2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon salt
5 tablespoons shortening
1 cup buttermilk
1 cup grated Cheddar cheese

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Let cool enough to handle; crumble.
  • Combine flour, baking powder, baking soda, and salt in a bowl and cut in shortening until it resembles coarse crumbs. Add buttermilk and stir just enough to form a ball. Fold in crumbled bacon and Cheddar cheese.
  • Drop heaping tablespoonfuls on an ungreased baking sheet.
  • Bake in the preheated oven until golden brown, 10 to 12 minutes. Serve immediately.

1 small box of biscuit mix, such as Jiffy or measured mix for 8 drop biscuits * make to package directions
1 cup shredded sharp all natural yellow cheddar cheese
1/4 teaspoon nutmeg, freshly grated

Steps:

  • Preheat oven to package directions.
  • Heat a small skillet over medium-high heat with a drizzle of oil, add bacon and cook 2 to 3 minutes to crisp.
  • Place biscuit mix in bowl, add bacon and 1 tablespoon drippings, nutmeg. Continue to package directions and form biscuit dough, fold in half cheese, arrange drop biscuits on baking sheet and top with a sprinkle more cheese, bake 10 to 12 minutes to golden.

1 cup buttermilk
3/4 pound sliced bacon, cooked and crumbled

Steps:

  • In a large bowl, combine the flour, sugar and baking soda. Cut in shortening until mixture resembles coarse crumbs. Stir in buttermilk just until combined. Fold in the bacon and cheese., Turn onto a lightly floured surface; knead 4-5 times. Roll out to 1/2-in. thickness. Cut with a floured 2-1/2-in. biscuit cutter. 2 slices smoky bacon, finely chopped
1 small box biscuit mix (recommended: Jiffy) or measured mix for 8 drop biscuits
1 cup shredded all-natural yellow sharp Cheddar
1/4 teaspoon freshly grated nutmeg

Steps:

  • Preheat the oven to package directions for the drop biscuits.
  • Heat a small skillet with a drizzle of oil, over medium-high heat. Add the bacon and cook until crisp, about 2 to 3 minutes.
  • Put the biscuit mix in bowl, and add the bacon, 1 tablespoon of the drippings and the nutmeg. Add the ingredients according to the package directions to form a drop biscuit. Fold in half of the cheese and arrange the drop biscuits on a baking sheet. Sprinkle the tops of the biscuits with the remaining cheese and bake until golden, about 10 to 12 minutes.

Steps:

  • Heat oven to 400°F. In 9-inch cast-iron skillet, cook bacon until crisp; drain on paper towels. Crumble bacon; set aside. Reserve 2 tablespoons bacon drippings in skillet, coating bottom and side completely. Discard any remaining drippings.
  • In large bowl, stir Bisquick mix, milk, 1/4 cup of the onions, the garlic powder and red pepper until soft dough forms. On surface sprinkled with additional Bisquick mix, pat dough to 1-inch thickness. Cut dough with 2 1/2-inch round cutter. Arrange rounds in skillet; sprinkle 3/4 cup of the Cheddar cheese evenly between rounds.

I found this recipe on Pillsbury.com and revised it. Even my picky 9-yr old son liked it fairly well and my husband and I loved it! You can vary the add-ins to your taste or try it different ways. You could use sausage or ham instead of bacon, add mushrooms, etc. You could also top with a white gravy. This would be really good served with a fresh fruit salad!

1/2 onion, chopped
1/2 orange bell pepper, chopped (red or yellow would be good also)
2 tablespoons butter
3 eggs
3 tablespoons milk
1 cup shredded Mexican blend cheese (cheddar, monterey jack, etc.)
1 package Ready Crisp bacon, cut into 1/2-inch pieces (or regular fried bacon)
salt & pepper
1 (12 ounce) package Pillsbury Grands refrigerated buttermilk biscuits

Steps:

  • Preheat oven to 350 degrees farenheit.
  • Saute chopped onion and bell pepper in butter. Set aside to cool at least 10 minutes.
  • In large mixing bowl, mix together eggs, milk, cheese, bacon, and salt & pepper. Stir in cooled onion & bell peppers. (Don't stir hot vegies into egg mixture lest it start cooking the eggs.)
  • Open and separate biscuits. Cut each biscuit into 8 pieces.
  • Stir biscuit pieces into egg mixture.
  • Spread into sprayed casserole dish and bake for 30 minutes or until nicely browned and biscuit pieces are done. Use a fork to slightly pry apart the biscuit pieces to make sure the biscuits are not still doughy.
  • Serve and enjoy!

1 tablespoon sugar

1 stick cold, unsalted butter, cut into 1/2-inch cubes, plus more for serving
4 slices chopped cooked bacon (1/3 cup)
1 cup (3 ounces) shredded sharp cheddar
1 cup buttermilk, plus more for brushing

Steps:

  • Preheat oven to 450 degrees. In a large bowl, whisk together flour, sugar, salt, pepper, baking powder, and baking soda for 30 seconds. Toss butter into dry mixture to evenly coat, then press between your fingers to create flower-petal shapes and return to bowl. Stir in bacon and cheddar.
  • Slowly drizzle buttermilk over flour-butter mixture (to evenly distribute) while stirring with a fork. Stop stirring when dough begins to form but mixture is still crumbly.
