2 pkg wrapped graham crackers from 16-ounce box
2 box (4-serving) packages instant sugar-free vanilla pudding/pie filling mix (dry)
3 c skim milk
4 oz frozen fat-free whipped topping, thawed
CHOCOLATE TOPPING (RECIPE FOLLOWS)
1/4 c cocoa
1/2 c sugar or splenda granulated to equal 1/2 cup
1/4 c skim milk
1 Tbsp vanilla extract
1 Tbsp butter

Steps:

  • 1. LAYER: Bottom of 9x13x2-inch baking dish with 1/3 graham crackers.
  • 2. IN: Medium mixing bowl, beat pudding mix with milk until it thickens. SET: Aside several minutes. FOLD: In whipped topping.
  • 3. SPREAD: Half of the pudding mixture over graham crackers. REPEAT: Layers, ending with graham crackers on top (three layers of graham crackers). DRIZZLE: With Chocolate Topping.
  • 4. CHOCOLATE TOPPING COMBINE: Cocoa, sugar, and milk in saucepan. BRING: To a boil 1 minute. REMOVE: From heat, add vanilla and butter. COOL: Slightly and pour over top graham cracker layer. REFRIGERATE: Until ready to serve. SERVE & ENJOY! **COVER: And refrigerate leftovers.

2 (3 ounce) packages instant vanilla pudding mix
3 cups milk
1 (8 ounce) container frozen whipped topping, thawed
1 (16 ounce) package chocolate graham crackers
¼ cup milk
⅓ cup unsweetened cocoa powder
1 cup white sugar
2 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine pudding mix and 3 cups milk; mix well. Fold in whipped topping and beat with mixer for 2 minutes.
  • In a buttered 9x13 inch baking dish, spread a layer of graham crackers on the bottom of the dish.
  • Spread 1/2 of the pudding mixture over crackers, then top with graham crackers. Spread remaining pudding over crackers; top second pudding layer with another layer of crackers.
  • To make topping: In a medium saucepan over medium-high heat, combine 1/4 cup milk, cocoa and sugar and allow to boil for 1 minute; remove from heat and add butter and vanilla. Mix well and cool.
  • Pour sauce over graham cracker layer and refrigerate until set; serve.

1/4 cup butter
1/2 cup all-purpose flour
2 eggs
VANILLA FILLING:
1-1/4 cups cold fat-free milk
1/4 teaspoon vanilla extract
1 package (1 ounce) sugar-free instant vanilla pudding mix
1 cup fat-free whipped topping
CHOCOLATE TOPPING:
1-1/2 cups cold fat-free milk
1 package (1.4 ounces) sugar-free instant chocolate pudding mix

Steps:

  • In a large saucepan, bring water and butter to a boil. Add flour all at once, stirring until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Transfer to a resealable plastic bag; seal., Cut a 1-in. hole in one corner of bag. 65 ml (1/4 cup) full-fat milk
65 ml (1/4 cup) water
40 g (1/3 cup) unsalted butter
1 tsp xylitol or sugar, (optional)
70 g (1/2 cup) plain flour ((or, even better, a 1/2 and 1/2 mix of strong bread flour and plain flour))
2 medium eggs, (beaten)
1 cup (250ml) double (heavy) cream ((you could use coconut cream if you prefer))
1 vanilla pod, (seeds scraped out)
1 tsp vanilla extract
2 tsp xylitol or a few drops of vanilla stevia (skip the extract if you use this), (optional)
50 g (1/4 cup) dark chocolate, (85-90% at least)
1 tbsp butter or coconut oil

Steps:

  • Preheat oven to 200C/400F/gas 6. Lightly grease 2 baking trays with a thin spread of butter.
  • Melt the milk, water, butter and xylitol in a saucepan over medium-high heat and then bring to the boil. Just as it starts to boil, take the saucepan off the heat and dump in all of the flour in one go. Mix it all together until combined, then return to the heat for 30 secs-1 min just to dry out the flour. Allow to cool for 5-10 mins.
  • Add the eggs, a little at a time, stirring until combined between each addition. The dough should be shiny and a bit wet, and it should break cleanly off a spoon if you hold it up.
  • Fill a piping bag fitted with a wide nozzle (or a disposable piping bag/freezer bag that has the end snipped off) and pipe 12-20 small eclairs (you could also pipe some (or all) as little ball shapes to make profiteroles if you prefer), depending on the size of the nozzle. Get a little water and dip your finger in it, then smooth the tops of the eclairs with a little water.
  • Bake in the preheated oven for about 15 mins, then prop the oven door open slightly with a wooden spoon to let it ventilate for another 5 mins. The eclairs should be puffed up, golden and hollow. Remove from the oven and allow to cool for a few mins, then pierce the bottom of each eclair with a skewer once or twice to allow the steam to escape. Allow to cool completely.
  • Once cool, whip the cream with the vanilla seeds, extract and sweetener, then fill a piping bag with the filling and make the small piercings on the base of the eclairs a bit bigger so you can pipe the filling through it. Alternatively, you can cut each eclair in half lengthways and pipe or spread the filling onto the bottom half then top with the other half.
  • Melt the chocolate and butter until completely melted, smooth and glossy, then dip the top of each eclair into the chocolate to cover the top half in a line of melted chocolate. Allow to cool until the chocolate hardens (I like to put them in the fridge for about 15 mins).

