INDIVIDUAL BERRY BREAKFAST SOUFFLES
This recipe came from Schwan's - it originally called for strawberries but I think its better with other berries.

Steps:
- Preheat oven to 375°F Lightly spray a muffin tin with cooking oil.
- Beat together eggs, water and salt. Fill 8 tins 2/3 full with egg mixture.
- Top egg mixture with cream cheese, brown sugar and half of the berries.
- Bake 15-18 minutes or until brown sugar melts and eggs have set.
- Remove from tins, dust with confectioner's sugar and top with remaining berries.

BACON BREAKFAST SOUFFLES
This recipe comes from a Pillsbury recipe card book. They are pretty easy to whip up. The original recipe says to make these in a Texas sized muffin tin but I don't have one so I used my smaller ramekins instead. It worked out just fine.

Steps:
- Heat oven to 375.
- Lightly grease 4 Texas muffin cups.
- Separate crescent rolls into 4 rectangles.
- Lightly press or roll each into 6in squares.
- Press 1 square into each of the greased muffin cups.
- Fold over edges and crimp (like a pie crust).
- Set aside.
- In a medium bowl, beat eggs, whipping cream, and pepper until blended.
- Set aside.
- In a 10in skillet over medium heat, melt butter.
- Cook bell pepper in butter 1-2 minutes until just tender.
- Pour egg mixture into skillet.
- Scramble eggs until about half are cooked through.
- Immediately remove from heat.
- Stir in half of the bacon and cheese.
- Working quickly, spoon partially set eggs into muffin cups.
- Top with remaining bacon and cheese.
- Bake 17 minutes or until golden brown.
- Cool 5 minutes.
- Carefully remove souffles from cups.
INDIVIDUAL BLACKBERRY SOUFFLES
A rich, yet still light dessert to make Valentine's Day dinner, or any meal extra special. It is important that eggs are at room temperature for an hour or 2 so that they beat up to a higher volume. This can be made in any size ramekin or even a microwave coffee mug, the important thing is that the vessel is filled 3/4 full. Don't worry if the souffle falls, it is still delicious, just a little denser.

- Preheat oven to 400 degrees F. Butter 6 8 ounce ramekins or a 2 quart souffle dish, then sprinkle with about 1/4 cup sugar.
- Place blackberries in a food processor or blender and pulse until pureed. Squeeze through a sieve or strainer to extract juice, discard solids. Add enough water so that you have 2 cups liquid. Add 1/2 cup sugar to juice and heat in a medium saucepan over medium high heat until boiling; remove from heat.
- Melt butter in another large saucepan over medium heat. Add flour and whisk thoroughly. Slowly pour hot juice mixture into flour mixture while whisking vigorously. Cook 1 minute, remove from heat. Whisk in egg yolks, then Chambord.
- In a clean, dry bowl, beat egg whites with a mixer until frothy. Gradually add remaining 1/2 cup sugar until soft peaks are fomed. Stir 1 cup of the egg whites into blackberry mixture. Fold remaining egg whites into blackberry mixture.
- Spoon into ramekins or souffle dish making sure to fill only 3/4 full. Bake 20 to 25 minutes for ramekins or 30 to 40 minutes for large souffle. Carefully remove from oven once it has risen. Serve immediately.

Steps:
- Heat fruit, 5 oz sugar and water till sugar is dissolved. Place in blender and puree. Strain through cheese cloth and place back on the stove. Thicken with cornstarch and water. Remove from heat, cool.
- Beat egg whites to soft peaks, then slowly add 2 oz of sugar, beat till stiff. Add puree by folding.
- Place in cooking spray and sugar coated ramekins
- Place in 400 degree pre-heated oven for 15-20 minutes (time will vary by ramekin size) or until toothpick comes out clean.
- Remove from oven, garnish with fruit you make soufflé with and serve right away.

- Preheat oven to 350º. Grease 4 8-ounce ramekins with butter, then dust with sugar. Set 4-5 raspberries in the bottom of each ramekin if desired. Set aside.
- Make fruit puree by heating the 2 cups of raspberries, 3/4 cup of sugar and 1 tablespoon of butter in small saucepan. Cook over medium heat, stirring occasionally, for about 10 minutes till sugar is dissolved. Remove from heat, cool slightly, then strain to remove raspberry seeds. Whisk in egg yolks.
- In a clean, grease free bowl, beat the egg whites and cream of tartar to soft peaks. Fold one third of whipped whites into the raspberry puree to lighten it. Then gently fold the rest of the whites into the puree. Spoon into prepared ramekins and place ramekins on cookie sheet. Bake in the middle of the oven for about 20 minutes. They should puff over the rim and have a slight jiggle in the center.
