4 cups all-purpose flour
½ teaspoon salt
1 ½ teaspoons baking soda
1 cup unsalted butter
2 cups brown sugar
2 eggs
1 (20 ounce) can crushed pineapple, drained
1 ½ teaspoons rum flavored extract
1 ½ cups flaked coconut, toasted
4 cups white chocolate chips
2 cups chopped and toasted macadamia nuts
3 drops pina colada candy oil

Steps:

  • Sift together the flour, salt, and baking soda, set aside. In a large bowl, cream together the butter and brown sugar. Stir in the eggs, pina colada oil, and rum extract, mix well. Stir in the dry ingredients until just combined. Using a large wooden spoon, stir in the drained pineapple, coconut, white chocolate chips, and nuts. Cover bowl, and refrigerate for 1 to 2 hours, until firm.
  • Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper.
  • Roll dough into golf ball sized balls, place 2 1/2 inches apart onto the prepared cookie sheets. Bake for 15 to 20 minutes in the preheated oven, until golden brown. Remove from baking sheets to cool on wire racks.

1 (18.25 ounce) package pineapple flavored cake mix
½ cup butter, softened
2 eggs
2 teaspoons rum flavored extract
1 cup flaked coconut
1 ½ tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut the softened margarine or butter into the cake mix. Use a fork mash them together until they are well combined and the mixture resembles coarse crumbs. Beat in the eggs, milk and rum extract and mix well. Stir in the flaked coconut until combined.
  • Drop by teaspoonfuls onto an ungreased baking sheet and bake at 350 degrees F (175 degrees C) for 12 to 15 minutes.

2 cups thawed COOL WHIP Whipped Topping

Steps:

  • Spoon cookie crumbs into 12 paper-lined muffin cups.
  • Beat cream cheese spread and sugar in large bowl with whisk until blended. Add pineapple and 3/4 cup coconut; mix well. Gently stir in COOL WHIP. Spoon into prepared cups; top with remaining coconut.
  • Freeze 4 hours or until firm. Let stand at room temperature 10 min. before serving to soften slightly.

1 cup cream of coconut
1 teaspoon rum flavored extract

½ cup maraschino cherries, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread coconut evenly onto a baking sheet and toast in preheated oven 5 minutes, until golden brown. Remove and set aside.
  • In a medium bowl, mix together vanilla wafer crumbs and melted butter or margarine. Press firmly into bottom and sides of a 9 inch pie pan.
  • In a large mixing bowl, beat together cream cheese and coconut cream until fluffy. Mix in rum extract. Fold in whipped topping, pineapple, cherries, and nuts. Spread mixture into crust. Sprinkle with toasted coconut. Chill several hours before serving.

1 (18.25-ounce) box pineapple cake mix
1/2 cup (1 stick) unsalted butter, cut into chunks
2 large eggs, lightly beaten
1 cup milk
2 tablespoons dark rum or rum extract
1 cup flaked coconut

Steps:

  • Preheat the oven to 325 degrees F.
  • Put the cake mix in a mixing bowl and add the butter. Using a pastry blender or 2 forks, cut in the butter until the mixture resembles coarse crumbs. Add the eggs, milk and rum. Beat with a wooden spoon until you form a smooth batter. Fold in coconut until evenly distributed.
  • Spray 2 madeleine molds with nonstick cooking spray. Using a tablespoon, drop the batter into the molds filling halfway. If you don't have madeleine molds, you may drop the batter on an ungreased baking pan. Bake for 12 to 15 minutes, until the cookies are nicely browned. Let cool in the pan then turn out onto a platter. Repeat method with remaining batter.

150ml pineapple juice
50ml coconut milk
25ml lime juice
ice
cherry , to garnish
100g dark brown muscovado sugar
1 pineapple , a few strips of skin, plus leaves to garnish
5 black peppercorns
5 cloves
1 cinnamon stick

Steps:

  • To make a mock rum syrup, put the dark brown muscovado sugar and 200ml water in a saucepan, stir well and heat gently until the sugar has dissolved. Add a few strips of skin from the pineapple, add the black peppercorns, cloves and a cinnamon stick, then bring to the boil. Turn off the heat and leave to infuse until cold. Strain into a jug and set aside in the fridge until needed. Will keep for up to three days.
  • Pour the pineapple juice into a tall glass, and add the coconut milk and lime juice. Stir gently. Fill up the glass with a handful ice then slowly add 25ml of the syrup so it sinks to the bottom. Garnish with pineapple leaves and a tinned cherry.

  • In a big mixing bowl, place the softened cream cheese and butter; blend with an electric mixer set on med-high speed for 1-2 minutes, until blended and smooth.
  • Add in the egg yolk, pineapple juice, rum extract, and half of the cake mix; blend with an electric mixer set on med-high speed for 1-2 minutes, until blended and smooth.
  • Stir in the remaining cake mix and coconut with a wooden spoon until all dry ingredients are moistened.
