Buttery oat crumble makes for a delightful crust and topping in these Plum Bars. They're easy to prepare in just under 15 minutes and make a tasty bar treat that's great as a snack or for any summer gathering.

225 g (2 1/4 cups) old-fashioned oats
175 g (1 1/4 cup) all-purpose flour
220 g (1 cup) light brown sugar
2.5 g (1 teaspoon) ground cinnamon
2.8 g (1/2 teaspoon) salt
226 g (1 cup) cold unsalted butter, diced
790 g (1 3/4 lbs) plums, sliced about 1/4-inch
55 g (1/4 cup) light brown sugar
6.3 g (1 tablespoon) cornstarch
4 g (1 teaspoon) pure vanilla extract
pinch of salt

Steps:

  • Preheat oven to 350°F/177°C. Line a 9×9-inch baking pan with parchment paper so that it hangs over the sides.
  • In a food processor bowl, pulse together the oats, flour, brown sugar, cinnamon, and salt a few times to mix. Add the butter and pulse together until a butter crumbly mixture forms. The mixture should hold together when you squeeze it.
  • Press 1/2 of the dough into the bottom of the prepared baking pan. Bake for 10-12 minutes or until lightly golden brown.
  • Meanwhile, in a medium bowl, add the plums, sugar, cornstarch, vanilla, and salt. Gently stir to combine. Spoon the mixture into an even layer onto the warm crust. Sprinkle the remaining dough over the plums. Transfer to the oven and bake for 30-40 minutes or until the crumble is light golden brown.
  • Allow bars to cool completely before cutting.

Plums Oatmeal Crumble Bars that are eggless for a quick snack or a healthy breakfast.

All Purpose Flour - 1 cup
Powdered Quick Cooking Oats - 3/4 cup
White granulated Sugar - 1/4 cup
Brown sugar - 1/4 cup
Baking powder - 1/2 tsp
Cinnamon powder - 1/4 tsp
Salt - 2 pinch
Nutmeg - 2 pinch (grated)
Unsalted Cold butter - 100 gms
Plums - 5
Sugar - 2 tsp

Steps:

  • Preheat oven to 190 Degrees C (375 F). Grease a 8×8 square tin and keep aside. I don't have a square tin, so used by 8" round springform tin.
  • Prepare the dry ingredients by whisking together flour, powdered oats, both the sugars, baking powder, cinnamon, nutmeg and salt in a mixing bowl. Keep aside.
  • Stone the plums and slice them thinly. I just sliced them all around the stone and discarded it at last. I did not remove the skin as well.
  • Cube the cold butter and using a pastry cutter work it into the dry ingredients. I just used my finger tips to work the butter into the flour. You can also use the hand mixer.
  • The mixture will look like bread crumbs. Divide it 1:3 by eyeballing the mixture and transfer 3/4 of the mixture into the prepared tin.
  • Press the mixture firmly to the bottom either with your finger tips or by using a small flat bottomed bowl.
  • Arrange the plum slices all around the base and at the end give it a pat down but do not press.
  • Now sprinkle 2 tsp sugar evenly over the arranged plum slices and then sprinkle 1/4 of the dough mixture kept aside, covering the plum slices completely. Do not press now.
  • Place the tin in the Pre heated oven and bake for 35 - 40 mins.
  • Cool it completely in the tin itself. If you want neat slices, let it cool in the refrigerator overnight or for 8 to 10 hours.
  • Cut into bars or triangles as per your choice.
  • Serve it as a breakfast along with a glass of milk or as a dessert.

2 pounds red plums, cut in 1/2, pitted, and cut in 1-inch wedges
2/3 cup granulated sugar, divided
1 1/4 cups all-purpose flour, divided
2 tablespoons orange juice
1/2 pint fresh raspberries
1/3 cup light brown sugar, packed
1/4 teaspoon kosher salt
8 tablespoons (1 stick) cold unsalted butter, diced
1/2 cup quick-cooking oats
1/2 cup sliced almonds, plus extra for sprinkling

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl, combine the sliced plums, 1/3 cup of the granulated sugar, 1/4 cup of the flour, and the orange juice and toss well. Add the raspberries and toss lightly. Pour into a 9 by 12 by 2-inch baking dish.
  • For the topping, place the remaining 1 cup of flour, the remaining 1/3 cup of granulated sugar, the brown sugar, and the salt in the bowl of a food processor fitted with a steel blade and pulse a few times to combine. Add the butter and pulse until the butter is the size of peas. Pour the mixture into a bowl, add the oats, and work it with your hands until it's in large crumbles. Add 1/2 cup of the almonds and mix well.
  • Spread the topping evenly over the plums, making sure the fruit is covered. Sprinkle with some extra almonds. Bake for 40 minutes, or until the fruit is tender and bubbly and the topping is golden brown. Serve warm or at room temperature.

