GARLIC PIZZA
This recipe is so easy to make and you only need 4 ingredients. The light and bubbly pizza crust is topped with parmesan, olive oil, and garlic. It's the perfect recipe for weekend movie nights, game days, or any other occasion.

- Preheat the oven and a baking sheet to 475°F / 250°C for 20-30 minutes. If you are baking with a pizza steel, preheat for 45-60 minutes.
- If you have a pizza peel, sprinkle it generously with semolina and set it aside. Otherwise, sprinkle a piece of parchment paper with semolina and set aside.
- Combine the olive oil and garlic and set aside.
- Prepare the pizza dough according to the instructions, divide it in half, and shape it to your liking. Transfer the dough to the prepared pizza peel or baking paper and sprinkle the parmesan evenly on top.
- Transfer the crust to the oven and bake until it is baked through. The baking time depends on which dough you choose, how thick it is, and what equipment you use. If you use and follow my pizza dough recipe, bake for 5-7 minutes when using a pizza steel and for 8-12 minutes when using a baking sheet. If you use storebought pizza dough, follow the directions on the package.
- Remove the pizza crust from the oven, brush the garlic oil with the garlic pieces on top, and serve.

I love pizza without tomato sauce or what is called White pizza. We love this! It is so good and easy!

- Mix olive oil and garlic in small microwavable bowl.
- Microwave on HIGH 30 seconds.
- Place pizza crust on cookie sheet; brush entire surface with oil mixture.
- Top with spinach, mozzarella cheese, tomato slices and feta cheese.
- Sprinkle pizza with rosemary and parmesan Bake at 450' F for 10 to 12 minutes or until cheese is melted and crust is golden.
- Let stand 5 minutes.

MARGHERITA PIZZA (PIZZA MARGHERITA)
A light pizza with olive oil, garlic, fresh basil, fresh tomatoes, mozzarella and Parmesan cheeses. Perfect with a beer on a hot summer night. I was inspired to try and make this myself after having an delicious version of it at Small Bar in Chicago. Yum!

- Preheat the oven to 450°F.
- Drizzle the olive oil over the pizza shell. Use a brush to spread it around and make sure to get the crust!
- Next, disperse the finely chopped garlic evenly.
- Spread the mozzarella cheese throughout the top, but keep it thin.
- Place the thinly sliced tomatoes across the entire pizza.
- Lightly salt and pepper the tomatoes with the kosher salt.
- Spread the fresh basil leaves, making sure to get some on tomatoes and on just the cheese itself.
- Cook the pizza in the oven for about 9-10 minutes, or until sufficiently crispy and melted to your liking.
- Add a little Parmesan cheese and (optional) crushed red pepper and enjoy!
ROASTED GARLIC WHITE PIZZA WITH GARLIC SAUCE

- Gently heat milk in a small saucepan, just until barely simmering. Remove and keep covered.
- In a separate saucepan, melt butter. When foam subsides, add flour and stir until smooth. Cook for 1 to 2 minutes, stirring. Do not allow flour to color. Gradually add the warm milk, whisking to combine. Add the salt and cayenne and increase the heat to medium. Cook the mixture, whisking continuously, until the sauce comes to a boil and is thickened. Remove from heat and add 10 of the roasted garlic cloves. Pour the hot mixture into a blender, cover tightly, and process until smooth. Transfer to a small bowl and cool slightly, placing a piece of plastic wrap directly on the surface.
- Place a pizza stone in the oven and preheat to 500 degrees F.
- Sprinkle about 2 tablespoons of the yellow cornmeal on a baker's peel or baking sheet. Place the rolled out pizza dough circle on the prepared baker's peel or baking sheet.
- Spread the cooled sauce over pizza dough, leaving a 3/4-inch border. Place sliced mozzarella on top of the sauce. Sprinkle the remaining roasted garlic cloves (whole) over the cheese and top with the grated fontina. Bake the pizza for 8 to 10 minutes, or until the crust is golden and cheese is melted and bubbly and golden brown in spots. Remove from the oven and sprinkle chopped herbs over the top. Serve immediately.
- Preheat the oven to 350 degrees F.
- Place the garlic on a foil-lined baking sheet and rub 1 teaspoon of oil into the top of each head. Sprinkle lightly with salt and pepper and place, cut side down, on the baking sheet. Bake until the cloves are soft and golden, about 1 hour. Remove from the oven and let sit until cool enough to handle. Carefully remove each clove of garlic from the head. Squeeze each head of garlic to expel any cloves that you cannot remove individually. Set aside until needed.
- In a large bowl, combine the water, yeast, honey, and 1 tablespoon oil, stirring to combine. Let sit until the mixture is foamy, about 5 minutes.
- Add 1 1/2 cups of the flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue adding the flour, 1/4 cup at a time, working the dough after each addition, until the dough is smooth but still slightly sticky. Turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3 to 5 minutes.
- Oil a large mixing bowl with remaining olive oil. Place the dough in the bowl, turning to coat with the oil. Cover with plastic wrap and set in a warm place, free from drafts until doubled in size, about 1 1/2 hours.
- Punch dough down and turn out onto a lightly floured surface and roll into a 15-inch circle.
PIZZA WITH GARLIC AND OLIVE OIL
Steps:
- At least 45 minutes before baking pizza, put a pizza stone or 4 to 6 unglazed "quarry" tiles arranged close together on oven rack in lowest position in oven and preheat oven to highest setting (500°-550°F).
- Finely chop garlic and in a small bowl combine with oil, oregano, red pepper flakes, and coarse salt.
- On a lightly floured surface pat out dough evenly with your fingers, keeping hands flat and lifting and turning dough over several times, into a 9-inch round. (Do not handle dough more than necessary. If dough is sticky, dust it lightly with flour.)
- Dust a baker's peel or rimless baking sheet with flour and carefully transfer dough to it. Jerk peel or baking sheet once or twice and, if dough is sticking, lift dough and sprinkle flour underneath it, reshaping dough if necessary. Working quickly, top dough with oil mixture, spreading with back of a spoon to within 1/2 inch of edge.
- Line up far edge of peel or baking sheet with far edge of stone or tiles and tilt peel or baking sheet, jerking it gently to start pizza moving. Once edge of pizza touches stone or tiles, carefully pull back peel or baking sheet, completely transferring pizza to stone or tiles (do not move pizza). Bake pizza 6 to 7 minutes, or until dough is crisp and browned, and transfer with a metal spatula to a cutting board.
- Cut pizza into wedges and serve immediately.
PIZZA WITH ROSEMARY AND GARLIC (PIZZA BIANCA)

