2 cups cold filtered water (1 1/2 liters-less for thicker milk)
1 pinch salt (himalayan recommended-I used sea salt)

Steps:

  • Add all ingredients to a large clean bowl and soak over night covered with a cloth.
  • Use a blender or stick blender to whiz the ingredients thoroughly (about 2 minutes).
  • Strain the milk through a fine sieve or muslin cloth into a bowl.
  • Store in a clean glass jar in the fridge.
  • Will keep for several days.
  • You can add cinnamon, vanilla, honey, etc. to sweeten it up and give more flavor or leave plain to use for cooking.

100g porridge oats

Steps:

  • Put the porridge oats in a bowl and cover with tap water until the oats are submerged. Cover the bowl (a shower cap or teatowel work well) and leave for 4 hrs or overnight, somewhere cool, but not in the fridge.
  • Sieve the mixture, discarding the water, and rinse under the tap for a few seconds.
  • Tip the oats into a liquidiser, or food processor. Cover with 750ml cold water and ½ tsp fine sea salt. Blend for 2-4 mins until completely smooth, and there are no oats visible. The finer you make the mixture, the creamier the milk will be.
  • Line a sieve with a clean piece of muslin, or a cloth with a mesh - it needs to have small holes, so a j-cloth or teatowel might not work. (You could also try a fine strainer or meshed coffee filter.)
  • Put the lined sieve over a bowl or jug, and pour in the oat milk. Leave to strain for 1 hr. Every once in a while, use a spoon to scrape the bottom of the cloth to disperse some of the sediment, this will help speed up the straining.
  • When most of the liquid is in the jug, gather the sides of the muslin together and squeeze tightly with both hands to extract the last of the milk. Discard leftover oat pulp (or make a body scrub by adding used coffee grounds).
  • If you want thinner consistency, add 50ml cold water to the mix, before pouring into a bottle or container. See our troubleshooting tips below. Will keep for 2-3 days in the fridge. Shake well before use.

1 tablespoon raw honey or pure maple syrup (optional)

Steps:

  • In a medium bowl, combine the oats and 4 cups cold water and stir to combine. Allow to soak at room temperature for up to 1 hour.
  • Drain the oats (discarding the water) and rinse them. Transfer the oats to a blender, add 4 cups fresh water, and the salt and/or sweetener, if using. Blend until completely smooth, about 2 minutes. Strain through a fine-mesh sieve and chill. Keeps up to 5 days in the refrigerator. Shake before using.

  • Add oats, water (the lesser range will yield thicker, creamier milk, the higher range will yield thinner milk), salt, and any additional add-ins (optional) to a high-speed blender. Top with lid and cover with a towel to ensure it doesn't splash. Blend for about 30 seconds - 1 minute or until the mixture seems well combined. It doesn't have to be 100% pulverized. In fact, over-blending can make the oat milk slimy in texture.
  • Scoop out a small sample with a spoon to test flavor/sweetness. If it's not sweet enough, add more dates.
  • Pour the mixture over a large mixing bowl or pitcher covered with a very thin towel or a clean T-shirt. In my experience, it benefits from a double strain through a very fine towel to remove any oat remnants. A nut milk bag seemed to let too much residue through.
  • Transfer to a sealed container and refrigerate. Will keep in the refrigerator up to 5 days (sometimes more). Shake well and enjoy cold. DO NOT HEAT or it will thicken and become gelatinous in texture. It's delicious as is or added to granolas, smoothies, and baked goods!
