Here's an easy way to turn everyday green beans into a special side dish. Pimientos, Parmesan cheese and chicken broth add savory flavor and a dash of color.

2 pounds fresh green beans, cut into 2-inch pieces
1 can (14-1/2 ounces) chicken broth
1/2 cup chopped onion
1 jar (2 ounces) chopped pimientos, drained
1/2 teaspoon salt
1/8 to 1/4 teaspoon pepper
1/4 cup shredded Parmesan cheese

Steps:

  • In a large saucepan, bring beans, broth and onion to a boil. Reduce heat; cover and cook for 10-15 minutes or until crisp-tender. Drain. Stir in pimientos, salt and pepper. Sprinkle with Parmesan cheese.

1/2 cup pecan halves and pieces (2 ounces)
2 1/2 pounds green beans, trimmed
5 tablespoons unsalted butter
1/3 cup shallot, finely chopped (about 2 medium)
3 tablespoons packed light brown sugar
1 teaspoon kosher salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste

Steps:

  • Heat oven to 350°F with rack in middle.
  • Spread out pecans on a rimmed sheet pan and bake in oven until pale golden on inside, about 6 to 8 minutes. Cool and coarsely chop.
  • Have ready a colander submerged in a large bowl of ice water. Cook beans in a 6- to 8-quart pot of well-salted boiling water, uncovered, until just tender, 5 to 8 minutes. Using a large slotted spoon and/or tongs, transfer beans to colander in ice water to stop cooking, then drain well and dry on towels.
  • Heat butter in a 12- to 14-inch deep heavy skillet (preferably straight-sided) over moderately high heat until foam subsides, then add shallot and cook, stirring until pale golden, 2 to 3 minutes.
  • Reduce heat to medium and stir in sugar until almost dissolved, then cook pecans, stirring, 1 minute.
  • Add green beans, kosher salt, and pepper, and sauté beans, turning them with tongs, until heated through, 2 to 4 minutes. Transfer to a platter and serve.

A dish made from canned lima beans, pimientos and cheese was on our 1933 Thanksgiving menu. Now, we've kept the pimientos but opted for fresh green beans and a rich Cheddar sauce.

2 1/2 lb. green beans, trimmed and cut into 2-in. lengths
2 c. fresh or frozen corn kernels
4 tbsp. butter
3 tbsp. grated onion
5 tbsp. all-purpose flour
2 c. whole milk
12 oz. sharp Cheddar cheese, finely grated
2 jars (3-oz. each) chopped or sliced pimientos, drained
1 tbsp. hot pepper sauce (Tabasco)
2 tsp. Worcestershire sauce

Steps:

  • In 7-to 8-quart saucepot of salted boiling water, add green beans; cook 3 minutes or until just tender. Add corn; cook 1 minutes. Drain well; set aside.
  • In 6-quart saucepot, cook butter and onion on medium 3 minutes or until onion becomes translucent, stirring occasionally. Sprinkle flour over onion. Cook 1 minute, stirring. Slowly whisk in milk until smooth. Heat to simmering on high, whisking occasionally. Reduce heat to maintain simmer; cook 1 to 2 minutes or until thickened, stirring.
  • By handfuls, stir Cheddar into milk mixture until smooth. Stir in pimientos, hot pepper sauce, Worcestershire sauce, 1/4 teaspoon black pepper and 1/2 teaspoon salt. Add green beans and corn to cheese sauce, stirring until well coated. Transfer to serving dish.

You can use fresh or canned green beans, drained. Dressed up with the title ingredients or add slivers of water chestnuts right before serving.

4 -6 cups fresh green beans, ends snapped 2 inch lengths
1 -2 cup diced ham, fresh or 1 -2 cup cooked diced ham
1 tablespoon margarine or 1 tablespoon butter
3/4 cup chopped white onion
2 teaspoons diced pimentos
1 1/2 cups water
1/8 teaspoon celery seed
salt and pepper
1/2 cup slivered water chestnut (optional)

Steps:

  • In medium saucepan, add all ingredients except the salt and pepper.
  • Cook on medium low heat uncovered.
  • Stir with a spoon from time to time.
  • Gas stoves seem to be hotter than electric ones so watch that the liquid does not evaporate. When the beans are soft, sprinkle with salt and pepper to taste.
  • Toss a few times to mix. You may use salt substitute or Mrs. Dash Herb and Spice Mixture.
  • I serve with biscuits and mushroom gravy.
  • Note: If you use canned green beans, do not drain, add 3/4 cup water. Do not use the 1 1/2 cups of water. Add all of ingredients and cook until onion is soft.
  • Do not add salt, just pepper as the juice tends to be salty.