- Place water in a large bowl. Water should be warm but not hot to the touch. Stir in the yeast and allow to dissolve. Stir in 1 cup flour, stirring constantly in the same direction. Stir in another cup flour, then stir 100 times in the same direction (one minute). This helps develop the gluten. You now have a sponge. Cover, and let stand for half an hour or up to three hours. When you are ready to continue, sprinkle on salt and oil, then add more flour, stirring it in a half cup at a time. The dough will be getting heavier and harder to stir. When you can stir no longer, flour a kneading surface well and have more flour handy beside your work surface. Turn dough out and knead, adding extra flour to your work surface as necessary to prevent the dough from sticking. The dough will gradually become smooth and easy to work. Knead for 10 minutes, clean bread bowl, oil it lightly, and place the ball of dough into the bowl to rise, covered with plastic wrap. Let rise until more than doubled, almost three hours. When the volume of the dough has approximately doubled, you can proceed to the next step.
- Dough can be made ahead to this point and then stored. If you wish postpone baking, gently push dough down, and leave covered in the bowl to rise again. If delay will be more than several hours, instead store dough in a plastic bag in the refrigerator (for not more than five days). Bring out of the cold and take out of the plastic bag at least an hour before you want to work with it.Lightly flour your work surface and lightly oil a 12 by 18-inch baking sheet. Preheat oven to 450 degrees. Turn dough out onto work surface and flatten with the lightly floured palm of your hand. Pull and stretch the dough gently out into the rectangular shape you need to fit your baking sheet. Take your time and give the dough time to rest if it is resisting stretching. It will need to get quite thin. When you have stretched the dough to approximately the shape and size you need, transfer it to baking sheet and continue to gently press and stretch it to fit. Don't worry if it tears, just patch the hole with another piece of dough and press firmly to join the edges. If you have extra dough hanging over the edge, trim it off and use it to make another small pizza. Dough should be of an even thinness across the flat part of the baking sheet and should form a slight rounded rim as it meets the edge (which is for many people the best part of the pizza).
- Brush top of pizza with oil, then dimple the surface all over with your fingers. Sprinkle garlic, sea salt and then optional rosemary leaves. Place baking sheet on the bottom rack of the preheated oven and bake until the crust around the edge is slightly golden, 5 to 8 minutes, depending on how thin the pizza is. Remove from oven, brush crusts lightly with olive oil and also the center if you wish. Cut into large squares and serve warm or hot. We have often made pizza bianca several hours ahead, then wrapped it in a clean kitchen towel to keep it moist until we are ready to reheat it for serving. To reheat, place in a dampened paper bag in a 300 degree F oven for about 10 minutes.

- First, remove your pizza dough from the fridge. You want it to set out at room temperature for at least an hour (longer is fine too.) Preheat the oven to 350 for the garlic confit (if you've already prepped your garlic confit in advance, you can go ahead and turn up the oven to 500 degrees for your pizza.)
- Add a pizza stone to the middle rack of the oven so it can get really hot while you prep everything else.
- Make the garlic confit: In a small, shallow baking dish, place the peeled garlic cloves, then add enough olive oil to just cover. Add sage or rosemary leaves, then a pinch of salt and pepper. Bake for 1 hour, then remove.
- Crank oven up to 500 degrees. Sprinkle your pizza peel with flour, then place your ball of pizza dough on top and sprinkle with flour to prevent sticking. Use your hands to stretch into a thin circle -- watch me do it here.

- In a large metal or glass mixing bowl add flour, salt, wine, olive oil, and honey. In a small cup, add yeast and 1/2 tablespoons warm water, just enough to dissolve yeast upon stirring and add to flour mixture. Stir thoroughly. After ingredients are well mixed, knead with hands for 10 to 15 minutes. Add additional wine or water, a little at a time if necessary so that dough is slightly moist and easily pliable. You want your dough to spring back when gently pulled. After adequately kneaded, place back in a large bowl, cover with a kitchen towel, and place in a warm spot. Allow t the dough o rise for at least an hour. If you want, you can let it sit for a half hour, punch it down and knead again for a couple of minutes and then allow it continue to rise.
- Place oregano and garlic on crust 5 minutes before taking it out of the oven. Evenly distribute cheese over other ingredients either at this time or immediately upon removing from oven upon completion of baking.
