A Dutch baby is a big, puffy, family-style pancake baked in a sizzling-hot buttered skillet.

3 large eggs
½ cup all-purpose flour, spooned into measuring cup and leveled-off
½ cup milk
1 tablespoon maple syrup, plus more for serving
¼ teaspoon salt
½ teaspoon vanilla extract
3 tablespoons unsalted butter
Confectioners' sugar, for serving (optional)
Fresh berries, for serving (optional)

Steps:

  • Preheat oven to 400°F and set an oven rack in the middle position. Put a 10-inch cast iron skillet or oven-safe nonstick pan into the oven and heat for at least 5 minutes.
  • In a blender, combine the eggs, flour, milk, 1 tablespoon maple syrup, the salt, and vanilla. Blend until completely smooth, scraping down the sides of the blender jar as necessary, about 30 seconds.
  • Open the oven door and drop the butter into the preheated skillet. Close the oven and allow the butter to melt, about 2 minutes (do not let it burn). Carefully remove the hot skillet from the oven and place an oven mitt or dishtowel over the handle to remind yourself that it's hot. Pour the batter into the buttered skillet and carefully place the skillet back into the oven. Bake for about 20 minutes, until puffed and golden. Carefully remove the skillet from the oven (again, place an oven mitt or dishtowel over the handle to remind yourself that it's hot). Dust with confectioners' sugar and top with berries, if desired, then cut into wedges and serve with maple syrup.

These puffed up beauties are actually a sweet version of a Yorkie and are of German origin. Normally eaten for breakfast, make them dessert with boozy, syrupy cherries and ice cream

100g plain flour
3 large eggs
150ml milk
1 tsp vanilla extract
3 tbsp vegetable or sunflower oil
400g can pitted cherries in light syrup, drained (reserve the syrup)
3 tbsp golden caster sugar
2 tbsp brandy or kirsch
vanilla ice cream , to serve

Steps:

  • Tip the flour into a large bowl, make a well in the centre, crack in the eggs, then add the milk and vanilla. Use a large whisk to beat the eggs into the milk, slowly incorporating the flour, until you have a smooth batter. Set aside.
  • Heat oven to 220C/200C fan/gas 7. Pour the oil into an ovenproof skillet pan, frying pan or tart Tatin tin (mine was 20cm in diameter) and place on the middle shelf to heat up - remove the top shelf, if you can, as the pancake will puff up as it cooks.
  • Tip the cherries, sugar and brandy into a frying pan with 2 tbsp of the syrup. Bring to a simmer, then bubble until the liquid is syrupy, adding a splash more cherry syrup if the cherries look dry. Set aside to cool a little.
  • When the pan is red hot, pull out the oven tray and pour in the batter - it should sizzle as it hits the pan. Quickly close the oven and leave undisturbed to cook for 20-25 mins until it looks like a giant Yorkshire pudding and is deep golden brown. Don't be tempted to open the door too early as it will sink. Serve the pancake in the pan, topped with ice cream and syrupy cherries.

I've only ever eaten Dutch babies in the States, where they are brought out to you at the table with great pomp: great pancakes puffed up and golden, still in the cast-iron skillets they were cooked in. Obviously, I had to make my own at home. Not being a restaurant, I don't want to be juggling with heavy pans, giving each person their own, so I've made mine a giant one for sharing; this ain't no baby, that's for sure. The "Dutch" of the title doesn't in fact refer to Holland, or anything to do with that country, but rather owes its name to the fact that this particular pancake comes from the German-American community known as the Pennsylvania Dutch and would originally have been served with melted butter, sugar and lemon, and indeed they often still are. While you can, of course, serve this mega-pancake just sprinkled with granulated sugar and lemon juice or, for a more diner taste, with a side order of bacon and maple syrup, I like it tumbled with berries and dusted with icing sugar with a bowl of creme fraiche within arm's reach. I confess, I also add an ooze of maple syrup as I eat. For US cup measures, use the toggle at the top of the ingredients list.

