Steps:
- Heat a smoker or grill to 250 degrees F.
- Soak corn husks in warm water for 15 minutes.
- Mix all of the dry ingredients together in a large bowl and add the ground pork. Combine well.
- Put approximately 6 ounces of the sausage mixture on 8 of the open wet corn husks.
- Put another corn husk in the opposite direction on top and wrap and tie each end with string. (I may triple wrap and turn over half way through as some of mine were very crispy on the bottom.).
- Smoke until the sausage temperature reaches 160 degrees F. on an instant-read thermometer about 1 1/2- 2 hours. Transfer the husks to a serving platter and serve.

- Place the first seven ingredients in a 6-qt. slow cooker; toss to combine. Top with sweet peppers and onion. , In a large skillet, heat oil over medium-high heat. Brown sausages on all sides; place over vegetables. Cook, covered, on low until potatoes are tender, 5-6 hours., Remove sausages; cut diagonally into 2- to 3-in. pieces. Remove vegetables with a slotted spoon; serve with sausage. If desired, sprinkle with basil.

- Place sausage in a skillet over medium heat, and cook until evenly brown. Drain grease.

ITALIAN STUFFED JALAPENOS
Steps:
- Preheat oven to 350 degrees F and set a rack in the middle of the oven.
- Place jalapenos on a sheet tray and roast for 10 minutes. Remove from the oven and let cool. Turn broiler on medium.
- Heat the oil in a medium saute pan. Add the sausage and cook for 5 to 7 minutes. Add the onions, peppers, and garlic and cook to soften for about 5 minutes. Remove and place in a large bowl. Cool to room temperature, then add mascarpone, and Parmesan. Mix ingredients thoroughly and season with salt and pepper.
- Place approximately 1 tablespoon of mixture into each jalapeno half, and top with 1/2 teaspoon of mozzarella cheese.
- Place the sheet tray of stuffed peppers in oven and broil until mozzarella cheese melts.
