SPICY RED CURRY CHICKEN AND RICE

2/3 cup unsweetened coconut milk
2 to 3 teaspoons Thai red curry paste
1 tablespoon Asian fish sauce
3 tablespoons vegetable oil, divided
1 1/2 pounds skinless, boneless chicken thighs, cut into 1/2-inch strips, or skinless, boneless breasts, cut into 1 1/2-inch chunks
Salt and freshly ground black pepper
1/2 pound shiitake mushrooms, stemmed, caps quartered
1 tablespoon very finely chopped fresh ginger
2 large garlic cloves, very finely chopped
1/2 cup water
Toasted peanuts and cilantro leaves, for garnish
Steamed rice and lime wedges, for serving

Steps:

  • In a small bowl, whisk the coconut milk with the curry paste and fish sauce until combined. Heat a large skillet until very hot. Add 2 tablespoons of the vegetable oil and heat until just smoking. Season the chicken with salt and pepper and add it to the skillet in a single layer. Cook over high heat, turning once, until the chicken is browned but not cooked through, 4 to 5 minutes. Transfer the chicken to a plate and pour off the fat in the skillet. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the shiitake caps and stir-fry over high heat until lightly browned, about 5 minutes. Stir in the ginger and garlic, stir-fry for 1 minute. Add the chicken, red curry mixture and the water and bring to a boil. Reduce heat and simmer for 2 to 3 minutes or until the chicken is cooked through. Transfer the chicken and curry sauce to a serving bowl and garnish with peanuts and cilantro. Serve immediately with rice and lime wedges.

2 tablespoons red curry paste
2 tablespoons Greek yogurt
2 teaspoons red chili sauce (sriracha)
4 chicken breasts
2 teaspoons salt
1 teaspoon pepper
1 tablespoon extra virgin olive oil
2 tablespoons shallots, diced
2 teaspoons garlic, minced
2 cups jasmine rice
2 1/2 cups chicken stock
1 tablespoon curry powder
1 tablespoon turmeric
2 tablespoons salt
1 tablespoon pepper
1 tablespoon flat leaf parsley, finely chopped
2 tablespoons Greek yogurt
1 teaspoon fresh ginger, finely diced

Steps:

  • Marinade: Mix the curry paste, yogurt and Sriracha together. Add to a large plastic bag. Add chicken breasts. Rub marinade around chicken until thoroughly coated. Refrigerate 2 hours, up to overnight.
  • Preheat oven to 425 degrees. Remove chicken from plastic bag and place on a cooling rack. Place the cooling rack on top of a baking sheet. Sprinkle with salt and pepper and bake for 10-12 minutes, until chicken is fully cooked.
  • For the rice, add olive oil to a large pot over medium heat. Add shallot and garlic; cook until translucent. Add rice to the pot and toast in the olive oil until a light brown color develops, about 5 minutes.
  • Add curry powder, turmeric, salt and pepper. Toss around to coat rice and toast for about 1 minute. Add chicken stock and bring to a boil. Reduce to a simmer, cover and cook 14-17 minutes.
  • For garnish, mix Greek yogurt and ginger. Salt and pepper, if needed.
  • Add a ladle of rice to a large bowl and top with one chicken breast. Add one small spoonful of ginger yogurt in the center of the chicken and sprinkle the whole plate with parsley.

Rind of 1 kaffir lime (substitute regular lime zest or kaffir lime leaf)

Fish sauce, to taste
2 tablespoons roughly chopped holy basil leaves (if unavailable, sweet basil can be used)
1 cup coconut cream
3 boneless chicken breasts, sliced into small chunks
2 cups coconut milk
2 tablespoons fish sauce
1 cup chopped baby eggplant
1 Thai red chili, stemmed, seeded, and thinly sliced
Steamed rice, for serving

Steps:

  • To make the paste, grind and mash all the ingredients together in a mortar until a thick, red paste is formed.
  • To make the curry, first heat the wok until very hot and add the coconut cream until it begins to boil. Then, add the chicken and curry paste and fry together for a few minutes. Next, add the coconut milk, fish sauce and baby eggplant along with the fresh chilies and simmer for 10 minutes. Remove from the heat and serve with steamed rice.

1/2 lb boneless chicken, uncooked, cut into approximate 1 inch cubes
4 ounces red curry paste (I use 1 can of Maesri paste, use less if you want less spiciness)
1 1/2 tablespoons peanut oil
1 (14 ounce) can coconut milk
1 (14 ounce) can chicken broth (I use broth paste, and mix it in the coconut milk can with water)
1 -2 tablespoon fish sauce (depends how salty you like it)
1 -2 tablespoon brown sugar or 1 -2 tablespoon palm sugar
1 cup unsalted cashews, divided
1 cup grape tomatoes
1 cup frozen pineapple chunks (or fresh, do NOT use canned)
1/4 cup sliced scallion

Steps:

  • Grind or chop (I use a food processor) 3/4 cup of the cashews into a coarse powder; set aside.
  • Heat heavy pan over med-high heat. Add peanut oil, chicken, and curry paste and stir-fry for a few minutes until chicken is no longer pink in center.
  • Stir in coconut milk, chicken broth, fish sauce, sugar, and the ground cashews - make sure no curry is still stuck to the bottom of the pan, or you'll have some burnt bits.
  • When it starts to bubble, reduce heat to low and add tomatoes and pineapple. Simmer for 5-10 minutes, then add scallions and remaining whole cashews just before serving.
  • I prefer serving this over brown rice; the nuttiness of the rice compliments the cashews nicely.

Two 13.5-ounce cans coconut milk (not light)
3 tablespoons red Thai curry paste
1 tablespoon fish sauce
1/2 medium onion, sliced
2 lemongrass stalks, trimmed and banged with the back of a knife, then roughly chopped
4 cloves garlic, smashed
One 1-inch piece fresh ginger, peeled and cut into rounds
1 whole chicken (about 3 1/2 pounds), cut into 6 pieces
Kosher salt
1/2 cup roughly chopped cilantro
1/2 cup roughly chopped basil (preferably Thai basil)
Lime wedges, for serving
Cooked rice or crusty bread, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Whisk the coconut milk, curry paste, and fish sauce together in a 9-by-13-inch baking dish; add the onion, lemongrass, garlic, and ginger. Lightly season the chicken and add it to the baking dish, turning to coat in the sauce, then arranging it skin-side-up.
  • Bake the chicken, basting occasionally with the sauce, until lightly browned on top and cooked through (an instant read thermometer inserted into the center of a breast registers 160 degrees F), 50 to 55 minutes. 1 cup jasmine rice
2 tablespoons peanut oil, divided
1 pound skinless, boneless chicken breast, cut in bite-sized pieces
2 cloves garlic, minced, divided

1 (1/2 inch) piece fresh ginger, minced
2 tablespoons Thai red chile paste
1 (14 ounce) can coconut milk
1 cup chicken broth
1 stalk lemongrass, bruised
3 makrut lime leaves (optional)
1 medium lime, juiced
1 teaspoon fish sauce
1 crown broccoli, cut into bite-sized pieces

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, about 15 minutes. Keep warm until ready to use.
  • Meanwhile, heat 1 tablespoon oil in a large saute pan over medium-high heat. Add chicken, 1/2 of the garlic, salt, and pepper. Cook and stir until chicken is browned and the juices run clear, 8 to 10 minutes. Remove chicken to a plate.
  • Add remaining oil to the same pan. Saute remaining garlic and ginger until fragrant, about 1 minute. Stir in chile paste. Add coconut milk and stir until blended. Simmer for 5 minutes.