100 grams plain flour
1½ teaspoons vanilla paste (or extract)

25 grams unsalted butter

Steps:

  • You will need: 1 x 25cm/10-inch cast-iron frying pan/skillet, or 1 x small roasting tin/pan approx. 28 x 21 x 4.5 cm/11 x 8 x 2 inches Preheat the oven to 220°C/200°C Fan/gas mark 7/425ºF, and straightaway put your pan into the oven to heat up while you prepare the batter. Beat the eggs with the caster sugar in an electric mixer until light and frothy. Whisk in the milk, flour, vanilla, salt and grated nutmeg, and beat until you have a smooth but thin batter. Wearing a thick oven mitt, remove the pan from the oven and put the butter carefully into the hot pan or tin and swirl it to melt, then quickly pour in the batter and return it to the oven. 1 tablespoon butter
3/4 cup milk
1/2 cup Pillsbury BEST® All Purpose Flour
2 large eggs
2 tablespoons sugar
1/2 teaspoon almond extract
1/4 cup sliced almonds
1/2 cup Smucker's® Orchard's Finest™ Michigan Red Tart Cherry Preserves
Powdered sugar for garnish (optional)

Steps:

  • HEAT oven to 425 degrees F. Melt butter in 9-inch pie plate in the oven. Remove from oven. Brush butter over entire inside of plate.
  • COMBINE milk, flour, eggs, sugar and almond extract in blender container. Process using several pulses to make a smooth batter. Pour batter into hot pie plate. Sprinkle with almonds. Bake 15 minutes.
  • REDUCE heat to 350 degrees F. Bake 5 to 8 minutes longer or until golden brown. Remove from oven. Spread with cherry preserves. Sprinkle with powdered sugar if desired. Cut into wedges and serve immediately.

VANILLA DUTCH BABY (PUFFED PANCAKE)

3 tablespoons butter
3 eggs
3/4 cup all-purpose flour
3/4 cup milk, heated 20 to 30 seconds in the microwave
1 tablespoon sugar
2 teaspoons pure vanilla extract
Pinch salt
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the butter in a large, ovenproof, nonstick saute pan and place in the oven.
  • Meanwhile, in a blender, combine the eggs, flour, warm milk, sugar, vanilla extract and pinch of salt, and blend on medium-high speed until uniform. (If mixing by hand, combine the eggs with the milk until the mixture is light yellow and no longer stringy, about 1 minute. Add the flour, sugar, vanilla, and pinch of salt, and whisk vigorously to remove the lumps, about 30 seconds.)
  • Carefully remove the hot pan from the oven. The butter should be melted. Swirl the butter around the pan to coat completely, and then pour the remaining butter into the batter and pulse to blend. Pour the batter into the hot pan and return the pan to the oven. Cook until the pancake is puffed in the center and golden brown along the edges, 20 to 25 minutes.
  • Using a spatula, remove the entire Dutch baby from the pan and place on a cooling rack for a few minutes to allow the steam to escape without condensing along the bottom and rendering the pancake soggy. Dust with confectioners' sugar when cooled slightly. Slice the pancake into 8 wedges on a serving platter or cutting board.

This puffy, soufflé-like pancake is just as good for dessert as it is for breakfast. Don't worry when it deflates as soon as it's removed from the oven; that's exactly what's supposed to happen, forming a well for the cherry compote. Serve it immediately, right from the skillet.

1/4 cup honey
2 (3-inch) strips lemon peel
1 tablespoon fresh lemon juice
2 cups fresh (or frozen, thawed) cherries (about 1 pound), stemmed, pitted, halved

4 large eggs
3/4 cup all-purpose flour
3/4 cup whole milk
3 tablespoons sugar, divided

2 peaches, halved, pitted, cut into 1/4"-thick wedges

Steps:

  • For compote:
  • Bring honey, lemon peel, lemon juice, and 1/2 cup water to a boil in a small heavy saucepan. Add cherries and simmer briskly, stirring occasionally, until sauce is syrupy, about 15 minutes. Transfer cherry compote to a medium bowl and chill.
  • For pancake:
  • Preheat oven to 425°F. Melt 2 tablespoons butter in a small saucepan; scrape into a blender. Add eggs, flour, milk, 1 tablespoon sugar, vanilla extract, and salt. Blend batter until smooth; set aside in blender.
  • Heat a 12" cast-iron skillet over medium heat. Add remaining 2 tablespoons butter and remaining 2 tablespoons sugar and cook, stirring constantly, until sugar starts to caramelize, about 2 minutes. Add peaches to skillet; increase heat to medium-high and cook, stirring frequently, until softened, about 2 minutes. Briefly reblend reserved pancake batter. Pour evenly over peaches and transfer to oven.
  • Bake pancake until puffed and golden brown all over, 17-20 minutes (it will deflate as soon as it's removed from the oven). Dust pancake with powdered sugar and serve immediately, passing cherry compote alongside.
  • Do Ahead
  • Compote can be made 1 day ahead. Cover and chill. Remove lemon peel just before serving.
