PINEAPPLE ANGELFOOD CAKE (LOW FAT)

- 1. Preheat oven to 350 degrees. Spray a 9 by 13 inch pan with vegetable oil spray. In a large bowl, combine cake mix and pineapple (with juice). Mix until well blended. Pour batter into prepared 9 by 13 inch pan. Bake at 350 degrees for 25 minutes or until golden brown. Let cool. Serve with whipped topping
SKINNY PINEAPPLE UPSIDE-DOWN CAKE

- Heat oven to 350°F. Spray 9-inch square pan with cooking spray. Sprinkle brown sugar in pan. Arrange pineapple slices over brown sugar. Drizzle with reserved juice. Place cherry in center of each pineapple slice.
- In medium bowl, beat remaining ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 2 minutes, scraping bowl occasionally. Pour batter over pineapple and cherries.
- Bake 50 to 55 minutes or until toothpick inserted in center comes out clean and top is golden brown. Run knife around inside edges of pan. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake 3 minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm.

- Preheat oven to 350°F
- Spray 13 x 9 x 2-inch baking pan with nonstick cooking spray.
- CAKE: Beat egg whites and sugar until blended.
- In another bowl, combine flour and baking soda.
- Beat into wet ingredients.
- Add pineapple and vanilla extract.
- Pour batter into prepared pan.
- Bake for 40 minutes, or until it tests done when a toothpick inserted in the center comes out clean.
- Cool for 10 minutes.
- FROSTING: Gradually whisk in confectioners' sugar into cream cheese and vanilla.
- Frost cake with a knife, or by pouring it on if the frosting is thin.
PINEAPPLE FILLING FOR CAKES (LOW FAT)
I have used this many times to fill my cakes, it's a very simple recipe, and makes enough to fill two layers, if you want to fill three layers, I suggest to double the recipe or use a smaller amount in between the layers. It's really a nice change from your regular frosting and gives the cake so much more flavor. If you prefer a sweeter filling, just add in more sugar. You will love this filling!

- In heavy saucepan combine cornstarch, all of the sugar and salt.
- Add pineapple with juice and mix well.
- Cook over medium heat until mixture comes to a bubbling boil, stirring constantly.
- Once mixture comes to a boil continue stirring constantly for approximately 5 minutes, or until thickened and its looses it's "milky" look.

- Preheat oven to 375 degrees.
- Line a round 9x1 1/2 inch pan with waxed paper and spray with nonstick cooking spray.
- Sprinkle brown sugar on waxed paper.
- Drain pineapple and reserve juice.
- Spread pineapple evenly in bottom of pan and sprinkle dry gelatin over pineapple.
- Using an electic hand mixer, beat eggs and egg whites on high until very thick (about 5 minutes).
- Gradually add sugar.
- Add 1/3 cup reserved pineapple juice and vanilla and beat on low speed.
- Gradually add flour, baking powder and salt, blending until batter is smooth.
- Pour batter into pan.
- Bake 25-30 minutes or until a toothpick inserted in the center of the cake comes out clean.
- When done, immediately loosen cake from edge of pan with a knife and turn the pan over onto a plate.
- Carefully remove waxed paper.

PINEAPPLE FILLING FOR CAKES
I got this recipe from my Great Aunt Julia. It tastes great and is so easy to make. The coconut is optional and since we don't like coconut, I leave it out. Be sure to sift the flour or corn starch, and stir after each addition so it doesn't get lumpy. I use a small hand strainer, hold it over the pot, shake a little at a time, and stir after each shake. It takes a little longer but works out better. I also use Splenda, actually the Walmart brand because it's cheaper, instead of the sugar, because my husband is diabetic.

- Open cans of crushed pineapple, take the lids and press down hard to remove as much juice as possible.
- Put pineapple in saucepan, add stick of butter, sugar, (I use a sugar alternative), egg yolks, and stir together until the butter melts.
- Sift the cornstarch(or flour) over the saucepan - slowly.
- Bring to a rolling boil over low heat, stirring continously, to prevent burning,.
- Then add the coconut.
- You can use a small can or as much as you think your family will like. Aunt Julia didn't specify how much coconut to use, she just said to add the coconut. Go figure, I don't think she ever measured anything.
- It takes about 20 to 25 minutes depending on how long it takes to thicken, for instance electric stoves take longer than gas stoves.
