- Place potatoes in 2-quart saucepan; add enough water just to cover potatoes. Heat to boiling. Reduce heat to medium-low; cook uncovered 8 to 10 minutes or until tender. Drain.
- Heat oven to 350°F. In 10-inch nonstick skillet, heat oil over medium-high heat. Add bell pepper and onion; cook 3 to 4 minutes, stirring occasionally, until vegetables are tender.
- Meanwhile, in small bowl, mix milk and flour with wire whisk until well blended. Stir into vegetables in skillet. Heat to boiling. Reduce heat; cook uncovered 2 to 3 minutes, stirring constantly, until thickened. Stir in mayonnaise, pepper and cheese; stir until cheese is melted.
- Place ham and potatoes in ungreased 2-quart casserole. Pour milk mixture over ham mixture; stir to mix. Bake uncovered 25 to 30 minutes or until bubbly and light golden brown on top.

- Place potatoes into a large pot and cover with water; bring to a boil. Cook until fork-tender, about 10 minutes. Drain.
- Place bacon in a large saucepan and cook over medium-high heat, turning occasionally, until crispy, about 8 minutes. Drain bacon slices on paper towels. Pour out bacon grease.

- Add butter and oil in a dutch oven and heat over medium heat. Add cabbage and onions and cook until they start to soften, stirring occasionally.
- Chop meat to desired size and add to pan. Continue to saute about 5 minutes.
- Add carrot and cook until vegetables are as soft as you want them.

I like to make ahead and refrigerate as they seem to hold up better in the soup but you can cook them while you are preparing the above.
- Also: You can adjust milk and broth, using more or less to reach the consistency you desire.

- To the Instant Pot, add all of the ingredients but the kale leaves and give it a quick stir.
- Lock the lid and set the pressure valve to sealing.
- Select the Soup/Broth function and adjust time to 15 minutes.
- Once cooking has finished, allow the machine to naturally release pressure for 5 minutes.
- After the 5 minutes, quick release any remaining pressure. To do this I like to use an oven mitt for safety.
- If you like a broth-like soup you can stir in kale now to wilt and serve, if you'd like the soup creamy as pictured proceed to the next step to blend.
- Using either a standard blender or an immersion blender with a narrow/tall bowl or mason jar (I use the wide mouth pint and a half mason jars) transfer 1-2 cups of potatoes and broth only to the jar or blender and blend until smooth and creamy.
- Once potatoes are smooth, pour the mixture back into the soup and stir-through for a creamy consistency.
- Add in the chopped kale, stir until wilted, taste and adjust seasonings and you are ready to serve.

My wife had a craving for ham and potatoes and we had several items we wanted to use up. We didn't cook the celery with the onion and green pepper to add some additional crunch, but they could be cooked together. We used reduced-fat ingredients throughout and had great success. We found that there were no spices needed as the vegetables were a great flavor combination! This recipe ended up being a winner with everyone in the family!

- Preheat oven to 350 degrees F (175 degrees C).
- Spray a skillet with cooking spray. Cook and stir onion and green pepper over medium heat until onions are translucent, 5 to 7 minutes.
