1 package yellow cake mix (regular size)
1-1/4 cups cold 2% milk
1 package (3.4 ounces) instant vanilla pudding mix
1 can (20 ounces) crushed pineapple, drained
1 envelope whipped topping mix (Dream Whip)
3 ounces cream cheese, softened
1/4 cup sugar
1/2 teaspoon vanilla extract
1/2 cup sweetened shredded coconut, toasted

Steps:

  • Prepare and bake the cake according to package directions, using a greased 13x9-in. baking pan. Cool on a wire rack. , In a large bowl, whisk milk and pudding mix for 2 minutes. Stir in pineapple. Spread over cake. Prepare whipped topping mix according to package directions; set aside. , In a small bowl, beat the cream cheese, sugar and vanilla until smooth. Beat in 1 cup whipped topping. Fold in remaining topping. Spread over pudding. Sprinkle with coconut. Cover and refrigerate for 3 hours or overnight.

1 can (20 ounces) crushed pineapple
1-1/2 cups all-purpose flour
2-1/2 teaspoons baking powder
1-1/4 cups sugar, divided
1/4 cup butter, melted

MOUSSE:
4 cups heavy whipping cream
1-1/2 cups confectioners' sugar, divided
2 packages (8 ounces each) cream cheese, softened
5 cups sweetened shredded coconut, divided

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Drain pineapple, reserving 1 cup juice; set aside., Preheat oven to 350°. In a small bowl, combine flour and baking powder. In another bowl, beat egg yolks until slightly thickened. Gradually add 1 cup sugar, beating on high speed until thick and lemon-colored. Beat in butter, extracts and 1/2 cup reserved juice. Add dry ingredients; beat until well blended., Beat egg whites with clean beaters on medium speed until soft peaks form. Gradually add remaining sugar, 1 tablespoon at a time, beating on high until stiff peaks form. Fold into batter., Transfer to two greased and floured 9-in. round baking pans. Bake 18-22 minutes or until cake springs back when lightly touched. Cool 10 minutes before removing from pans to wire racks to cool completely., In a large bowl, beat cream until it begins to thicken. Add 1 cup confectioners' sugar; beat until stiff peaks form. In another bowl, beat cream cheese, pineapple and remaining confectioners' sugar until blended; stir in 2 cups coconut. Fold in whipped cream. Cover and refrigerate at least 1 hour., Cut each cake horizontally into two layers. Place bottom layer on a serving plate; drizzle with 2 tablespoons reserved juice. Spread with 2 cups mousse. Repeat layers twice. Top with remaining cake layer and drizzle with remaining juice. Spread remaining mousse over top and sides of cake. Press remaining coconut onto top and sides. Refrigerate at least 1 hour before serving.

¾ cup unsalted butter, at room temperature
½ cup vegetable oil
2 cups white sugar
2 teaspoons coconut extract
1 teaspoon vanilla extract
4 eggs
3 cups self-rising flour
1 cup unsweetened coconut milk
½ cup pineapple juice
¼ cup confectioners' sugar, or more as needed
¼ cup pineapple juice
1 cup unsalted butter, softened
1 teaspoon coconut extract
¼ cup shredded coconut
1 (20 ounce) can crushed pineapple, drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9-inch square pans.
  • Beat 3/4 cup butter in a bowl using an electric mixer until light and fluffy. Slowly drizzle oil into creamed butter while continuing to beat butter until mixture is smooth. Beat white sugar, 1 cup at a time, into butter mixture until incorporated. Add 2 teaspoons coconut extract and vanilla extract; mix well. Beat eggs, 1 at a time, into butter mixture, beating well until each egg is fully incorporated.
  • Mix flour, alternating with coconut milk, into butter mixture, ending with flour until batter is just mixed. Mix 1/2 cup pineapple juice into batter. Pour batter into the prepared pans.
  • Bake in the preheated oven until a toothpick inserted in the center of each cake comes out clean, 45 to 50 minutes.
  • Mix confectioners' sugar and 1/4 cup pineapple juice together in a bowl until sugar is dissolved. Beat 1 cup butter into sugar mixture until light and fluffy. Add 1 teaspoon coconut extract; beat until icing is smooth, adding more confectioners' sugar until desired consistency is reached.
  • Place 1 cake on a serving platter and top with a layer of icing. Place second cake over icing layer. Cover entire cake with remaining icing. Dust sides of cake with shredded coconut and top with crushed pineapple.

