For a substantial appetizer, you can't go wrong with mini sandwiches. Instead of serving egg or ham salad on ordinary bread, I like to present them on homemade puff pastry.-Karen Owen, Rising Sun, Indiana

1 cup water
1/2 cup butter
1 cup all-purpose flour
4 large eggs
EGG SALAD FILLING:
6 hard-boiled large eggs, chopped
1/3 cup mayonnaise
3 tablespoons chutney, finely chopped
2 green onions, finely chopped
1 teaspoon salt
1/2 teaspoon curry powder
HAM SALAD FILLING:
1 can (4-1/4 ounces) deviled ham
3 ounces cream cheese, softened
2 tablespoons finely chopped green pepper
1-1/2 teaspoons prepared horseradish
1 teaspoon lemon juice

Steps:

  • In a saucepan over medium heat, bring water and butter to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. , Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Drop by teaspoonfuls 2 in. apart onto greased baking sheets., Bake at 400° for 20-25 minutes or until lightly browned. Remove to wire racks. Immediately cut a slit in each puff to allow steam to escape; cool completely., In separate bowls, combine the ingredients for egg salad filling and ham salad filling. Split puffs and remove soft dough from inside. Just before serving, spoon fillings into cream puffs; replace tops. Refrigerate leftovers.

1/2 cup chopped onion
2 tablespoons chopped fresh parsley leaves
3 tablespoons maple syrup
2 tablespoons hot sauce (recommended: Tabasco)
1 tablespoon Worcestershire sauce
2 teaspoons paprika
1 teaspoon mustard powder
Salt
Pepper

Steps:

  • Combine all ingredients in a food processor and blend until smooth. Use as a sandwich filling or spread on crackers for a snack.

I searched for a recipe for this on this site and couldn't find one, so I winged it and it turned out very nicely. I had to make a second batch to take to the New Year's Eve party because the first batch disappeared. A great way to use leftover ham from holiday dinner to make a great spread for hearty crackers or rye toast points. Also good as a sandwich.

1 ½ cups cubed cooked ham
3 tablespoons mayonnaise
2 teaspoons prepared mustard
5 drops hot pepper sauce
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon celery salt
½ teaspoon ground black pepper
½ teaspoon paprika
1 pinch caraway seeds, or to taste
¼ cup finely chopped onion
¼ cup finely chopped celery

Steps:

  • Place ham, mayonnaise, mustard, hot pepper sauce, garlic powder, onion powder, celery salt, black pepper, paprika, and caraway seeds in a large mixing bowl. Stir to combine.
  • Use an immersion blender or food processor to puree the ingredients to your desired texture; stir in onion and celery. Chill before serving.

2 drops tabasco sauce
1 tsp worcestershire sauce
4 1/2 oz deviled ham
8 slice white bread
1/2 lb cheddar cheese, shredded
3 eggs, slightly beaten
2 c milk
1 Tbsp pimentos, chopped
1 green pepper, chopped
salt and pepper, to taste

Steps:

  • 1. Grease shallow baking dish or 2 qt. casserole well.
  • 2. Blend Tabasco and Worcestershire sauce with deviled ham. Spread evenly onto each slice of bread. Cut bread into 1-inch squares.
  • 3. Place layer of bread in baking dish. Sprinkle with 1/2 of the cheese. Repeat. Blend eggs, milk, pimento, salt and pepper; pour over bread and cheese. Let stand for about 15 minutes.
  • 4. Bake in a 350ºF oven until puffed and brown, about 20 minutes.

1 teaspoon onion juice
1/2 teaspoon baking powder
1 egg yolk, beaten
salt, to taste
24 small bread rounds (1 1/2 inch in diameter)
2 (2 1/2 ounce) cans deviled ham

Steps:

  • Blend together the cheese, onion juice, baking powder, egg yolk, and salt.
  • Toast the bread round on one side.
  • Spread the untoasted side with deviled ham and cover each with a mound of the cheese mixture.
  • Place on ungreased cookie sheet and bake at 350 degrees for 10 to 12 minutes or until puffed and brown.
  • Serve hot.

1/2 c sour cream
1 2 oz jar pimientos ( drained)
1/4 c minced celery
1 Tbsp prepared horseradish
1/4 tsp onion salt
1/4 tsp black pepper
1 stick of butter ( 8 tbls )
1 c all purpose flour
1/2 tsp salt
4 large eggs

Steps:

  • 1. COMBINE FIRST 7 INGREDIENTS IN A MEDIUM BOWL AND MIX WELL. CHILL COVERED FOR 1 HOUR.
  • 2. PRE HEAT OVEN TO 400 DEGREES
  • 3. PLACE BUTTER AND WATER IN MEDIUM SAUCEPAN. BRING TO A ROLLING BOIL OVER HIGH HEAT. GRADUALLY STIR IN FLOUR AND SALT, STIRRING CONTINUALLY OVER LOW HEAT UNTIL MIXTURE FORMS A BALL. ABOUT 1 MINUTE. REMOVE FROM HEAT. ADD EGGS AND BEAT UNTIL DOUGH IS SMOOTH AND GLOSSY.
  • 4. DROP BY ROUNDED TEASPOONFULS ONTO BAKING SHEET. BAKE UNTIL PUFFED AND GOLDEN BROWN, ABOUT 25 MIN. REMOVE TO WIRE RACK TO COOL
  • 5. CUT OFF TOP OF EACH PUFF AND RESERVE. REMOVE SOFT CENTER AND DISCARD. SPOON 1 ROUNDED TEASPOONFUL OF HAM MIXTURE INTO EACH PUFF. REPLACE EACH TOP.
