This came from a ladies group that met once a month where everyone brought their favorite dish and worked the afternoon on fund raising projects. It has since become a favorite dish for Sunday dinners, and potlucks at our house.

2 (10 ounce) packages chopped frozen broccoli
6 tablespoons butter
1/2 lb Velveeta cheese
1 (1 lb) package Ritz crackers or 35 Ritz crackers
2 drops Worcestershire sauce

Steps:

  • cook broccoli until it comes apart and color is nice and green, drain.
  • Arrange in a 9x9 or 8x8 greased pan.
  • Top with cubed cheese.
  • Melt the butter, add a couple drops of worcestershire sauce, crush the ritz crackers and add.
  • Sprinkle over the casserole.
  • Bake 325- 45min.

On the day before Thanksgiving I got a frantic call from my best friend. She needed Paula Deen's Broccoli Casserole recipe! I looked on Zaar and couldn't find it so I am posting it now. She says it is the BEST broccoli casserole. I have to take her word for it since I haven't made it.

2 (10 ounce) packages frozen chopped broccoli, cooked and drained
1 cup mayonnaise
1 cup sharp cheddar cheese, grated
1 (10 3/4 ounce) can condensed cream of mushroom soup
2 eggs, light beaten
2 cups crackers, crushed
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°F
  • Spray a 13 x 9 inch baking dish with cooking spray.
  • In a large bowl, combine broccoli, mayonnaise, cheese, soup and eggs.
  • Mix well.
  • Place the mixture in pan.
  • Top with crushed crackers and pour the melted butter evenly over crackers.
  • Bake for 35 minutes or until set and browned.

1/4 cup chopped onion

1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 lb Velveeta cheese
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 cup grated cheddar cheese

Steps:

  • Preheat the oven to 350°F
  • Butter a 9 by 13-inch casserole.
  • Steam broccoli until tender, about 10 minutes.
  • In the meantime, melt the butter in a medium skillet over medium heat and sauté the celery, mushrooms, and onion until softened, about 10 minutes; drain.
  • Combine the broccoli and the cooked vegetables in a bowl.
  • Heat the soup and Velveeta cheese in a saucepan over low heat until the cheese melts. Pour it over the broccoli mixture.
  • Add the garlic salt and pepper and combine.
  • Put it in the buttered casserole dish and bake for 20 to 25 minutes. Sprinkle the top with the grated cheddar the last 5 minutes of baking.

  • Start by preheating your oven to 375 degrees F.
  • Next, you want to mix together the chicken soup, sour cream, and 1/2 cup chicken broth. Then add the shredded chicken and vegetables. Spread the mixture in the bottom of a 2.5-quart casserole dish.

1 cup mayonnaise
1 cup sour cream
1 cup grated sharp cheddar cheese
1 tablespoon fresh lemon juice
1 teaspoon curry powder
1/2 cup dry white wine
1/2 cup freshly grated Parmesan cheese
1/2 cup soft breadcrumbs
2 tablespoons melted butter
to taste salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 °F.
  • Remove the outer wrappers from the boxes of broccoli. Open one end of each box. Microwave on full power for 2 minutes, until thawed. Drain the broccoli and put into a 11X7 casserole dish that has been prepared with a non stick cooking spray. Top with shredded chicken.
  • In a medium bowl, combine the soup, mayonnaise, sour cream, cheddar cheese, lemon juice, curry powder, salt and pepper to taste, and wine. Whisk together to make a sauce. Pour the sauce over the broccoli and chicken. Mix well with a spatula.
  • Pat down evenly and smooth with a spatula. In a small mixing bowl, stir together the Parmesan cheese, bread crumbs and butter and sprinkle over the top.
  • Bake for about 30-45 minutes.
  • Cook's Note: Try topping with cheddar or gruyere cheese.

Then cover the pot and put it on the stovetop over med-high heat for 5-8 minutes until the broccoli is bright green and tender (poke with a fork to check tenderness). I usually stir the broccoli once quickly while it’s steaming and then replace the lid. Drain the broccoli completely and transfer it to a 9x13 baking dish. Spread evenly throughout the dish and set aside.
  • Pre-heat the oven to 350. In a medium saucepan, bring the butter over medium-low heat until melted. Add the flour a little at a time, whisking it into the butter until combined. Add the milk a little bit at a time, whisking it into the flour mixture until smooth and well combined. Turn the heat up to medium for a few minutes until the milk is warmed. Add the salt, pepper, mustard powder and 6 ounces of the shredded cheese (reserve 2 oz for topping) and whisk the mixture together. Continue to heat for another 3-5 minutes, whisking periodically, until the cheese is melted into the sauce and sauce has thickened.
  • Pour the cheese sauce over top of the broccoli in the baking dish, making sure broccoli is evenly coated. Sprinkle the remaining cheese over the top. Place in the oven and bake for 20 minutes until cheese is melted and the dish is heated through. Allow a few minutes to cool before serving.
