Ham and Broccoli Bake image

This quick, week-night dinner is a nice alternative to mac and cheese with ham. It comes together easily and is comforting and filling.

Provided by mrs.embee

Categories     Main Dish Recipes     Pork     Ham

Time 1h

Yield 6

Number Of Ingredients 8

14 ounces whole wheat rotini pasta
1 (10 ounce) package frozen broccoli
1 tablespoon olive oil
2 cups diced fully cooked ham
1 (15 ounce) jar Alfredo sauce
½ cup 2% milk
ground black pepper to taste
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil; cook the pasta in the boiling water, stirring occasionally, until tender but not mushy, about 10 minutes. Drain.
  • Thaw the broccoli in a microwave oven until you can break it apart into small pieces.
  • Heat the olive oil in a large skillet over medium heat; cook and stir the diced ham in the hot oil until the edges start to brown, about 10 minutes. Stir in the broccoli and cook and stir until any excess water has cooked away and the ham and broccoli are hot. Pour in the jar of Alfredo sauce and the milk; stir to blend, sprinkle with pepper, and add the cooked pasta. Stir everything together to coat the pasta with sauce and bring to a simmer.
  • Spread the bubbling pasta mixture into the prepared baking dish, top with shredded Colby-Monterey jack cheese, and bake in the preheated oven until the casserole is hot and the cheese is melted and starting to brown, about 30 minutes.

HAM CASSEROLE WITH BROCCOLI AND RICE

Ham Casserole with Broccoli and Rice image

This Ham Casserole is loaded with cheesy, creamy rice and perfectly cooked broccoli. This easy make-ahead dinner can be prepared 2 days ahead or as a one pot meal!

Provided by Stephanie

Categories     Main Course

Time 1h

Number Of Ingredients 14

2 Tablespoons unsalted butter
½ cup yellow onion (finely diced)
1 Tablespoon olive oil
2 1/2 cups chicken broth (low sodium)
1 ¼ cup white long grain rice (uncooked)
2 cups cooked ham (diced)
2 cups broccoli florets
10.75 oz. cream of chicken soup
½ cup sour cream
¾ cup milk
2 cups shredded cheddar cheese (separated)
Salt/Pepper (optional)
1 cup Ritz Crackers (crushed into crumbs)
2 Tablespoons butter (melted)

Steps:

  • Note: This recipe is designed to allow you to prepare all of the casserole ingredients in one pot before transferring to a casserole dish for baking. Before you begin, refer to your rice package for the amount of liquid (we'll use chicken broth) and cooking time. If preferred, cook the rice separately and skip the broth ingredient. You'll need 3 + 3/4 cups of cooked rice to combine with the other casserole ingredients. I use white long grain rice and the cooking times below work perfectly.
  • Preheat the oven to 350 degrees.
  • Melt the 2 Tablespoons butter in a large saucepan over medium heat.
  • Add the diced onions and cook for 5 minutes, until softened.
  • Add the chicken broth, olive oil, and rice to the pot and bring to a boil, then reduce heat to a simmer.
  • Cover tightly and cook for 7 minutes.
  • Add the broccoli, replace the cover, cook for 8 more minutes. Refrain from stirring.
  • Turn off heat, leave the cover on. Let the rice stand for 10 minutes. Any rice on the bottom of the pot will release during this time.
  • Add the diced ham, condensed soup, sour cream, milk, and ONE cup of the cheddar cheese. Stir until well-combined.
  • Spread into a lightly greased 9 x 13 casserole dish.
  • Top with remaining cup of cheddar cheese.
  • Cover and bake for 15 minutes.
  • Combine the Ritz cracker crumbs and butter. Spread over the top of the casserole and bake, uncovered, for 10 additional minutes.
  • Let the casserole sit for 5 minutes prior to serving.

HAM AND BROCCOLI QUICHE

Ham and Broccoli Quiche image

Perfect for a main dish for dinner, or the centerpiece of a great brunch, this quiche uses cooked ham, broccoli, cheese, seasonings, and fresh chives to satisfy a taste for "real food"! Serve with a salad and crusty bread for dinner, or fruit and a buttery croissant for a weekend brunch or breakfast.

