1 teaspoon olive or canola oil
1 cup chopped green bell pepper (1 medium)
1/4 cup chopped onion
1 1/4 cups fat-free (skim) milk
2 tablespoons Gold Medal™ all-purpose flour
1/4 cup reduced-fat or fat-free mayonnaise
1/8 teaspoon black pepper
1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
2 cups cubed cooked ham

Steps:

  • Place potatoes in 2-quart saucepan; add enough water just to cover potatoes. Heat to boiling. Reduce heat to medium-low; cook uncovered 8 to 10 minutes or until tender. Drain.
  • Heat oven to 350°F. In 10-inch nonstick skillet, heat oil over medium-high heat. Add bell pepper and onion; cook 3 to 4 minutes, stirring occasionally, until vegetables are tender.
  • Meanwhile, in small bowl, mix milk and flour with wire whisk until well blended. Stir into vegetables in skillet. Heat to boiling. Reduce heat; cook uncovered 2 to 3 minutes, stirring constantly, until thickened. Stir in mayonnaise, pepper and cheese; stir until cheese is melted.
  • Place ham and potatoes in ungreased 2-quart casserole. Pour milk mixture over ham mixture; stir to mix. Bake uncovered 25 to 30 minutes or until bubbly and light golden brown on top.

5 slices bacon, cut into 1/2-inch pieces
3 tablespoons butter
2 stalks celery, cut into 1/4-inch slices

2 teaspoons kosher salt, divided
1 ½ teaspoons freshly ground black pepper, divided

2 cups half-and-half

Steps:

  • Place potatoes into a large pot and cover with water; bring to a boil. Cook until fork-tender, about 10 minutes. Drain.
  • Place bacon in a large saucepan and cook over medium-high heat, turning occasionally, until crispy, about 8 minutes. Drain bacon slices on paper towels. Pour out bacon grease.
  • Melt butter in the saucepan over medium heat, scraping the bottom of the pan with a flat-edged wooden spoon. Add celery, onion, carrots, 1 teaspoon salt, and 1/2 teaspoon pepper; cook and stir until tender, about 10 minutes. Sprinkle in flour; cook and stir for 2 minutes.
  • Pour half-and-half and chicken broth into the saucepan. Add potatoes, 1 teaspoon salt, 1/2 teaspoon pepper, thyme, cayenne pepper, and nutmeg. Bring to a boil, stirring frequently. Stir in bacon pieces. Reduce heat and simmer, stirring often, until flavors combine, about 10 minutes.
  • Ladle into serving bowls. Garnish with 1/2 teaspoon pepper, green onions, and paprika.

1 meaty ham bone
1 large onion, chopped

  • Sort peas and rinse with cold water. Place peas in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until peas are softened. Drain and rinse peas, discarding liquid., Return peas to Dutch oven. Add 2-1/2 qts. water, ham bone, onion, salt, pepper, thyme and bay leaf. Bring to a boil. This is THE potato soup I have been making forever! Healthy, hearty and filling yet EASY and quick to make! Especially if made with leftover potatoes. Cutting the cabbage small really helps this cook fast. Feel free to use whatever meat your family prefers. I use turkey products but any type of meat or even soy would be equally nice. Hope you enjoy! NOTE: I adjusted the amount of liquids here after some very helpful reviews. 2 1/2 lbs russet potatoes, cooked, about 6 medium potatoes
1 tablespoon vegetable oil
1 tablespoon butter
6 cups green cabbage, thinly sliced and chopped, I make them about 2x1/4 inches
1 cup onion, finely chopped, about one medium
8 ounces cooked bacon (For a meatier soup double the amount and or or add both. ) or 8 ounces ham (For a meatier soup double the amount and or or add both. )
2 medium carrots, peeled, shredded and chopped
2 cups 2% low-fat milk or 10 ounces fat-free evaporated milk
14 ounces chicken broth (any type broth may be used)
salt and pepper, to taste
shredded cheddar cheese (optional)
sour cream (optional)
green onion (optional)
chives (optional)
cooked bacon, crumbled (optional)

Steps:

  • Add butter and oil in a dutch oven and heat over medium heat. Add cabbage and onions and cook until they start to soften, stirring occasionally.
  • Chop meat to desired size and add to pan. Continue to saute about 5 minutes.
  • Add carrot and cook until vegetables are as soft as you want them.
  • Slice potatoes into various sized pieces, some small so they dissolve and make the soup thicker and some larger so you will have nice sized chunks. Add to pan stir to combine and allow the potatoes to absorb some of the flavors.,.
  • Add milk and season with salt and pepper.
  • Cook just until heated through. Do not let it bubble or boil.
  • Garnish as desired and serve.
  • NOTE: If not using cooked, leftover potatoes peel and cut potatoes in large bite sized pieces. Cook in water or broth that has been salted a little more than normal. Drain well and cool. I like to make ahead and refrigerate as they seem to hold up better in the soup but you can cook them while you are preparing the above.
  • Also: You can adjust milk and broth, using more or less to reach the consistency you desire.

6 medium-sized Russet potatoes, peeled and chopped into 1 inch pieces,
2 cups cubed fully cooked ham, (approximately 1/2 inch cubes)
1 small white or yellow onion, diced
4 cups low-sodium chicken broth or chicken stock
1.5 teaspoons unrefined sea salt
1 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dried thyme
2 cups chopped kale leaved, stems removed and chopped into 1 inch pieces
(optional / omit if on a whole30) parmesan cheese, grated

Steps:

  • To the Instant Pot, add all of the ingredients but the kale leaves and give it a quick stir.
  • Lock the lid and set the pressure valve to sealing.
  • Select the Soup/Broth function and adjust time to 15 minutes.
  • Once cooking has finished, allow the machine to naturally release pressure for 5 minutes.
  • After the 5 minutes, quick release any remaining pressure. To do this I like to use an oven mitt for safety.
  • If you like a broth-like soup you can stir in kale now to wilt and serve, if you'd like the soup creamy as pictured proceed to the next step to blend.
  • Using either a standard blender or an immersion blender with a narrow/tall bowl or mason jar (I use the wide mouth pint and a half mason jars) transfer 1-2 cups of potatoes and broth only to the jar or blender and blend until smooth and creamy.
  • Once potatoes are smooth, pour the mixture back into the soup and stir-through for a creamy consistency.
  • Add in the chopped kale, stir until wilted, taste and adjust seasonings and you are ready to serve.
  • Top with parmesan cheese if desired or leave it off completely for a dairy free, paleo or whole30 meal. Enjoy!

We didn't cook the celery with the onion and green pepper to add some additional crunch, but they could be cooked together. We used reduced-fat ingredients throughout and had great success. We found that there were no spices needed as the vegetables were a great flavor combination! This recipe ended up being a winner with everyone in the family!

1 onion, diced
1 green bell pepper, diced
5 potatoes, diced
1 (16 ounce) bag frozen chopped broccoli, thawed
1 pound diced cooked ham

1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) container sour cream
1 (4 ounce) package cream cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

  • Once the potatoes are soft, give the soup a taste and season with extra salt and pepper if needed. Serve immediately.
