CHERRY PINEAPPLE FRUITCAKE
This is the finishing touch to our Christmas dinner. My family always claimed they didn't like fruitcake, but they love this one! For the best flavor, let it sit overnight before slicing.

- In a bowl, combine the cherries, pineapple, pecans and 1 cup flour; set aside. In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each. Beat in vanilla. Combine baking powder and remaining flour; gradually add to creamed mixture. Fold in fruit mixture., Spoon into a greased and waxed paper-lined 10-in. tube pan. Bake at 300° for 1-3/4 to 2 hours or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Remove waxed paper while warm; cool completely before slicing.

- Line an angel food pan with parchment paper and brush with melted butter.
- Cream butter or margarine, and then beat in sugar. Beat in eggs one at a time, beating well after each addition. Stir in extract. Mix in flour, baking powder, and salt. Stir in raisins, cherries, pineapple, and mixed peel. Cover bowl and let sit at room temperature, 8 hours to overnight.
- Bake at 300 degrees F (150 degrees C) for 2 1/2 hours with a pan of hot water placed on the lowest rack of your oven during baking. Brush warm cake with some melted butter.

PINEAPPLE CHRISTMAS CAKE 1953
This is a lightly almondy pineapple fruit cake. We have had this in the family archeives since 1953, given to us by a neighbour Cecila Sweet. She was sweet enough to share this fav.

Steps:
- Chop drained cherries in half.
- Chop the candied pineapple rings into pieces.
- Add the raisins, cherries, and pinapple in a bowl, dust with a tablespoon of the flour.
- Cream room temp.
- butter and white sugar until light and fluffy.
- Beat in the two beaten eggs.
- Stir in the sifted dry ingredients.
- Stir in the extracts.
- Stir in the can of undrained pineapple.
- Stir in the fruits.
- Pour into a greased and floured tube pan.
- Let sit covered overnite on the kitchen counter.
- Bake next morning.
- Bake at 300 degrees F.
- for 2 1/2 hours to 3 hours.
- Tester will come away clean.
- Wrap in foil then in saran wrap when cooled thoroughly.
- Keep 4 weeks before cutting.
- Note can add more drained cherries and candied pinepple only if desired but not too much.
- This cake has no nuts, which is why I think it a favourite among the older generation!

PINEAPPLE COCONUT FRUITCAKE
I really don't care much for fruitcake. That being said, this recipe actually sounds like it might be good. I am adding it here so I can find the recipe to bake for Christmas. I may substitute 1/2 cup coconut rum for half the pineapple juice when I make it. NOTE: Cake needs to mellow for 2 weeks before serving.

- Preheat oven to 300*. Grease and flour (3) 8" x 4" loaf pans.
- Mix fruits, nuts and coconut; set aside.
- Cream butter and sugar until fluffy. Add eggs one at a time, beating well after each. Stir in the pineapple juice.
- Combine the flour, baking powder and salt. Add this to the creamed butter-sugar mixture.
- Fold in the combined fruits, nuts & coconut.
- Spoon into three (3) greased and floured 8" x 4" loaf pans.
- Bake @ 300* for 1 1/2 hours.
- Cool, wrap and store two weeks to mellow.
PINEAPPLE FRUITCAKE
I got this recipe from my friend Julie, and her version does not have the mixed spice in it, but I love it with the spice in. Not a traditional fruitcake, but a lovely light fruity cake.

Steps:
- Put in pan crushed pineapple and juice, butter, raisins, sugar, spice, bicarbonate soda and pinch of salt.
- Boil for 10 minutes, watch that it does not boil over with the bicarbonate of soda in it!
- Cool and then add the beaten eggs and flours.
- Put into an 8x8-inch tin that has been lined with baking paper.
- Bake at 350°F for approximately 1 hour.

- Line bottom and sides of springform pan or loaf pan with one layer of brown paper and one layer of waxed paper.
- Let stand overnight in a bowl (in the fridge): 1 lb. raisins and the can of crushed pineapple with some of the liquid replaced with the liquor. (Your choice how much.).
- In a large bowl, cut up the red and green cherries and mixed peel and dust with 1/4 cup flour.
- In another bowl, cream the butter and sugar.

EXTRA-FRUITY CHRISTMAS CAKE

- Put all the dried fruit, the mixed peel and citrus zests in a large bowl, the pour over the brandy. Stir, cover and leave to soak overnight.
- The next day, heat the oven to 150C/130C fan/gas 2. Line the base and side of a deep 23cm cake tin with a double layer of baking parchment, so it comes a few centimetres above the rim.
- Beat the butter, sugar and treacle together in a large bowl using an electric whisk, until pale and creamy. Alternatively, use a stand mixer. Beat in the eggs, one at a time, scraping down the sides of the bowl every so often. Sift the flour, baking powder and spices into a separate bowl, then stir this into the wet ingredients along with the ground almonds until combined.
- Stir in the rehydrated fruit along with the soaking liquid, then spoon the batter into the prepared tin and level the surface with the back of a spoon. Bake for 2 hrs 25 mins-2 hrs 30 mins, or until a skewer inserted into the middle comes out clean.If the cake starts to darken too quickly, cover with foil.
- Leave to cool completely in the tin, then prick small holes all over the surface using a cocktail stick or skewer and brush over a little brandy. Wrap the cake in baking parchment, then a sheet of foil. Store in an airtight container and feed the cake with 1-2 tbsp brandy each week for three or four weeks, stopping the week before you want to ice it. Will keep in a cool, dry place for six months.

- Place the orange peel, currants, raisins, cherries and chopped candied pineapple in a large bowl.
- Pour the orange juice over the fruit and let sit for 24 hours, mixing/tossing a couple times during the 24 hours period.
- Line bottom of one 9 x 5-inch AND two 3 x 8-inch loaf pans with parchment paper or two sheets of wax paper.
- Set oven to 275 degrees.
- Place a pan of cold water directly onto the bottom of your oven.
- In a large bowl cream butter with confectioners sugar until very smooth.
- Add in the egg yolks and almond or vanilla extract; beat until combined.
- Stir in the soaked fruit and the juice along with nuts.
- Using a wooden spoon stir in the flour.
- In a clean dry bowl beat the egg whites until firm peaks form; fold into the batter.
- Fill the large pan and the two smaller pans about two-thirds full.
- Bake for 2 to 2-1/2 hours or until golden brown, the smaller pans will take less time to bake (or until a toothpick comes out clean when inserted in the middle).
- Let cool in pans on a rack.
- Remove cakes from pan; peel of parchment.
