My girlfriend brought these granola bars over for a playgroup one morning and ever since they've been a staple! My son requests them almost daily so I usually triple the recipe and make 2 trays so we have plenty on hand.

2 cups rolled oats
¾ cup packed brown sugar
½ cup wheat germ
¾ teaspoon ground cinnamon
1 cup all-purpose flour
¾ cup raisins
¾ teaspoon salt
½ cup honey
1 egg, beaten
½ cup vegetable oil
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13 inch baking pan.
  • In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan.
  • Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.

2 cups old-fashioned oatmeal
1 cup sliced almonds
1 cup shredded coconut, loosely packed
1/2 cup toasted wheat germ
3 tablespoons unsalted butter
2/3 cup honey
1/4 cup light brown sugar, lightly packed
1 1/2 teaspoons pure vanilla extract
1/4 teaspoon kosher salt
1/2 cup chopped pitted dates
1/2 cup chopped dried apricots
1/2 cup dried cranberries

Steps:

  • Preheat the oven to 350 degrees F. Butter an 8 by 12-inch baking dish and line it with parchment paper.
  • Toss the oatmeal, almonds, and coconut together on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl and stir in the wheat germ.
  • Reduce the oven temperature to 300 degrees F.
  • Place the butter, honey, brown sugar, vanilla, and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oatmeal mixture. Add the dates, apricots, and cranberries and stir well.
  • Pour the mixture into the prepared pan. Wet your fingers and lightly press the mixture evenly into the pan. Bake for 25 to 30 minutes, until light golden brown. Cool for at least 2 to 3 hours before cutting into squares. Serve at room temperature.

Simple, wholesome ingredients come together to create a chewy homemade granola bar that is better and healthier than any store bought bar on the market.

1 cup pitted dates
1/4 cup maple syrup or honey
2 tablespoons coconut oil (melted)
3 tablespoons peanut butter (or sunflower butter or almond butter)
1/2 tsp vanilla extract
1/2 tsp sea salt (omit if you are using salted peanut butter)
2 cups oats (quick cooking or old fashioned)
1/2 cup optional add ins (chopped nut, raisins, mini chocolate chips, dried fruit, sesame seeds, chia seeds, etc)

Steps:

  • Start by being sure your dates are relatively soft. If they are not, soak in hot water for 5 to 30 minutes. Drain off liquid, reserving if needed.
  • Line an 8x8 or 7x3 pan with parchment paper or wax paper.
  • Process dates in a food processor fitted with an s blade until a thick paste forms. Add in honey/maple syrup, coconut oil, nut butter, vanilla, and salt. Pulse until combined and creamy.
  • Add in oats and pulse until just combines and all the oats are moistened well, adding up to 2 tablespoons of the reserved soaking liquid from dates if needed.
  • Stir in any mix-ins into the batter you desire.
  • Place mixture into prepared pan. Using mositened hands or a piece of wax paper, spread out mixture as evenly as possible.
  • Place in fridge or freezer for 15 minutes until set up. Then slice into bars.
  • Store these bars wrapped individually in wax paper and stored in the fridge.

2 cups rolled oats (make sure they are Gluten Free)
3/4 cup packed brown sugar
1/2 cup ground flax seeds
3/4 teaspoon ground cinnamon (optional)
1 cup all purpose gluten-free flour (I use Gluten free Mama's coconut blend)
1/2 cup raisins (or other dried fruit or chocolate chips)
3/4 teaspoon salt
1/2 cup honey (or 1/4 cup of honey/1/4 cup corn syrup)
1 egg, beaten
1/2 cup vegetable oil
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13 inch baking pan or a cookie sheet.
  • In a large bowl, mix together the oats, brown sugar, flax seed, cinnamon, flour, raisins and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. (*If mixture isn't sticking together add 1 teaspoon of Xanthum gum)Pat the mixture evenly into the prepared pan.

6 c. Rolled Oats (not Quick Oats)
4 tbsp. Butter, Melted, Plus More For Greasing
1/4 c. Vegetable Or Canola Oil
1 tsp. Salt
1 c. Brown Sugar
1/2 c. Honey
1/4 c. Apple Juice
1/4 c. Molasses
3 tsp. Vanilla Extract
1 1/2 c. Rice Krispies
1 c. Wheat Germ
1/2 c. Finely Chopped Pecans
1/4 c. Roughly Chopped Almonds
8 oz. weight Milk Chocolate Or Chocolate Almond Bark, Melted (optional)

Steps:

  • Preheat the oven to 350 degrees F.In a bowl, toss the oats with the canola oil, melted butter and salt. Spread the mixture out on 2 baking sheets and toast in the oven for 15 to 20 minutes, shaking the pan twice and making sure they don't burn. Remove from the oven and set aside. Reduce the heat to 325 degrees F.In a medium saucepan, combine the brown sugar, honey, apple juice and molasses. Heat the mixture slowly, stirring until all combined. Stir in the vanilla.Toss together the toasted oats, rice cereal, wheat germ, pecans and almonds. Pour in the sugar mixture, stirring as you pour. Toss to combine; it will be sticky!Press into 1 baking sheet (thoroughly greased with butter, or line pan with foil and grease foil) and bake until golden, about 20-25 minutes. Remove from oven and let cool. Cut pieces with a sharp knife and remove from the pan. OPTIONALDip the cooled granola bars straight into the melted chocolate so that the top is plain and the bottom is chocolate-covered. Set on parchment until set, sticking in the fridge to hasten this along if necessary.Yum yum!