1 pineapple
One 15.25-ounce box vanilla cake mix
3 large eggs
1/2 cup vegetable oil
1 tablespoon brown sugar, plus more for serving
1/2 cup maraschino cherries, chopped
Whipped topping, for serving

Steps:

  • Carefully cut off the top of the pineapple and set it aside. With a large spoon, scoop out the core and flesh from the pineapple and the top crown. Discard the core, cut up the flesh into chunks and reserve with the juice. Dry out the hollow pineapple the best you can with a paper towel.
  • In a large bowl, mix the cake mix, eggs, vegetable oil, 1 cup of the pineapple juice and 3/4 cup of the pineapple chunks. Pour the cake batter into the hollowed-out pineapple to fill it three-quarters of the way to the top. Reserve the leftover batter for another use (perhaps a second pineapple? Or cupcakes?!). Microwave on high until the cake is baked, about 10 minutes. A skewer should come out clean. Remove from the microwave with a kitchen towel because it's super hot on the outside, let cool for 15 minutes.
  • While the pineapple is cooling, make the topping: In a small bowl, combine the remaining pineapple chunks (you should have about 1/2 cup) and the brown sugar and microwave on high for 1.5 to 2 minutes. Mix well with a spoon and let cool slightly.
  • Top the pineapple cake with the sugared pineapple, some whipped topping and chopped maraschino cherries. Sprinkle with a bit of brown sugar for the crunch and because it looks pretty. Serve with the pineapple crown on top. Find a long spoon and dig in!

PINEAPPLE-CHIP CAKE

Pinch of salt
1 cup pineapple juice
19 oz. can of crushed pineapple

3 egg whites
1/2 cup of sugar

Steps:

  • Mix together the batter ingredients at medium speed until well blended. Pour into 13 x 9-inch greased glass pan.
  • Topping: Layer on the crushed pineapple, walnuts and chocolate chips. Beat the egg whites and sugar together until stiff (meringue). Pour the meringe onto the cake batter that has been layered with pineapple, chocolate chips and walnuts.
  • Bake at 325 for 50 minutes to 1 hour.

1 cup canned unsweetened coconut milk
Pineapple Glaze, recipe follows
1/2 cup flaked coconut
2 cups powdered sugar
4 tablespoons pineapple juice

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a Bundt pan with nonstick baking spray and dust with flour.
  • In a small bowl, whisk together the flour, salt, and baking powder.
  • In a large bowl, using a hand mixer, cream the butter and sugar together until light and fluffy, about 5 minutes. Beat in the eggs, 1 at a time. Once incorporated, add the extracts. Stir in the coconut milk and beat until combined. Slowly beat in the dry ingredients until the mixture is smooth.
  • Pour the batter into the prepared pan and bake until a cake tester comes out clean, about 1 hour 10 minutes. Cool cake 5 minutes before turning it out onto a rack. Let cool completely on the rack.
  • Once the cake has cooled, ladle the glaze over the cake, and top with flaked coconut. Let glaze set before serving. Transfer the cake to a platter or serving dish and slice.
  • In a mixing bowl, whisk the powdered sugar and the pineapple juice together until smooth.

1/2 teaspoon fresh lemon juice
1 1/2 cups confectioners' sugar, plus more for dusting

1/4 cup vegetable oil

1 1/4 cups all-purpose flour (see Cook's Note)
1/2 teaspoon baking powder
1/4 teaspoon fine salt
5 sticks (1 1/4 pounds) unsalted butter, at room temperature
1/8 teaspoon fine salt
4 1/2 cups confectioners' sugar
One 5.4-ounce can unsweetened coconut cream (about 2/3 cup)
1 cup unsweetened coconut flakes, toasted
3/4 cup maraschino cherries, drained and chopped, plus whole maraschino cherries, for garnish
1/4 cup maraschino cherry liquid, from the jar of cherries
2 cored and peeled pineapples (each about 5 1/2 inches tall)