3 cups whole-wheat flour
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon fine salt
3/4 teaspoon ground cinnamon
1 cup rolled oats
1 pound (4 sticks) unsalted butter, at room temperature
1 teaspoon vanilla
2 large eggs, beaten
2 tablespoons pure cane syrup (see Cook's Note)
1 cup sliced almonds
One 15.25-ounce jar spreadable cherry jelly, such as Polaner (see Cook's Note)
1 cup dried apricots, diced
5 ripe peaches, diced (about 4 cups)
1 tablespoon cornstarch

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper, leaving 2 inches of excess paper on both ends.
  • In a large mixing bowl, combine the whole-wheat flour, all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon and 1/2 cup of the rolled oats. Using a fork, cut the butter into the dry ingredients. Toss and crumble the mixture in between your fingers until bean-size crumbs are formed.
  • In a small mixing bowl, whisk the vanilla, eggs and 1 tablespoon of the cane syrup. Slowly drizzle the egg mixture into the crumble mixture, using the fork to stir continuously. Check that the crumble holds its shape by squeezing some together in the palm of your hands. Spread three-quarters of the crumble mixture (about 7 cups) onto the lined baking sheet. Press the crumble down to make an even crust. Bake until light golden and set on the surface, 10 to 12 minutes.
  • Meanwhile, add the almonds and remaining 1/2 cup rolled oats to the reserved crumble mixture. Set aside to use as the topping.
  • Remove the crumble crust from the oven and cool for 1 minute. Using a small offset spatula, gently spread the cherry jelly over the crust. Sprinkle the dried apricots evenly over the jelly.
  • In a medium mixing bowl, toss the peaches with the cornstarch and remaining 1 tablespoon cane syrup. Spoon the peaches in an even layer over the apricots and jelly. Sprinkle the remaining crumble mixture over the fruit.
  • Bake until golden brown and fragrant, about 40 minutes. Cool completely before lifting the crumble out of the pan using the excess parchment as handles. Slice into 36 bars (2 inches by 1 inch). Store in an airtight container.

1 cup sifted all-purpose flour
1 ½ teaspoons baking powder

1 beaten egg
½ cup melted butter

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
  • Spread the plums out into the prepared baking dish and sprinkle with 1/4 cup sugar. In a bowl, mix together 3/4 cup white sugar, flour, baking powder, and salt. Combine with beaten egg and spoon the mixture over the plums. Drizzle batter with melted butter.

1/2 cup butter
1 cup brown sugar
3/4 cup flour
3/4 cup oatmeal (any type but instant)
1/2 teaspoon cinnamon
1/4 teaspoon salt

Steps:

  • In a large mixing bowl combine all the ingredients except the butter.
  • Cut butter into mixture with a pastry blender until mixture resembles coarse bread crumbs.
  • Spread crumbs over prepared fruit mixture of your favorite fruit pie.
  • Do NOT add top crust.
  • Bake as directed in your fruit pie recipe.
  • If crumbs become too dark while baking, cover loosely with foil, but remove foil the last few minutes of bakings so the topping will crisp.
  • Note: when using this topping there is no need to dot the fruit with butter, if your recipe calls for that.

  • Add the plums to a saucepan over medium heat. Stir in the coconut sugar, tapioca flour, vanilla, and cinnamon. Cook down the chopped plums for about 30 minutes or until they’re mostly broken down and reducing. Stir frequently so that the tapioca doesn’t stick to the bottom of the pan. If you want them completely smooth, use an immersion blender for a few seconds to blend up the skins (I don’t find that blending is needed).
  • While the plum mixture is cooking, stir the almond flour, gluten-free rolled oats, oat flour, coconut flour, coconut sugar and cinnamon/nutmeg together in a mixing bowl.
