Time 50m

Yield 16

Number Of Ingredients 8

2 cups all-purpose flour
1 cup unsalted butter, softened
3 tablespoons white sugar
1 ¼ cups white sugar
1 cup crushed pineapple in juice
2 tablespoons cornstarch
1 tablespoon water
4 egg whites

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Combine flour, butter, and sugar in a stand mixer fitted with the paddle attachment. Beat together until a soft dough forms. Press dough over the bottom and up the sides of a 9x12-inch baking pan.
  • Bake in the preheated oven until edges are light golden, 20 to 25 minutes.
  • While crust is baking, bring sugar and crushed pineapple to a boil in a small saucepan. Mix cornstarch with water and stir into the pineapple filling. Simmer until thickened, about 5 minutes. Remove from heat and cool slightly.
  • While filling is cooling, beat egg whites in a glass, metal, or ceramic bowl until stiff peaks form. Add slightly cooled pineapple mixture; whip on low speed until just combined. Give filling 1 more stir to ensure it is evenly mixed.
  • Pour filling into the baked crust. Return to the oven and bake until the topping is slightly golden brown, about 10 minutes. Cool before cutting into squares.

PINEAPPLE TORTE

PINEAPPLE TORTE image

Such a quick and easy sheet cake dessert. Our family and guests swore the taste and texture was that of a carrot cake, and yet carrots are not included in the ingredients. This dessert can be thrown together in about 5 minutes and it is so very good, which is surprising due to the few ingredients, and has such basic mixing and baking techniques. A simply perfect dessert to be enjoyed by both the experienced and inexperienced baker.

PINEAPPLE COCONUT TARTE TATIN

Pineapple Coconut Tarte Tatin image

Provided by Molly O'Neill

Categories     dessert

Time 1h15m

Yield 8 servings

Number Of Ingredients 5

3/4 cup sugar
2 large pineapples, trimmed, peeled, cored and cut into 1/4-inch thick rings
4 tablespoons unsalted butter
1/2 cup shredded coconut, toasted
Tarte Tatin pastry (see recipe)

Steps:

  • Preheat oven to 375 degrees. Position rack in bottom third of oven. Place the sugar in a 10-inch skillet or tarte Tatin pan over low heat. When some of the sugar begins to melt, begin stirring with a wooden spoon until the sugar is melted and begins to turn a pale golden color.
  • Remove the pan from the heat. Arrange the pineapple rings in layers, overlapping them slightly. Cut the butter into small pieces and scatter over the pineapple. Place the pan over medium heat. Cook until the sugar turns a deep caramel color and the juices released from the pineapple are nearly evaporated, about 20 minutes.
  • Roll the dough and cover the pineapple according to the directions in the pastry recipe. Bake until the crust is golden brown, about 25 to 30 minutes. Remove from oven and set aside for 10 minutes.
  • Run a small, sharp knife around the edge of the tarte to loosen. Place a large plate or platter over the skillet. Holding the plate and skillet together using 2 kitchen towels, carefully but quickly invert the tarte onto the plate. Sprinkle the toasted coconut over the top. Let stand a few minutes to cool slightly. Cut into wedges and serve with vanilla ice cream if desired.