Provided by Bibi

Categories     100+ Breakfast and Brunch Recipes     Eggs

Time 1h45m

Yield 8

Number Of Ingredients 10

1 (9 inch) pie crust
1 ½ cups fresh broccoli, chopped
4 large eggs
1 ⅓ cups whole milk
½ teaspoon kosher salt, or to taste
⅛ teaspoon ground nutmeg
freshly ground black pepper to taste
½ cup diced cooked ham
½ cup grated Gruyere cheese
2 tablespoons chopped fresh chives

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Lightly flour the bottom of a 9-inch pie or quiche pan and fit crust into the pan, all the way up to the edge. Lightly prick the bottom and sides of the pastry, 1 1/2 inches apart.
  • Cut parchment paper to fit the bottom of the pan, place parchment on the pastry, and put pie weights or dried beans on top of the parchment.
  • Bake on the center rack of the preheated oven for 10 minutes. Place pan on a wire rack, remove the weights and the paper, and allow to cool completely, about 30 minutes.
  • Meanwhile, fill a large bowl with ice and cold water. Bring a large pot of lightly salted water to a boil. Add broccoli and cook uncovered until softened, about 5 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain.
  • Reduce oven temperature to 375 degrees F (190 degrees C).
  • Break eggs into a large bowl and whisk until yolks and whites are combined. Add milk, salt, nutmeg, and pepper, whisking until well combined.
  • Sprinkle broccoli, ham, Gruyere cheese, and chives evenly over the crust. Pour egg mixture over the filling.
  • Set quiche on a baking sheet and place on the center rack of the oven. Bake until egg mixture is set, 45 to 50 minutes. Insert a knife in the center of the quiche to test for doneness; quiche is done when the knife comes out clean. Pace pan on a wire rack to cool for about 10 minutes. Serve warm.

16 AMAZING SIDE DISHES FOR YOU TO SERVE WITH BEEF STROGANOFF

From kitchensubstitute.com
  • Rice. Rice is one of the most versatile sides you can choose from. You don’t have to get fancy with rice as a side dish for beef stroganoff to make it stand out, though.
  • Potatoes. Much like rice, potatoes have nearly endless possibilities. A hearty scoop of mashed potatoes topped with stew, a nice side of crispy roasted wedges, or a baked potato would work perfectly.
  • Bread. The flavorful nature of beef stroganoff means you don’t necessarily need to spend a lot of time preparing a whole side dish. A nice loaf of crusty bread spread with butter makes for the perfect no-fuss side dish.
  • Egg Noodles. One of the most common side dishes for beef stroganoff is egg noodles. They’re simple, hearty, and won’t compromise the flavor of your dish.
  • Gnocchi. While it may seem strange, a nice serving of potato gnocchi will go great with your beef stroganoff. You can either boil your gnocchi and toss them with some salt and pepper or pan-fry them with a bit of butter.
  • Polenta. Polenta, can be a great choice as an accompaniment to beef stroganoff. Most people think it is made with corn flour, however, it’s a hearty dish made with cornmeal.
  • Cauliflower. If you want to avoid starchy potatoes but still want the beef-and-potatoes meal, try mashing up some cauliflower. It’s an excellent substitute for mashed potatoes, especially if you’re aiming for a lower-carb option.
  • Side Salad. A side salad is an excellent option because it’s delicious, and you can throw it together quickly. Toss with a bit of olive oil, salt, and pepper to keep it low-calorie.
  • Olivye. This traditional Russian salad combines potatoes, pickles, carrots, eggs, ham, and other ingredients to make a hearty salad that can act as a meal on its own.
  • Cabbage. Stewed red cabbage is a flavorful side dish that can add a pretty burst of color to your stroganoff. Cabbage can be braised with sugar, vinegar, and apples or chopped into a shredded veggie salad.