Steps:

  • For the coconut sponge cake: Preheat the oven to 375 degrees F. Coat an 11-by-17-inch rimmed baking sheet or jelly roll pan with cooking spray; line the bottom with parchment and spray the parchment.
  • Add the egg whites and lemon juice to a stand mixer fitted with the whisk attachment. Beat on medium speed until soft peaks form, about 3 minutes. Add 1/2 cup of the confectioners' sugar and increase the speed to medium high; beat until stiff peaks form, 3 to 4 minutes.
  • Whisk the egg yolks together with the milk, vegetable oil and coconut extract in a separate large bowl until smooth. Sift the flour, baking powder, salt and remaining 1 cup confectioners' sugar together into a medium bowl; whisk into the yolk mixture until smooth. Stir about a third of the whites into the batter with a rubber spatula, then fold in the remaining whites in 2 batches.
  • Spread the batter in the prepared pan. Bake until a toothpick inserted in the center comes out clean but the cake is still pale, 12 to 14 minutes.
  • Immediately sift confectioners' sugar generously over the top of the warm cake and loosen the edges with a knife; lay a clean kitchen towel (not terry cloth) over the cake. Place another baking sheet over the towel and flip the baking sheets to invert the cake onto the towel. Remove the top baking sheet and parchment. Starting at a short end, roll up the cake and towel together into a spiral. Transfer seam-side down to a rack and let cool completely, about 1 hour.
  • For the frosting and cream: Add the butter and salt to a stand mixer fitted with the paddle attachment. Beat on medium speed until smooth and fluffy, about 1 minute. Gradually beat in the confectioners' sugar until smooth. Add the coconut cream and beat on medium-high speed until thick, about 2 minutes. Transfer 2 cups of the frosting to a large piping bag fitted with a large star tip. Set aside.
  • Add the toasted coconut flakes, chopped cherries and maraschino cherry liquid to the remaining frosting in the mixer and mix on low speed until combined. Transfer 1/2 cup of the maraschino cream to a small piping bag.
  • Dry the cored pineapples with paper towels. Stand them upright on a baking sheet and pipe the maraschino cream into the center of each. Tap each pineapple on the baking sheet to pack in the cream, then pipe in more to fill.
  • Gently unroll the cake. Spread the remaining maraschino cream over the cake, leaving about a 1/4-inch border. Arrange the pineapples end to end in a row in the middle of the cake, lining up the cores. Bring the ends of the cake up and together around the pineapples. Trim any cake that is overlapping so the ends just meet. Trim the short ends with a serrated knife to create a clean edge. Turn the cake seam-side down.
  • Pipe the white frosting on top of the cake to decorate and garnish with the toasted coconut chips, dried pineapple rings and maraschino cherries.

I found this on Jasey's Crazy Daisy Blog....glad I did. This is a terrific cake that is super moist and doesn't call for vegetable oil but, coconut milk. This stored in the fridge and frosted with the whipped cream frosting lasted a whole week without the frosting separating or becoming soggy. At no point was this a soggy cake. Definately give this one a try!!

1 (14 ounce) can coconut milk, not cream of coconut

Steps:

  • Prepare pans. If using two 9 inch cicle pans grease them, add a layer of traced parchment paper, then grease and flour. If using a 9x13 inch pan, spray the bottom with cooking spray.
  • In a large bowl, beat cake mix, eggs, and coconut milk with mixer on low speed for 30 seconds. Beat on medium speed for 2 minutes, scraping occasionally. Stir in coconut and pineapple. Pour into pans.
  • Bake as directed per pan size on box. Don't overbake.
  • Cool 15 minutes.
  • While cake is cooling add enough milk to reserved pineapple juice to make 1 1/2 cups.
  • Combine pineapple milk mixture, sugar, and 1/2 cup coconut in a saucepan. Bring to a boil, reduce heat, and simmer for 1 minute.
  • Poke holes into cake using a fork, straw, or even a kabob stick.
  • Carefully spoon evenly over warm cake allowing liquid to soak into holes.
  • Put cake into the fridge to cool completely.
  • Frosting:.
  • Beat heavy whipping cream, 1/3 cup sugar, and 1/2 teaspoon vanilla until soft peaks form. (If making a layer cake, you may want to beat it just a little extra so that it sticks to the sides of the cake. You can also spread a little of this prepared cream between layers.
  • Frost cake with prepared whipped cream. Cover cake with remining coconut.
  • Keep and store in refrigerator until ready to serve.

