Light, creamy filling and refreshing pineapple flavor could very well make this old favorite a new classic in your recipe box! I found this recipe in Country Woman magazine. I have not tried this pie. I'm posting this recipe for safe keeping. I plan to use sugar free vanilla wafers and Splenda for baking for the sugar.

1 1/2 cups crushed vanilla wafers (about 45 wafers)
1 cup sugar
1/3 cup butter, melted
3 ounces lemon gelatin
1 1/2 cups unsweetened pineapple juice
1 egg, beaten
1 3/4 cups heavy whipping cream, whipped

Steps:

  • Combine the wafer crumbs, sugar and butter; press onto the bottom and up the sides of an ungreased 9-inch pie plate. Bake at 375 for 8-10 minutes or until lightly browned. Cool on a wire rack.
  • In a small saucepan, combine the gelatin, pineapple juice and egg. Cook and stir over low heat until mixture is slightly thickened and a therometer reads 160 (do not boil), about 10 minutes. Remove from the heat; transfer to a bowl. Cover and refrigerate for 30 minutes, stirring occasionally.
  • Fold whipped cream into filling. Spread evenly into crust. Refrigerate for 4 hours or until set.

2 cups canned crushed pineapple, including juice (hot)
1 1/2 tablespoons lemon juice (fresh is best)
1 cup whipping cream, whipped
1 pastry shells, baked

Steps:

  • Soak gelatin in cold water for five minutes; add sugar and salt and dissolve into hot pineapple.
  • Cool slightly and add lemon juice.
  • Continue to cool; when it begins to thicken, beat until light and foamy.
  • Fold in whipped cream and pile into baked pie shell; continue chilling until firm.

1 cup sweetened flaked coconut, finely chopped
1 cup shortbread cookie crumbs
4 clementines, peeled and seeded
1/4 cup fresh lemon juice
1/4 cup unsalted butter
3/4 cup sugar
1 teaspoon clementine zest
1 (1 ounce) envelope unflavored gelatin
2 large eggs
3/4 cup heavy cream

Steps:

  • Heat oven to 350°F.
  • In large bowl, blend butter, coconut and crumbs. Press over bottom and up sides of 9 inch pie plate.
  • Bake crust at 350F for 14 minutes, or until lightly golden on edges. Transfer plate to wire rack; let cool.
  • Filling: in blender, combine clementine sections and lemon juice. Pulse until smooth. Bring butter, sugar, rind, citrus mixture and gelatin to a simmer in a medium-sized saucepan.
  • In bowl, slightly whisk eggs to break up. Whisk a little of hot clementine mixture into eggs; then whisk egg mixture back into saucepan. Cook 2 minutes, stirring constantly, until mixture is thickened and registers at least 160F on an instead-read thermometer. Strain into a large bowl. Place plastic wrap directly on surface of mixture; let cool at room temperature for 30 minutes. Refrigerate for 2 hours, until mixture begins to set.
  • Add cream to citrus mixture. Beat with an electric mixer to very soft peaks, about 3 minutes. Spoon into crust. Chill until firm, about 1 to 2 hours. Top with clementine sections, if desired.

2-1/4 cups cake flour
1-1/2 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt

1/2 cup canola oil
2 teaspoons grated lemon zest
1/2 teaspoon cream of tartar
GLAZE:
2 cups confectioners' sugar
2 tablespoons butter, melted
2 to 3 tablespoons unsweetened pineapple juice

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, whisk the egg yolks, pineapple juice, oil and lemon zest. Add to dry ingredients; beat until well blended. , In another bowl, beat egg whites and cream of tartar until stiff peaks form; fold into batter. Gently spoon into an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets. , Bake on the lowest oven rack at 325° for 55-60 minutes or until top springs back when lightly touched. Immediately invert pan; cool completely, about 1 hour., Run a knife around side and center tube of pan. Remove cake to a serving plate. Combine the confectioners' sugar, butter and enough pineapple juice to achieve a glaze consistency. Drizzle over top of cake, allowing some glaze to drape down the sides.

1 (6 ounce) can pineapple juice concentrate, frozen
1 (1/4 ounce) envelope unflavored gelatin
1/4 cup water, cold
4 egg yolks, beaten till thick and creamy
1/2 cup white sugar
1/4 teaspoon salt
2 tablespoons orange rind, grated
4 egg whites
1/4 cup white sugar
2/3 cup heavy cream, whipped
30 pineapple tidbits
6 maraschino cherries

Steps:

  • Soften gelatin in water at least 5 minutes.
  • Simmer pineapple juice in a saucepan over low heat until it is reduced to 1/2 cup. Cool.
  • Beat egg yolks into pineapple juice. Stir in gelatin and 1/2 cup sugar.
  • Place pineapple mixture in the top of a double boiler. Cook for 10 minutes, stirring often.
  • Remove from heat. Stir in salt and orange peel.
  • Chill until mixture thickens, but do not let it set. It usually takes about 45 minutes.
  • Beat egg whites until frothy, then gradually add 1/4 cup sugar while continuing to heat. Beat until stiff peaks form.
  • Fold in whipped cream.
  • Fold egg white mixture into pineapple mixture, and spoon filling into cool pie shell. Chill.
  • Garnish with 6 pineapple flowers made by arranging 5 pineapple tidbits around a maraschino cherry center.

This is a light chiffon pie my grandmother used to make. It calls for strawberries, but she often substituted crushed pineapple, raspberries, or any frozen berries.

1 (.25 ounce) package unflavored gelatin
½ cup cold water
⅔ cup white sugar
1 cup mashed strawberries
3 egg whites
¼ teaspoon cream of tartar
⅓ cup white sugar
½ cup heavy whipping cream
1 (9 inch) pie crust, baked

Steps:

  • Sprinkle the gelatin over the cold water and set aside to soften for 5 minutes.
  • Combine 2/3 cup sugar, the rehydrated gelatin, and the mashed fruit in a saucepan. Cook to a full rolling boil, stirring constantly. Immediately remove the pan from the heat and set the bottom of the pan in cold water; cool just until the mixture mounds slightly when dropped from a spoon.
  • Combine the egg whites, cream of tartar, and 1/3 cup sugar in a heat-proof mixing bowl. Whisk the mixture slightly, just to break up the egg whites. Set the bowl over a pot of simmering water on the stove. Heat the mixture, whisking constantly, until the egg white mixture is hot to the touch and has reached 145 degrees F (63 degrees C) on an instant-read thermometer. Immediately remove the bowl from the heat and whip with an electric mixer until the meringue forms medium-stiff glossy peaks.
  • Use a whisk or spatula to fold the fruit mixture into the meringue. Meanwhile, whip the cream in a cold bowl until medium-stiff peaks form.
  • The filling mixture should be no warmer than room temperature when you add the whipped cream. Add one third of the whipped cream into the filling mixture, mixing gently until combined. Fold in the remaining whipped cream and pile the filling into the cooled baked pie shell. Chill several hours until set.
