2 tablespoons vegetable oil
1 small onion, diced
1 cup diced celery
1 pound Italian sausage links, casings removed
1 (12 ounce) package dry bread stuffing mix
¾ cup unsweetened dried cranberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
  • Heat oil in a skillet over medium heat. Add onion and celery and saute for 10 minutes. Remove from the pan. Add sausage; cook and stir, breaking it up with a spoon, until browned and crumbly, 5 to 7 minutes. Return onion and celery and cook for a few more minutes.
  • Transfer sausage mixture to a bowl and add stuffing mix and cranberries; gently stir until liquid is gone and ingredients are well coated. Place in the prepared baking dish and cover.
  • Bake in the preheated oven for 30 minutes. Remove cover and bake for an additional 5 to 7 minutes.

This Thanksgiving stuffing is fantastic! It is very flavorful and fresh-tasting. This recipe will stuff a 10-pound turkey (which serves six) plus extra. I replaced the usual pork sausage with much healthier turkey sausage. Other dried fruits may also be used in place of cranberries.

1 ½ cups cubed whole wheat bread
3 ¾ cups cubed white bread
1 pound ground turkey sausage
1 cup chopped onion
¾ cup chopped celery
2 ½ teaspoons dried sage
1 ½ teaspoons dried rosemary
½ teaspoon dried thyme
1 Golden Delicious apple, cored and chopped
¾ cup dried cranberries
⅓ cup minced fresh parsley
1 cooked turkey liver, finely chopped
¾ cup turkey stock
4 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 350 degree F (175 degree C). Spread the white and whole wheat bread cubes in a single layer on a large baking sheet. Bake for 5 to 7 minutes in the preheated oven, or until evenly toasted. Transfer toasted bread cubes to a large bowl.
  • In a large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the celery, sage, rosemary, and thyme; cook, stirring, for 2 minutes to blend flavors.
  • Pour sausage mixture over bread in bowl. Mix in chopped apple, dried cranberries, parsley, and liver. Drizzle with turkey stock and melted butter, and mix lightly. Allow stuffing to cool completely before loosely stuffing a turkey.

2 medium onions, finely diced
3 cups chopped celery, (about 6 large stalks)

1 pound breakfast sausage or Italian sausage, casings removed
6 teaspoons poultry seasoning
2 teaspoons chopped fresh rosemary leaves, (about 4 sprigs)

2 teaspoons chopped fresh parsley leaves, (about 4 to 6 sprigs)
2 cups dried cranberries
1 box stuffing mix (not cornbread) (recommended: Pepperidge Farm)
2 cups (1 pint) vegetable stock

Steps:

  • Preheat oven to 350 degrees F.
  • Melt the butter in a large skillet and saute the onions, celery, leeks, apples, and sausage, breaking up the sausage as you cook. After about 10 minutes, add the poultry seasoning, fresh herbs and dried cranberries. Add the dried stuffing mix and moisten with the vegetable stock. Season stuffing mix with salt and pepper, to taste. (I like the stuffing a little wetter - if you don't, just add less stock)
  • Place into a buttered casserole dish and bake for 45 minutes.

1 cup dried cranberries, rehydrated in boiling water for 15 minutes and drained
1 tablespoon chopped fresh sage leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • Saute the sausage in a large heavy skillet over medium-high heat until cooked through, crumbling coarsely with the back of a spoon, about 10 minutes. Using a slotted spoon, transfer the sausage and drippings to a large bowl. Melt the butter in the same skillet over medium-high heat. Add the leeks, apples, celery and poultry seasoning to the skillet and saute until the leeks are soft, about 8 minutes. Mix in the drained cranberries, sage and rosemary. Add the mixture to the sausage, then mix in the croutons and parsley. Next add the chicken stock a little at a time until the stuffing is very moist. Be sure not to overdo it; it shouldn't be mushy. Season with salt and pepper. Place in a casserole dish. (The stuffing can be made to this point 2 days before Thanksgiving, refrigerated.)
  • Bake in a 14-inch oval or 9 by 13-inch rectangular casserole dish and place, uncovered, in the oven for 20 to 30 minutes, until the top is crispy and the center piping hot. Remove and serve immediately.

  • Dice bread into 3/4-inch cubes; spread into an even layer on a rimmed baking sheet.

