  • Potato Cakes. Potatoes were an important part of the pioneer diet because they lasted for a very long time. This made them a reliable food source for traveling pioneers.
  • Johnnycakes. Johnnycakes are a cornmeal flatbread that’s derived from a recipe for jonikin – which is a similar except that it’s made with oats instead of corn.
  • Molasses Stack Cake. This was a luxury food for the pioneers because it was ridiculously expensive to make. With that in mind, it was usually reserved for very special occasions (i.e.
  • Corn Pancakes. Pancakes are a favorite all over the world. This particular pancake recipe uses white cornmeal, buttermilk, and bacon fat or lard to produce a fluffy treat with a lace-like edging.
  • Jerky. Cattle were a big deal for the pioneers, milk, cheese, meat, and hides were all key aspects to the pioneer lifestyle. Beef jerky is basically cured, dehydrated meat, it’s pretty easy to make and it has a really good flavor.
  • Chocolate Caramels. I love chocolate, I love caramel; there was no way I wasn’t going to put this on the list after finding it! Much like us, our ancestors occasionally craved something sweet and sweets were considered a special treat – a real luxury item.
  • Swiss Apple Cherry Pie. Apple + cherry + pie = greatness! This particular sweet treat came from the Swiss contingent of the pioneers on the Oregon Trail.
  • 101 Year Old Pastry. Okay, so this is a recipe for pastry crust, and not a pie that’s 101 years old. We’re clear on that, right? Cool, then we can get onto the recipe.
  • Hasty Pudding. A British pudding, this one looks kind of like a crème caramel dessert – depending on the picture you see. It’s easy to make and can be prepared in around an hour or so (hence the name ‘hasty pudding’) and is often topped off with a bit of whipped cream.
  • Corn Dodgers. These were popular as both side dishes and snacks; they were small enough that they could be carried in a pocket with no trouble at all.

  • Native American Fry Bread. Bread is one of the basics, giving a person the carbohydrates necessary for an active existence. Pioneers picked up this recipe from the native Americans.
  • Pinole. You just have to give pinole, whose main ingredients are toasted cornmeal and chia seeds, a try. There are various ways to make this super food that will keep you going on just a small amount, whether used for a nutritious drink, eaten as a cereal, or made into delicious pinole cookies.
  • Cornmeal Mush. Such a simple recipe does require it to be well made, and the quality of the cornmeal counts – white cornmeal gives a smooth porridge while the coarse ground yellow cornmeal is a lot grittier.
  • Basic Pioneer Cornbread. This recipe requires a cast iron skillet that you can place on the fire or heat source to get a decent crust on the base and sides of the cornbread before baking it in the oven.
  • Red Beans and Rice. Beans and rice have the protein and carbs to provide a filling and tasty meal which made it a popular choice. If hunting was successful then the beans and rice, staples that were kept in the store cupboard, were enhanced with some meat.
  • Corn Dodgers. This recipe requires cooking the cornmeal with water before adding the other ingredients, then frying the little ‘dodgers’ on a cast iron skillet over the heat source.
  • Pioneer Cornmeal Pancakes. These are so quick to make and are tasty, either with savory or sweet toppings. Make them any time of the day when tummies are rumbling and you need to get food into people before they get too hangry – that’s hungry and angry.
  • Dumplings for Dinner. This recipe makes up a big pot of dumplings that everyone can tuck into. Only four ingredients – egg, milk, flour and salt, go into these dumplings.
  • Pan Fried Pork Chops for Calf-Working Day. The day after Thanksgiving is called calf-working day when there was plenty to do on the pioneer ranch – like every other day except Thanksgiving – but Thanksgiving was still pretty busy in the kitchen.
  • Pioneer Bread. Head back to basics pioneer style with this savory bread using only 6 ingredients instead of up to 40 found in store-bought bread which has all the additives
