PITA POCKETS

Steps:
- Mix all the ingredients in a large bowl ( no need to knead!!) until all the ingredients come together. Cover the bowl with plastic wrap. Let the mixture rise for about 1 to 2 hours until it doubles in size.
- Turn the mixture out onto a floured board and divide it into 4 balls. Rolling and flattening them with your hands until they are smooth disks. Let them rest for 30 minutes so they can rise again.
- Take each disk and roll it out with a rolling pin until it is about ¼ inch thick and 6 inches in diameter.
- Place them on a cookie sheet and allow them to rest for 45 minutes. You may need to do two at a time if your cookie sheet is smaller.
- Heat the oven to 475 F (250 C).
- Bake the pitas until they puff up about 7-8 minutes. Remove from the oven and let them cool while wrapped in a clean tea towel.
MEDITERRANEAN PITA POCKETS
Steps:
- In a small bowl mix together the yogurt, parsley, hot sauce, cumin, and salt and pepper, to taste.
- Slice the top off of each pita pocket. Fill each pocket with 2 slices of brisket, a quarter of the pickled cucumbers and drizzle with the yogurt mixture. Arrange on a serving platter and serve.
VEGGIE-STACK PITA POCKETS

- Combine the chickpeas, water, cheese, lemon juice, salt and red pepper flakes in a food processor and puree until completely smooth, about 5 minutes. While the motor is running, pour in the olive oil and process until fully incorporated and velvety. Season with pepper, to taste.
- Spoon a scant tablespoon bean spread into toasted pitas. (Put remaining bean spread in an air-tight container.) Add avocado and cucumber slices, or other vegetables of choice and season, to taste, with salt and pepper. Wrap in parchment or butcher paper, and pack in a plastic container to keep from getting squished. Pack in a lunch box and send to school.
LAMB PITA SANDWICHES

- Add the coriander, cumin, smoked paprika, cayenne pepper, cinnamon and 1 teaspoon of salt to a small mixing bowl. Whisk to combine. Add the spice mixture to the lamb stew meat and use tongs to coat the meat in the spices. Set aside.
- Heat an electric pressure cooker to the sauté setting and add 1 tablespoon of vegetable oil to the pot. Once the oil is shimmering, add the stew meat in batches, being sure not to overcrowd the pot. Brown the meat on all sides, about 4 minutes, then remove to a plate. Add an additional tablespoon of oil, if needed, before adding another batch of meat. Once all the meat has been browned and removed from the pot, add the red wine to deglaze, stirring and scraping the bottom to release any brown bits stuck to the base of the pot. Once the alcohol smell has burned off, 1 to 2 minutes, add the canned diced tomatoes and the browned meat. Stir to combine.
- Place the lid on the pressure cooker and seal. Set to high pressure according to the manufacturer's instructions. Once at high pressure cook for 15 minutes then allow the pressure cooker to naturally release for 10 minutes before manually venting the rest.
- While the lamb cooks, add the fresh chopped tomatoes, cucumber, onion, parsley, dill, lemon juice, 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper to a medium bowl. Toss to combine and set aside until ready to assemble.
- To assemble, slice each pita in half and open to create a pocket. Slather each side of the pocket with hummus, then add in a few pieces of romaine lettuce, covering the hummus. Next add a few spoonfuls of the cucumber-onion mixture and top with a few pieces of cooked lamb. Continue the process with the remaining ingredients.

- Heat a large frying pan and add the bacon. Dry fry for 3 or 4 minutes until it starts to brown.
- add the tomatoes and mushrooms with the olive oil.
- continue to fry until the mushrooms have softened and browned.
- Put the pita pockets on to toast.
- Meanwhile, add the spinach to the frying pan and cook for one minute.
- Add the beaten egg and stir until the egg is cooked.
- Season to taste.
- Slice open one side of each of the pita breads and spread the inside with a thin layer of sour cream.
- Fill the pitas with the egg mixture and enjoy!
- It tastes good with some bbq or tomato sauce on the side and also works with some cheddar cheese stirred through the egg mixture just after cooking. It's also good with different veggies, such as capsicum, spring onions or avacado.
BURRITO PITA POCKETS

- Make the pepperoni pita pizza: Cut the pita in half crosswise to form 2 pockets and fill each pocket with 2 tablespoons of pizza sauce, ¼ cup (25 G) shredded mozzarella, and 6 pepperoni. Place on a prepared baking sheet.
- Make the Hawaiian pita pizza: Cut the pita in half crosswise to form 2 pockets and fill each pocket with 2 tablespoons of pizza sauce, ¼ cup (25 G) shredded mozzarella, 2 tablespoons pineapple, and 2 tablespoons Canadian bacon. Place on a prepared baking sheet.
