RUSTIC APRICOT PIE

My husband helped me pick the apricots off the tree when we made this pie. We had the best time together because we knew there would be a delicious pie at the end. It takes us back to 1800's when people ate what they grew. This pie is not as sweet as you might think. It is tart with a good texture. Serve with vanilla ice cream.

6 cups sliced fresh apricots
1 lemon, cut in half
1 cup white sugar
1 cup brown sugar
½ cup all-purpose flour
2 tablespoons ground cinnamon
1 pastry for a 9-inch double crust pie
1 egg, beaten
1 pinch white sugar, or more to taste
1 pinch ground cinnamon, or more to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place apricots in a large bowl. Squeeze lemon halves over apricots. Gently mix 1 cup white sugar, brown sugar, flour, and 2 tablespoons cinnamon into apricots to coat.
  • Line a 9-inch pie dish with 1 pie pastry. Spread apricot filling into shell. Roll remaining pastry onto a work surface; cut into about 1/2-inch-wide strips for a lattice crust. Cover apricot filling with pie dough strips creating a lattice pattern; seal top crust pieces to bottom crust edges and crimp into a fluted pattern. Brush egg white over top crust and sprinkle with a pinch of white sugar and cinnamon. Cover fluted crust edges loosely with aluminum foil.
  • Bake in the preheated oven until filling is bubbling and crust is golden brown, 45 to 55 minutes. Remove pie from oven and cool.

1 16-ounce can unpeeled apricot halves in heavy syrup, well drained, syrup reserved
1 cup diced dried apricots (about 5 ounces)
3/4 cup sugar
1/4 cup cornstarch
2 tablespoons frozen pineapple juice concentrate, thawed
1 tablespoon fresh lemon juice
4 cups 1/2-inch pieces fresh peeled cored pineapple
1/2 cup cranberries
2 tablespoons (1/4 stick) unsalted butter
For crust
2Easy Pastry Dough disks
1 egg, beaten to blend (for glaze)

Steps:

  • Make filling:
  • Bring reserved apricot syrup and dried apricots to boil in heavy small saucepan. Remove from heat. Let stand until apricots soften, about 10 minutes. Drain apricots; discard syrup.
  • Stir sugar, cornstarch, pineapple juice and lemon juice in heavy medium saucepan until blended and smooth. Mix in pineapple. Let stand until juices form, about 15 minutes. Cook over medium heat until mixture boils and is very thick, stirring often, about 8 minutes. Remove from heat. Mix in cranberries, butter and dried apricots. Cool completely. (Can be made 8 hours ahead; let stand at room temperature.) Gently mix in canned apricots.
  • Make crust:
  • Position rack in lowest third of oven and preheat to 400°F. Roll out 1 dough disk on floured surface to 13-inch round. Transfer to 9-inch-diameter glass pie dish. Fold overhang under.
  • Roll out second dough disk on floured surface to 13-inch round. Cut into 1/2-inch-wide strips. Brush inside and top edge of crust with glaze. Spoon filling into crust. Arrange 7 pastry strips across top of pie, spacing 1/2 inch apart; brush with glaze. Arrange 7 more strips atop pie in opposite direction. Tuck ends of pastry strips under crust at edge; press to seal. Crimp edge. Brush lattice and edge with glaze.
  • Bake until lattice is golden and filling starts to bubble, about 45 minutes. Transfer to rack; cool completely. (Can be made 1 day ahead. Let stand at room temperature.)

6 cups cranberries
24 dried apricots, quartered
2 1/2 cups granulated sugar
1 1/4 cups water
2/3 cup cranberry liqueur
1 egg
2 teaspoons water
1/4 cup slivered almonds

Steps:

  • Prepare or buy pie crust for 2-crust 9 1/2" deep dish pie.
  • Put cranberries, apricots, sugar & water in a saucepan, & over medium heat bring to boil, cooking 15 minutes & stirring occasionally.
  • Add liqueur & simmer another 15 minutes.
  • Preheat oven to 375 degrees F.
  • Line pie plate with one crust & cut the 2nd crust into 1" strips for lattice top.
  • Fill pie shell with cranberry mixture, then add the lattice top.
  • For glaze, beat egg & water together.
  • Sprinkle top of pie with almonds, & THEN brush lattice top with egg mixture.
  • Bake 45 minutes, until top is golden & filling is bubbling. Be careful not to burn or over-brown the edges.
  • Cool & serve at room temperature.

3/4 teaspoon salt
1/2 cup cold unsalted butter, cubed
1/3 cup cold shortening
5 to 7 tablespoons ice water
FILLING:
1/2 cup dried currants or raisins
2 tablespoons dark rum or water
1 cup fresh or frozen cranberries, divided
3/4 cup sugar, divided
6 medium baking apples, such as Fuji or Braeburn (about 2 pounds), peeled and cut into 1/4-inch slices
2 tablespoons quick-cooking tapioca
1 tablespoon lemon juice
2 teaspoons grated lemon zest
1/2 teaspoon ground cinnamon
EGG WASH:
2 teaspoons sugar
Dash ground cinnamon
1 large egg
1 tablespoon 2% milk or heavy whipping cream

Steps:

  • In a small bowl, mix the flour, sugar and salt; cut in butter and shortening until crumbly. Gradually add water, tossing with a fork until dough holds together when pressed. Divide dough in half. Shape each half into a disk; wrap. Refrigerate for 30 minutes or overnight., In a small bowl, combine currants and rum; let stand for 20 minutes., Place 3/4 cup cranberries and 1/4 cup sugar in a food processor; pulse until cranberries are coarsely chopped. Transfer to a large bowl. Add the apples, tapioca, lemon juice, lemon zest, cinnamon, remaining sugar and currant mixture; toss to combine. Let stand for 15 minutes., On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim pastry to 1/2 in. beyond rim of plate. Add filling., Roll remaining dough to a 1/8-in.-thick circle; cut into 1/2-in.-wide strips. Arrange over filling in a lattice pattern. 1-1/2 cups sugar, divided
3/4 cup butter, softened

1-3/4 cups sweetened shredded coconut
3/4 cup finely chopped walnuts

Steps:

  • In a large saucepan, bring the pineapple and apricots to a boil. Reduce heat; cover and simmer for 20 minutes, stirring occasionally. Stir in 1/2 cup sugar. Simmer, uncovered, for 5 minutes., Meanwhile, in a large bowl, cream butter and remaining sugar until light and fluffy. Combine the flour, baking soda and salt; gradually add to creamed mixture. 1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt (optional)
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon lemon juice
pastry for a double-crust 9-inch pie

Steps:

  • Combine crushed pineapple, sugar, cornstarch and salt in saucepan.
  • Cook, stirring, until thickened and clear.
  • Stir in butter and lemon juice.
  • Cool slightly.
  • Pour filling into unbaked 9-inch pastry shell.
  • Cut remaining pastry into 1-inch wide strips for lattice top.
  • Weave strips crisscross over pie to make lattice top.
