Steps:

  • Using a sharp chef's knife, cut away the peel and white parts from 3 red grapefruits, then cut between the membranes to remove the segments. Squeeze the membranes over a bowl to extract the juice.
  • Whisk 2 tablespoons clover honey and 2 tablespoons finely chopped fresh mint into the juice. Arrange the grapefruit segments on a platter and drizzle with the dressing.

This refreshing dessert that's low in sugar is based on a mint tisane, set to a soft jelly with chunks of fresh fruit.

5 gelatine leaves
15g fresh mint , roughly chopped
1 pink grapefruit
100g small raspberries
2 peaches , peeled, stoned and chopped

Steps:

  • Soak the gelatine in a bowl of cold water. Put on the kettle and when it boils pour 1 litre of the boiling water over the mint leaves. Leave to infuse for 5 mins then strain into a large jug. Squeeze the excess moisture from the soaked gelatine then stir it into the hot mint mixture until dissolved. Set aside to cool.
  • Cut the peel and pith from the grapefruit with a sharp knife then cut between the segments to release them, reserving any juice. Cut the segments into about 3 pieces each then distribute the grapefruit, raspberries and peaches between 6 glasses. Stir any grapefruit juice into the mint jelly then pour it into the glasses and chill until set.

In his version, fresh grapefruit are sliced into rounds and very simply dressed with superb olive oil and flaky sea salt. The result is a juicy salad that works particularly well when served with sausages, eggs, and other rich brunch favorites. Or offer it for dinner with grilled or roasted meats. If you can't get good grapefruit, try it with oranges, tangerines and other citrus.

2 tablespoons finely chopped fresh mint

Steps:

  • Using a sharp chef's knife, cut away the peel and the white part or pith from the grapefruit. Carefully cut inside the skin of each segment to remove each section of flesh. Squeeze the membranes over a bowl to extract all the juice. Whisk the honey and mint into the juice and set dressing aside.
  • Arrange the grapefruit segments on a platter or in a shallow bowl and drizzle with some of the dressing.

Olive oil in a dessert might seem a little odd, but try to think of it as a flavorful ingredient rather than a fat...as long as you choose a delicious extra-virgin oil. I first had something like this in Jabugo, Spain, when I ate slices of orange simply drizzled with a grassy local oil as a dessert. It was a revelation. If you want to go dairy-free in this dessert, then skip the yogurt and mix the mint in with the grapes.

2 pink grapefruit
1 1/2 tablespoons extra-virgin olive oil
10 ounces seedless grapes, stems removed
1 teaspoon honey
2 handfuls of raspberries
12 mint leaves, finely shredded
1 cup thick plain yogurt (try a sheep- or goat-milk yogurt for extra flavor)

Steps:

  • Peel and segment the grapefruit over a bowl and reserve any juices that drip from them.
  • Heat a skillet and add 2 teaspoons of the oil, then add the grapes and cook over high heat to blister them slightly, shaking the pan often to cook them evenly. Add the grapefruit juice and cook until it's almost evaporated, then add the honey and bring to a boil; tip into a bowl and leave to cool.
  • When the grapes are cool, add the grapefruit segments, raspberries, and remaining oil, and gently toss.
  • Mix the mint into the yogurt.
  • To serve, spoon the fruit salad into 4 small bowls and dollop the minted yogurt on top.

1 1/4 cups Greek yogurt
2 -3 ripe pomegranates, seeded removed under water
2 -4 tablespoons of fresh mint, finely chopped (small bunch)
honey (optional) or sugar, to taste (optional)
2 red grapefruits
2 pink grapefruit
1 white grapefruit
1 -2 tablespoon orange flower water or 1 -2 tablespoon orange juice
honey (optional) or sugar, to taste (optional)
1/4 cup pomegranate seeds (handful)
mint leaf

Steps:

  • Put the yogurt in a bowl and beat well. Fold in the pomegranate seeds and chopped mint. Sweeten with a little honey or sugar, if using, then chill until ready to serve.
  • Peel the grapefruits, cutting off all the pith. Cut between membranes to remove segments, holding the fruit over a bowl to catch the juices.
  • Mix the fruit segments with the reserved juices and orange flower water and add a little honey or sugar, if using. Stir gently then decorate with a few pomegranate seeds.
  • Decorate the chilled yogurt with a scattering of pomegranate seeds and mint leaves, and serve with grapefruit salad.
  • *Variation: You can use a mixture of oranges and blood oranges, intersperesed with thin segments of lemon. Lime segments work well with the grapefruit and mandarins or tangerines could be used too. As the idea is to create a refreshing, scented salad, juicy melons and kiwi fruit would also be ideal.

1 pink grapefruit
1 orange
1 2-ounce length of daikon radish, thinly sliced
4 French breakfast or red radishes, thinly sliced
1/2 cup of radish sprouts
10 calamata olives, pitted and halved
2 tablespoons mild fresh goat cheese, crumbled
1 tablespoon freshly squeezed lemon, or to taste
2 tablespoons extra virgin olive oil
Fleur de sel or coarse sea salt

Steps:

  • Slice ends off grapefruit and stand it up on a cutting board. Slice off peel, following curve of fruit. Make sure to cut away all the white pith, exposing flesh. Working over a bowl to catch juices, use a small paring knife to cut out segments. Repeat with orange.
  • Spread daikon radish in one layer on a serving platter or two salad plates. Top with citrus segments, then arrange the breakfast or red radishes over citrus. Sprinkle with radish sprouts, olives and goat cheese. Drizzle with lemon juice and then olive oil. Sprinkle with salt to taste.
