2 cups shortbread cookie crumbs (about 30 cookies) or vanilla wafer crumbs (about 50 wafers)
1/4 cup butter, melted
1 (8 oz.) package cream cheese, softened
1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
1/4 cup lime juice
1 (4-serving size) package instant pistachio flavor pudding mix
1 (8 oz.) can crushed pineapple, undrained
1 cup (1/2 pt.) heavy cream, whipped

Steps:

HEAT oven to 350 degrees F. Combine cookie crumbs and butter. Press firmly into bottom of ungreased 9-inch springform pan or 13 x 9-inch baking pan. Bake 8 to 10 minutes. Cool.
BEAT cream cheese in large bowl until fluffy. Gradually beat in sweetened condensed milk, lime juice and pudding mix until smooth. Stir in pineapple. Fold in whipped cream. Pour into prepared pan.
CHILL 6 hours or overnight. Garnish as desired.

Steps:

Mix together pineapple& pudding.
Then add cool whip, marshmallows& walnuts.
put in a large bowl and refrigerate for about 2 hours.

1 can (8 oz.) pineapple chunks in juice, undrained
1-1/2 cups boiling water
2 pkg. (3 oz. each) JELL-O Island Pineapple Gelatin
1-1/4 cups ice cubes
1-1/2 cups (about 1/2 of 8-oz. tub) thawed COOL WHIP Whipped Topping

Steps:

Drain pineapple, reserving juice. Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Add ice cubes and reserved pineapple juice; stir until gelatin is slightly thickened. Remove and discard any unmelted ice.
Remove 1-1/2 cups of the gelatin; pour into medium bowl. Stir in drained pineapple. Refrigerate 4 hours or until firm.
Meanwhile, refrigerate remaining gelatin 15 min. or until slightly thickened. Add COOL WHIP; whisk until blended. Spoon into 9 serving glasses. Refrigerate 4 hours or until firm.
Use fork to break fruited gelatin into small flakes; spoon over gelatin in serving glasses before serving.

When I was a teen I worked in the kitchen of a local hospital. This was the most popular dessert by patients and staff. The dessert cook refused to part with the recipe, so one day I distracted her while my partner in crime Ed stole the recipe to copy. The drama was well worth it. This is light and delicious. Prep time does not include the jello thickening time nor refrigeration time.

Ingredients

1 (3 ounce) box orange Jell-O
2 eggs
1 (8 ounce) can crushed pineapple
1 cup sugar
1/4 cup butter
1/2 cup chopped walnuts
1 teaspoon vanilla
graham cracker

Steps:

Mix eggs, sugar, drained pineapple, and butter.
Cook over medium-low heat until thick, stirring occasionally.
Cool mixture.
Add walnuts and vanilla.
Line a 8x8 square pan bottom with graham crackers.
Covering bottom completely.
Some breaking of the crackers may be required.
Spread pineapple mixture over the crackers.
Top with another layer of crackers, again covering filling completely.
Prepare jello per instructions.
When jello is nearly congealed, whip it until fluffy and pour over crackers.
Refrigerate 4-5 hours before serving.