16 ounces seasoned stuffing mix, cubed kind
6 tablespoons butter (seperated)
1 lb sage sausage
4 cups apples, cut into 1/2-inch pieces
1/2 teaspoon kosher salt
3 cups chicken broth
1/4 cup fresh parsley, chopped or 4 teaspoons dried parsley
3/4 cup celery, chopped
1 cup onion, chopped
2 eggs, beaten
0.5 (8 ounce) package dried cranberries

Steps:

  • Preheat oven to 425 and butter a 3 qt baking dish.
  • Place stuffing in large bowl; reserve.
  • In large nonstick skillet, melt 2 T. butter over medium high heat. Crumble in sausage; cook, stirring, until no longer pink. Stir sausage with drippings into stuffing.
  • In same skillet, melt 2 T. butter over medium heat. Add apples, onion, celery, and salt; cook stirring occasionally, until softened. Add broth and parsley; bring to a boil. Pour over stuffing; stir until moistened.
  • Stir in cranberries and eggs.
  • Spoon into baking dish; cover with foil. Bake 30 minutes.
  • Melt remaining butter, uncover stuffing; drizzle with butter. Bake until crisp and golden, about 10 minutes.

This stuffing is the family favourite. The key is the fresh ingredients and home baked bread cubes along with turkey broth. I prefer to use the broth from the cooked turkey instead of chicken broth. 12 cups white bread, cut into small cubes (1 1/2 loaves Dempster's sesame white bread = 12 cups)
1/2 lb sweet Italian sausage, casing removed
1/4 cup butter
3 large leeks, finely chopped cut only white and pale green parts
2 large tart green apples, finely chopped (cored and peeled)
2 cups finely chopped celery
4 teaspoons poultry seasoning
4 teaspoons finely chopped fresh rosemary
1/2 cup dried cranberries
1 egg, beaten & blended
1 -1 1/4 cup turkey broth

Steps:

  • Discard the end pieces of bread. Then remove the crust off bread and cut into even sized cubes.
  • In a 350 degree, oven bake the bread cubes until slightly dry, about 15 minutes NOTE: Watch the first batch so you know how long your oven takes, different types of bread takes less time or more time.
  • Cool completely; set aside.
  • (I bake these ahead by a few days or weeks, prefer making my own, you can buy store bought if you like).
  • Saute & break up sausages in a large, heavy pan until cooked through.
  • Remove and drain sausage.
  • Pour off drippings from pan and add butter, melt, then add leeks, apples, celery and poultry seasoning, saute until leeks are soft, about 8 minutes.
  • Mix in dried cranberries and rosemary.
  • Transfer the onion mixture to a large mixing bowl, add sausage, then bread, season with salt and pepper.
  • (You can make onion mixture 1 day ahead and refrigerate covered, bring to room temperature and mix in the beaten eggs, with the turkey broth and bread cubes.) Or if completing the same day add the beaten eggs, mix well, wait 15 mins and add the turkey broth.
  • Transfer to buttered baking dish and cover with buttered foil, bake for 45 mins, remove foil for last 15 mins until golden brown.
  • Note: I double this recipe and make a small dish of veggie stuffing so I saute the leek mixture in butter (not the sausage drippings). Add in the sausage to the portion that won't be vegetarian.

25g butter
2 slices white bread , whizzed to chunky breadcrumbs
200g sausagemeat
1 apple , peeled and grated
200g cranberry
50g pistachios
4 sage leaves, finely sliced
½ tsp mixed spice
bay leaves , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cook the onion in the butter until soft but not browned. Add the breadcrumbs and stir so they soak up all the excess butter and fat. Let the mixture cool. Tip into a bowl with the sausagemeat, apple, cranberries, pistachios, sage and mixed spice. Mix well, then roll into balls. You can now cover and chill for up to a day before cooking.
  • To cook, place in a roasting tin and bake for 40 mins, turning a few times, or until browned all over. Add the bay leaves, if using, for the final ten minutes of cooking.

8 cups lightly packed 3/4-inch cubes French bread
1 lb bulk spicy pork sausage
2 stalks celery (with leaves), chopped (1 1/2 cups)
1 medium onion, chopped (1/2 cup)
1/2 teaspoon dried sage leaves
1/2 cup dried cranberries
1 cup Progresso™ chicken broth (from 32-oz carton)
1 cup milk
2 eggs, beaten

Steps:

  • Heat oven to 350°F. Spray 13x9-inch glass baking dish with cooking spray. Place bread cubes in baking dish.
  • In 10-inch skillet, cook sausage, celery and onion over medium heat, stirring occasionally, until sausage is no longer pink and vegetables are tender; drain.
  • Add sausage mixture, sage and cranberries to baking dish; mix lightly with bread cubes. In medium bowl, beat broth, milk and eggs with fork or wire whisk until well mixed; pour over bread and stir gently to soak all bread cubes in milk mixture. Cover and refrigerate at least 8 hours but no longer than 12 hours.
  • Bake uncovered 35 to 40 minutes or until knife inserted in center comes out clean and top is golden brown.
