- Work in with hands until it will form balls.

- Using a handheld mixer and a large bowl or a stand mixer fitted with the whisk attachment, combine the cream cheese and peanut butter on medium speed until fully combined and fluffy, 2 to 3 minutes. Lower the mixer speed and add the confectioners' sugar and vanilla. Continue to mix until fully combined, another 2 to 3 minutes. Fold in 3 tablespoons of the mini chocolate chips. Cover the mixture and refrigerate until firm, at least 30 minutes and up to overnight.
- Transfer the mixture to the center of a serving plate, cover loosely with plastic wrap and press down gently to adhere it to the plate. Using your hands, mold the dip into the shape of a football. If the dip gets too soft, put back in the fridge to chill for 10 minutes.
- To decorate, mix together the chocolate sprinkles and remaining mini chocolate chips; set aside. Use the white chocolate chips to create the stitching of the football, gently pressing so the chips adhere to the dip. Use the chocolate chip and sprinkle mixture to cover the rest of the dip, pressing gently to adhere and tilting the plate to fully cover the sides and ends of the football.
- Serve with an assortment of dippers, such as waffle cone chips, pretzels, vanilla wafer cookies and strawberries.

- Line a baking sheet with waxed paper and set aside.
- Mix peanut butter, butter and vanilla together in a large bowl.
- Slowly add one cup of powdered sugar to the creamy mixture, mixing well each time. *Note -- I do not sift my powdered sugar! I just scoop out 1 cup full and dump it in my bowl.*
- By the time you get to the third cup of powdered sugar, the mixture will become very difficult to stir with a spoon. Take your rings off and start mixing with your hands.
- Once all of the powdered sugar is incorporated into the peanut butter mixture, you can start making your balls. Simply pinch off a small amount and roll between your hands to form a small ball. Place the peanut butter balls on the prepared cookie sheet with waxed paper.
- Once you have made all of your balls, melt your chocolate. My favorite way to do this is in the double boiler, but if you don't have one, you can simply put a metal or glass bowl on top of a saucepan with about an inch of water in it. As the water in the saucepan begins to heat up, the steam will heat up your bowl and start melting your chocolate. Be sure to add the shortening to your chocolate - this will make covering your peanut butter balls with chocolate a lot easier.
- One at a time, drop your peanut butter balls into the melted chocolate. Lift the ball out of the chocolate with a fork and then transfer it to the waxed paper.
- Once all of your peanut butter balls are coated, put the cookie sheet in the fridge for 15-30 minutes. This will ensure the chocolate coating is completely hardened.

- In a large bowl, mix the peanut butter, butter, vanilla, Add the icing sugar one cup at a time until your desired consistency has been met. How much confectioners/icing sugar you use will depend on your peanut butter, your butter, the humidity in your house, ETC. Add enough to the mixture until it's a harder dough that you can roll, doesn't stick to your hands too much and will hold it's shape. The dough won't be that sticky, it's a dryer dough but should still roll into balls.
- Roll the peanut butter dough into 1-inch balls and place on a parchment paper-lined cookie sheet.
- Poke a toothpick into the top of each ball (to be used later as the handle for dipping) and place in the freezer until the dough very firm, about 30 minutes.
- Melt the chocolate chips with the shortening in a double boiler or in a bowl set over a pan of barely simmering water. Stir the mixture frequently until smooth and all of the chocolate chips are melted together.
- Dip the now frozen peanut butter balls into the hot melted chocolate by holding onto the toothpick. In order to make them look like real Buckeyes leave a small portion of peanut butter showing at the top as shown in my photos.
- Put each Buckeye back on the cookie sheet. Remove the toothpicks and using your fingertip pat the top of the peanut butter mixture where the toothpick was and smooth it over so there isn't a hole anymore. Refrigerate until the chocolate has set.
- Keep in the refrigerator and between layers of waxed paper to prevent sticking. You can also freeze these for 4-6 weeks.

- Spoon the peanut butter into a mixing bowl.
- Sift the powdered sugar over the peanut butter and pour the melted butter over top.
- Stir until well combined.
- Scoop out twenty 1 tablespoon-size portions of the fudge.
- Roll them into balls.
- Chill for at least 2 hours until really firm.
- Insert the flat end of a thin wooden skewer into a cold peanut butter ball.
- Dip the fudge ball into the melted chocolate leaving about a 1/4 inch circle around the stick.
- Lift the fudge ball out of the chocolate and allow the excess chocolate to drip off.
- Insert the pointed end of the skewer into a block of styrofoam.
- Once you have all the fudge balls dipped in chocolate chill them in the refrigerator for 1 hour.

- Using food processor with metal blade, combine vanilla wafers and confectioner’s sugar. Pulse until well blended. Add softened butter, and pulse again until well blended. Add peanut butter, a little at a time, pulsing after each addition until well blended. Once smooth, transfer mixture to a separate bowl. At this point, you can either wrap the mixture in plastic wrap and chill for an hour, or you can start forming the balls. I find it easy to form the balls immediately, and then chill them afterwards. (You will ultimately develop a method that works for you.)
- I used a scale to weigh each ball. Each ball should weigh 1/4 oz or be approximately a rounded 1/2 teaspoon in size. When you have portioned the desired number of balls you wish to make (I portion all at once, which takes a bit of time, but which passes quickly with a good podcast streaming in the background), chill the balls in the refrigerator until firm (at least one hour). Wrap the remaining dough and store in the refrigerator until ready to use again.
- Meanwhile, slowly melt the chocolate (estimate how much you will need) in the bowl of a double boiler. When the balls are firm, remove only a few at a time (I work with 12 at one time). When the chocolate is melted, whisk until smooth and turn off the heat. Drop a ball into the chocolate, move gently around with a fork, and when completely coated remove ball with a toothpick. Gently lower ball into paper petit fours wrapper and gently twist the toothpick–it should ease out slowly. This process will take a little bit of trial and error, but you will eventually develop a method that works for you. Don’t worry if there is a little blemish revealing some peanut butter on the top of the ball. You can fix that at the end by spooning tiny tiny amount of chocolate over the holes to touch up the open spots.
- When the 12 balls are coated and in the paper cups, sprinkle a tiny amount of Fleur de Sel on top of each peanut butter ball. Chill balls in freezer for 5 minutes to firm. Transfer to a stationary box (I ordered mine on-line), wrap, give and enjoy!
