This herb and cheese spread is great on crackers, sandwiches when bored with mayo and mustard, or tucked into beef Wellington! It's so much cheaper to make it than buy it.

- Mix together the butter, cream cheese, Parmesan cheese, garlic, oregano, parsley, thyme, dill, basil, and pepper in a bowl until evenly combined. Chill in refrigerator overnight or 8 hours. This can be frozen for long-term storage.

- In a large bowl, dissolve yeast in warm water. Add milk, oil, honey, egg, salt, whole wheat flour, 1 cup all-purpose flour and herbs. Beat until blended. Stir in enough remaining all-purpose flour to form a soft dough. Cover and refrigerate overnight., Punch dough down and turn onto a floured surface; divide in half. Roll one portion into a 15x10-in. rectangle. Combine filling ingredients; sprinkle half over dough. Roll up jelly-roll style, starting with a long side; pinch seams to seal., Place seam side down on a greased baking sheet; pinch ends together to form a ring. With a sharp knife, cut 1/2-in. slashes at 2-in. intervals. Repeat with remaining dough and filling. Cover and let rise in a warm place until doubled, about 30 minutes. , Preheat oven to 350°. Brush each ring with egg; sprinkle with sesame seeds and cheese. Bake 20-25 minutes or until golden brown. Remove from pans to wire racks to cool.

HERBED CHEESE SPREAD
Tastes just like the expensive Boursin® cheese spread you buy at the store. Reduced-fat cream cheese works well in this recipe. Delicious spread on crackers or as a fill on celery sticks. Good shelf life in the refrigerator. This can be eaten right way, but it's best if refrigerated for at least one day before serving.

CHEESE AND HERB SCONES
Having done work experience at the National Trust, this recipe is brilliant in every single way! And gives you the inside way in how the National Trust make their cheese and herb scones.

- Preheat the oven to 230 C / 210 C Fan / Gas 8. Line a baking tray with parchment.
- Put the flour, baking powder, salt, dried herbs, mustard and cheese into a mixing bowl and mix until well combined. Add the butter and and rub through with your fingers until the mixture resembles breadcrumbs.
- Make a well in the middle of the flour mixture and pour in a little at a time the water and milk and stir until the mixture forms a ball and until you have ran out of milk and water. (If the mixture looks dry add a tiny bit of water but not so that it looks wet.)
- Knead for about 2 minutes on a floured surface. Roll the dough out on a floured surface and cut into twelve 7.5cm (3 in) rounds and put on your baking tray. Try to cut the scones as close together as you can so you can fit more scones out of the mixture. Re-roll the dough and cut more scones until you have no dough left.
- Bake in the oven for about 17 minutes. Keep an eye on your scones to make sure that they do not burn!
HERBED ONION BEER BREAD WITH CHEDDAR
I have not yet tried this, but it is from an overdue library book (From Our Mothers' Kitchens) and I want to return the book tomorrow, so need to get the recipes I want to try copied down, pronto. Beer breads are always great to serve with chili, soup or stews, and this one, with the addition of the cheddar and the onion rings on top, sounds terrific.

- Preheat oven to 350F; grease a 9x5 loaf pan well and set aside.
- Into a large mixing bowl, sift flour, baking powder, sugar, salt and mustard powder; it's easiest to do this by shaking mixture into bowl through a sieve.
- If you don't want to sift (it's best to do so), combine those ingredients well using a fork.
- Add basil, minced green onions and cheese.
- Pour in beer, stirring only to combine; don't over-stir.
- Spread batter evenly in prepared loaf pan.
- Arrange the onion rings over entire top, then sprinkle cheese over, then sesame seeds if using.
- Bake in preheated oven for 50 to 55 minutes, or until a tester inserted into centre of loaf comes out clean.
- Remove loaf from pan immediately and let cool on a wire rack for a few minutes; loaf is best if served warm so should be served right away, but it can be make ahead of time and then rewarmed to serve, if desired.

This is a traditional herb cheese with almost nothing in it; you can also make it with fresh goat cheese or with Yogurt Cheese (preceding recipe). Serve with crackers, lightly toasted pita, and/or raw vegetable sticks.

- Combine all the ingredients in a food processor and blend until smooth. (Alternatively, mince the garlic and mash all the ingredients with a potato masher or fork until fairly smooth, then beat for a few moments with a wire whisk.) Taste and adjust the seasoning as necessary.

HERBED CHEESE-AND-CRACKER BITS

- Place the crackers in a large sealable freezer container. In a bowl, mix the oil, salad dressing mix, dill, garlic powder, and celery salt. Pour this mixture over the crackers, cover the container, and invert it to coat crackers with seasoning.
- Refrigerate for at least 24 hours, turning the container every so often to keep the crackers coated.
- Let the mixture come to room temperature before serving. Store in the covered container in refrigerator.

- In a medium saucepan, combine the water, 1/4 cup butter and 1/4 teaspoon salt. Bring to boiling. Add flour all at once, stirring vigorously. Cook and stir until mixture forms a ball. Remove from heat. Cool for 10 minutes.
