- To make aioli: Mix mayonnaise, garlic and Sriracha sauce together in small bowl. Set aside. Extra aioli can be stored in the refrigerator for up to 3 days. To make burgers: Finely chop chorizo in a food processor or with a large knife. Gently mix together ground pork, chopped chorizo, breadcrumbs, egg, scallions, red pepper, garlic and salt. Shape into 6 patties about 3/4-inch thick. Refrigerate for 10 to 15 minutes. Prepare grill for direct cooking over medium-high heat, about 450 degrees F. Lightly oil grill grate. - Preheat an outdoor grill or a grill pan rubbed with a little oil.
- In a large mixing bowl, combine ground beef, panko, teriyaki sauce, and a pinch of salt and pepper until thoroughly mixed. Divide meat into four, large and round equal portions to make the patties. Flatten to the approximate size of your burger buns. Press your thumb into the center of each patty, forming an indent, to allow for even cooking.
- Place burger patties on the grill surface. Cook one side for about 4-5 minutes. Flip and cook the other side for about 3-4 minutes for a medium rare patty. For a medium patty, cook 5-6 minutes one side, and 4-5 minutes on the other. Add provolone cheese on top and cook for another minute, until melted. Remove from heat and rest the patties for about 5 minutes.
- While burgers are resting, place pineapple slices and red onion rounds on the grill. Cook 2-3 minutes per side until charred. Remove from heat.
- Optional: toast the buns on the grill for 2 minutes, face down, until slightly golden. Remove from heat and spread a little teriyaki sauce on each bun.
- Assemble the burgers, layering as follows: Bottom bun, butter lettuce, provolone burger patties, red onion rounds, pineapple slices, drizzle of teriyaki sauce, and top bun. Serve immediately.

- Heat oil in a large pot over medium-high heat. Add pork and cook, breaking up the meat with a wooden spoon, until no longer pink, 4 to 5 minutes. - In a large bowl whisk/mix the first six ingredients together until well blended.
- Add in the ground beef with garlic, green onions, black pepper and salt; mix to combine.

- Preheat the oven to 400 degrees F (200 degrees C).
- Layer pineapple and peppers on a baking sheet. Drizzle evenly with 1 tablespoon olive oil.
- Bake in the preheated oven until browned, 15 to 20 minutes. Stir occasionally to prevent overbrowning.

- Take one of the pineapple slices from the can, and chop it into very small pieces. Slice the green onions and shred the Monterey Jack cheese. Place the ground pork, chopped pineapple, sliced green onions, shredded cheese, and 2 Tbsp teriyaki sauce in a large bowl. Mix the ingredients together by hand until they are evenly incorporated.
- Shape the pork mixture into four burger patties. Make the patties flatter and thinner than you'd like the finished burgers to be, as they do contract and shrink inward as they cook. Set the patties aside.
