15 oz frozen fry, thawed
3 tablespoons olive oil, for frying
1 tablespoon butter, for frying
1 tablespoon ginger garlic paste
½ onion, diced
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon coriander powder
½ teaspoon salt
½ tablespoon lemon, juiced
½ cup tomato, chopped
natural yogurt, to garnish
fresh coriander, to garnish

Steps:

  • Preheat oven to 350°F (180°C).
  • Spread out the fries on a baking tray and bake for 20 minutes.
  • While the fries are baking, prepare the masala.
  • Heat a large skillet over medium heat and add the oil and butter.
  • Stir in the ginger garlic paste and fry for a couple of minutes.
  • Add the onion and fry for a few minutes until soft.
  • Sprinkle in the chili powder, ground cumin, ground coriander, salt, and lemon juice and stir continuously for another minute.
  • Pour in the chopped tomatoes and fry for several more minutes, until the sauce has thickened.
  • Add the fries to the pan and stir until evenly coated.
  • Drizzle some yogurt on top and garnish with fresh coriander.
  • Enjoy!

2 tablespoons vegetable oil
¼ medium red onion, finely chopped
1 medium tomato, diced
1 serrano chile, seeded and finely chopped
2 cloves garlic, minced
1 ½ teaspoons garam masala
¼ teaspoon turmeric
½ teaspoon ground cumin
1 teaspoon lemon juice
2 tablespoons fresh cilantro, finely chopped
1 lb french fries, cooked, hot
salt, to taste

Steps:

  • Heat the oil in a large pan over medium-high heat, then add the red onion and cook for 5 minutes, until browned.
  • Add the tomato, serrano, and garlic. Stir well, cover, and cook for 5 minutes, until the tomatoes have softened.
  • Add the garam masala, turmeric, and cumin. Stir, reduce the heat to medium, and cook for another 10 minutes, or until the sauce clings to the potatoes and they soften slightly.
  • Stir in the lemon juice and cilantro, then add the fries and salt. Toss well to coat. Serve immediately.
  • Enjoy!

These sheet pan chana masala fries hit on all levels. This spin on chana masala leans toward vegetarian chili, with a heavy dose of tomatoes.

2 tsp. coriander seeds or 1 tsp. ground coriander
2 tsp. cumin seeds or 1½ tsp. ground cumin
1½ tsp. garam masala
1½ tsp. Kashmiri chile powder or other red chile powder
1 tsp. ground turmeric
3 Tbsp. vegetable oil
1 medium onion, finely chopped
2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt, divided
1-2 serrano chiles, finely chopped
4 garlic cloves, finely chopped
1 1" piece ginger, peeled, finely chopped
2 15-oz. cans chickpeas, rinsed
1 14-oz. can crushed tomatoes
3 large sweet potatoes (about 1¾ lb.), scrubbed, cut lengthwise into ½" wedges
¼ cup extra-virgin olive oil
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
1 serrano chile, coarsely chopped
1 garlic clove
Zest and juice of 1 lime
1 cup mint leaves
2 Tbsp. extra-virgin olive oil
½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt
3 cups cilantro leaves with tender stems, plus chopped for serving
8 oz. Monterey Jack, Colby cheese, or low-moisture mozzarella, coarsely grated
Thinly sliced red onion and plain yogurt (for serving)

Steps:

  • If using whole spices, finely grind coriander and cumin in a spice mill. Combine coriander, cumin, garam masala, chile powder, and turmeric in a small bowl.
  • Heat oil in a large pot over medium. Add onion and ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt and cook, stirring occasionally, until golden and softened, 8-10 minutes. Stir in serrano chiles (add up to 2 depending on your heat preference and how spicy your chiles are), garlic, and ginger and cook, stirring occasionally, until starting to soften and fragrant, about 2 minutes. Add spice mixture and remaining 1½ tsp. Diamond Crystal or ¾ tsp. Morton kosher salt and cook, stirring, 1 minute (be careful not to burn spices).
  • Add chickpeas, tomatoes, and 1½ cups water to pot and stir to combine. Bring to a gentle simmer, then reduce heat to medium-low and cover pot. Cook until slightly thickened, 20-25 minutes. Uncover and mash about one third of chickpeas with a potato masher or fork. Continue to cook, uncovered, stirring occasionally, until chana masala is thick but spoonable, 8-10 minutes more. Remove from heat and cover to keep warm.
  • While the chana masala is cooking, preheat oven to 450°. Place sweet potatoes on a rimmed baking sheet, drizzle with oil, and season with salt. Toss to coat. Spread out in a single layer and roast, turning halfway through, until tender and browned in spots, 25-30 minutes. Set sweet potato fries aside; leave oven on.
  • Purée serrano chile, garlic, lime zest and juice, mint, oil, salt, and 3 cups cilantro in a blender, adding water a tablespoonful at a time if needed to thin, until chutney is smooth and pourable.
  • Sprinkle two thirds of cheese over reserved sweet potato fries, then spoon a generous layer of chana masala over. Sprinkle with remaining cheese. Return fries to oven and bake until cheese is melted, about 5 minutes.
  • To serve, drizzle half of chutney over fries and top with red onion and chopped cilantro. Serve with yogurt and remaining chutney alongside.

MASALA FRENCH FRIES

Based on a recipe from www.manjulaskitchen.com. My DH found this recipe after searching the Internet for crispy French fries to include a technique that makes them explode; this particular recipe piqued his interest and now these are my favorite homemade French fries! These aren't DH's favorites because they didn't explode! He's SOL, I guess! The site says they are great with cocktails or as an appetizer. Give DH another cocktail! Lol! You can also make them a few hours before serving; just heat the fries in oven at 350°F for seven to ten minutes before serving. Variations: 1) replace dry mint with dry fenugreek leaves; 2) feel free to experiment! For citric acid we used lemon juice although the next time (tomorrow I'm hearing from DH) we'll use the Vitamin C powder (ascorbic acid) that I purchased for cooking. Story: when DH asked me the first time he made these what he could use for citric acid I immediately thought liquid, not knowing the batter required it in powder form - I was at my desk on food.com after all, sheesh. After showing him the powder form tonight, now he wants to try these again! Tomorrow! Okay, enough with our family drama, here's the recipe....

2 medium russet potatoes
2 tablespoons cornstarch
1 teaspoon salt, plus additional to taste for step 4
1/2 teaspoon dry mint powder (sukha podina)
1/4 teaspoon black pepper (kali mirch)
1/4 teaspoon ground red pepper
1/8 teaspoon citric acid (tatri)
oil, to fry

Steps:

  • Wash potatoes, peel, and cut into French fries (we use our Mandolin slicer with the French fry blade).
  • Toss potato fries with salt and set aside for 10 minutes.
  • Drain the salt water resulting from step 2 and lightly pat the fries dry.
  • In small bowl mix cornstarch, salt, mint powder, citric acid, red and black peppers together.
  • Sprinkle the spice mix over potatoes and mix well so all the fries are covered with spices.
  • Heat 1 ½ - inch oil in frying pan on medium high heat.
  • Test readiness of heated oil by placing a potato strip in frying pan. The frying pan is ready when the potato strip sizzles.
  • Fry the fries 'til they become golden in color all around. Turn the fries a few times while frying.
  • With slotted utensil, transfer fries from oil and drain on paper towel.
  • Serve hot and enjoy!
