CORNMEAL PANCAKES WITH VANILLA AND PINE NUTS

Steps:
- Heat the oven to 200 degrees. Combine the cornmeal, salt and 1 1/2 cups boiling water in a bowl and let it sit until the cornmeal absorbs the water and softens, 5 to 10 minutes.
- Stir in the milk, a little at a time, until the batter is spreadable but still thick. Stir in 2 tablespoons oil, the vanilla and the pine nuts.
- Put a large skillet or griddle over medium heat. When a few drops of water dance on its surface, add a thin film of oil and let it become hot. Spoon out the batter, making any size pancakes you like. Cook until bubbles form on the top and burst and the underside is golden brown, 3 to 5 minutes; turn and cook on the other side until golden. You may have to rotate the cakes to cook them evenly, depending on the heat source and pan. As they finish, transfer them to a plate in the oven while you cook the remaining batter. Serve with honey.

BARLEY AND PINE NUT CASSEROLE
This can be a great meatless meal or it will do nicely as a side dish to any meat. I recommend pearl barley (it is the most common varity) as it cooks up better in a crock pot without becoming gummy and sticky.

Steps:
- Mix all the ingredients except green onions and nuts on a 4-6 qt crockpot or slow cooker.
- Cover and cook on low heat for 6 to 8 hours or until barley is tender.
- Stir in green onions and pine nuts.
- *Totoast pine nuts, bake uncovered in an ungreased shallow pan at 350 degrees for 10 minutes, stirring occasionally until golden brown or cook in an ungreased heavey skillet over medium-low heat 5 to 7 minutes, stirring frequently until browning begins and them stirring constantly until golden brown.

HONEY & PINE NUT COFFEE CAKE

Steps:
- Preheat oven to 180°C/350°F/Gas 4.
- Grease a 8 inch round cake tin or spring form, if using cake tin it helps to line it with baking paper as well.
- In a small sauce pan, melt the sugar, honey and butter together over a medium heat, boil for 1 minute and remove from heat.
- Set aside and allow to cool until just warm.
- Place the pine nuts onto a baking tray and roast for approx 8 minutes, alternatively roast in a dry non stick frying pan on top of the hob, stirring regularly.
- Add the pine nuts to the honey mixture.
- Stir in the eggs and flour.
- Pour the batter into the baking tin and bake for approx 50 minutes.
- The cake is done when the top springs back when pressed lightly.
- Allow to cool for 10 minutes before removing from pan.
- When cold dust with confectioners suger and serve.

PECAN AND PINE NUT PIE
A satisfying twist for an old favorite--my DH particularly likes it and now requests it over traditional recipes. It is from the November 2002 issue of "Bon Appetit", Penny and Armin Rembe's Thanksgiving celebration story. Their recipe calls for 2/3 cup pine nuts and 1 cup pecans; feel free to use those measurements, but I've realized that pine nuts really do have a stronger flavor than pecans, so I've lowered the pine nut amount to 1/2 cup and upped the pecans to 1 1/4 cups. Either way, you're bound to enjoy it.

- Whisk the sugar, 4 large eggs, two corn syrups, flour, and salt in medium bowl until smooth.
- Whisk in melted butter, then stir in all nuts.
- Brush bottom and sides of crust (not edge) with egg white.
- Pour in filling.
- Bake pie at 350 degrees until filling is set and crust is golden, about 1 hour.
- Cool on rack; let stand at room temperature.
- Serve with whipped cream.