1/2 cup BAKER'S ANGEL FLAKE Coconut

Steps:

  • Heat oven to 350°F.
  • Beat first 4 ingredients with mixer until blended; spoon into 24 paper-lined muffin cups.
  • Bake 20 to 25 min. or until toothpick inserted in centers comes out clean. Cool cupcakes in pans 10 min. Remove from pans to wire racks; cool completely.
  • Add COOL WHIP to frosting in medium bowl; stir just until blended. Spread onto cupcakes. Garnish with coconut.

1 boxes yellow cake mix
1 cups butter
7 ounces coconut
1 cups macadamia nuts
1 units *
1 units pecans
0.5 cups omit coconut

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 9 x 13 baking dish.
  • In the prepared baking dish, first pour in the undrained pineapple then layer the cherry pie filling over the pineapple. Sprinkle the dry cake mix over the cherry pie filling, smoothing evenly. Pour the melted butter or margarine over the top, covering evenly. Top with coconut and nuts.
  • Bake for 50-60 minutes or until brown and bubbly on top.

I really don't care much for fruitcake. That being said, this recipe actually sounds like it might be good. I am adding it here so I can find the recipe to bake for Christmas. I may substitute 1/2 cup coconut rum for half the pineapple juice when I make it. NOTE: Cake needs to mellow for 2 weeks before serving.

1 1/2 cups candied pineapple, diced
1 1/2 cups light raisins
1/2 cup orange peel, diced
1 cup walnuts, chopped (or pecans)
2 cups flaked coconut
1 cup butter
1 cup sugar
4 eggs
1 cup pineapple juice
2 cups flour
1 teaspoon baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 300*. Grease and flour (3) 8" x 4" loaf pans.
  • Mix fruits, nuts and coconut; set aside.
  • Cream butter and sugar until fluffy. Add eggs one at a time, beating well after each. Stir in the pineapple juice.
  • Combine the flour, baking powder and salt. Add this to the creamed butter-sugar mixture.
  • Fold in the combined fruits, nuts & coconut.
  • Spoon into three (3) greased and floured 8" x 4" loaf pans.
  • Bake @ 300* for 1 1/2 hours.
  • Cool, wrap and store two weeks to mellow.

  • Preheat Oven to 200C To make the pastry, combine together the flour, coconut, caster sugar and butter in a food processor until fine breadcrumbs are resembled. knead to a dough and chill in the refrigerator for 30min
  • To make the cake mixture, cream together margarine and caster sugar until light and fluffy. Gradually add the eggs and vanilla essence until smooth. Using a metal spoon fold in flour and baking powder bit by bit until all is mixed.
  • Piece the pastry into a pie pan and cover with baking paper. Add the baking beans and bake for 10 min. Reduce temperature of oven to 180C. Let the pastry cool for 5 min. Drain the two pineapple tins. Scatter the pineapple crush and then scatter the pineapple chunks onto pastry. Spread the cake mixture evenly and bake until mixture is done
  • TIP!- To add more flavour, add a spoonful or two of the Pineapple syrup and crush to the cake mixture, and why not go all out and add a little coconut too. A variety of fruits can be used as well.

1 package(s) cream cheese
1 1/4 cup(s) milk
1 package(s) vanilla pudding, instant
1 large cool whip

Steps:

  • Bake cake mix in a 15 1/2 X 10 1/2 X 1 inch pan, according to box directions.
  • While cake is baking, drain pineapple. Let cream cheese stand at room temperature for 1 hour.
  • In a bowl place cream cheese, gradually add a little milk at a time beating at medium speed to blend mixure smoothly.
  • Then add pudding and beat at low speed for 12 minutes. Spread mixture over cake.
  • Top with crushed pineapple, sprinkled evenly.
  • On top of this spread cool whip.
  • Sprinkle coconut over everything.