1 cup fat-free cool whip
1 1/2 cups cold nonfat milk
1 (1 1/2 ounce) package sugar-free instant chocolate pudding mix

Steps:

  • DOUGH: In a saucepan, bring water and butter to a boil and add flour all at once, stirring until a smooth ball forms.
  • Remove from the heat: let stand for 5 minutes and add eggs, one at a time, beating well after each addition: continue beating until mixture is smooth and shiny.
  • Transfer to a resealable plastic bag, seal, and cut a 1" hole in one corner of the bag.
  • Pipe eight 3 1/2" logs onto an ungreased baking sheet.
  • Bake at 450F for 10 minutes, reduce heat to 400F and bake 15-20 minutes longer or until golden brown.
  • Transfer to a wire rack and immediately put a slit in each to allow steam to escape; cool and carefully cut off tops.
  • Set tops aside and remove soft dough from the inside with a fork.
  • VANILLA FILLING: In a mixing bowl, beat milk, vanilla, and pudding on low speed for 2 minutes or until thickened, fold in whipped topping and set aside.
  • CHOCOLATE FROSTING: In another mixing bowl, beat milk and chocolate pudding for 2 minutes or until thickened.
  • Spoon vanilla filling into eclairs, replace tops and frost with chocolate topping.
  • Enjoy!

5 ounces bittersweet chocolate
2 ounces butter

Steps:

  • Pate a Choux: Preheat oven to 425 degrees F.
  • Bring salt, water, and butter to a boil. Add flour all at once and stir until it forms a film on the bottom of the pot. Cool mixture and add eggs 1 at a time until completely incorporated. Pipe 5 to 6 inch rods of the mixture onto a lightly greased sheet pan. Bake for 17 minutes. Turn oven down to 350 degrees for 15 more minutes.
  • Pastry Cream: Scald milk with 3/4-cup sugar and salt. Whisk yolks and remaining 3/4-cup sugar until pale and ribboning. Whisk in flour and cornstarch. Slowly, while whisking, pour in scalded milk. Return all to stove and stir with wooden spoon until thick and 1 or 2 bubbles form. Put mixture in a bowl and add vanilla. Cover with plastic wrap and refrigerate until set, about 1 hour.
  • Ganache: Melt chocolate and butter together over low heat, stirring constantly.
  • Using a paring knife, poke a hole into 1 end of each eclair shell. Put a small open tip on a pastry bag and fill bag with cream. Squirt cream into each shell until eclairs feel heavy. Dip top of each filled eclair into chocolate ganache. Serve cold or at room temperature.

These deliciously decadent chocolate eclairs filled with creamy vanilla custard are worth the effort. Make a batch of these classic French pastries

140g plain flour
pinch of sugar
125ml milk
100g butter
4 eggs
300ml milk
50g caster sugar
2 egg yolks
1 tsp vanilla extract
4 tsp plain flour
4 tsp cornflour
375ml double cream
100g plain chocolate
25g butter
1 tbsp icing sugar

Steps:

  • Start by making the custard filling. Heat the milk until almost boiling in a saucepan. Meanwhile, mix together the sugar, egg yolks and vanilla in a bowl, then stir in the flours, a couple of tsp at a time, to a smooth paste.
  • Gradually whisk in the hot milk, pour everything back into the saucepan and cook over a high heat, stirring constantly, for about 5 mins until thick - it will go alarmingly lumpy but don't worry, just keep stirring it vigorously with a wooden spoon until smooth
  • Lay a sheet of cling film directly on the custard surface, then cool and chill until you're ready to fill the buns.
  • To make the choux buns, heat the oven to 220C/200C fan/gas 7. Sift the flour with the sugar and a pinch of salt into a small bowl. Put the milk and butter into a medium saucepan with 125ml water and gently heat so the butter melts but the liquid doesn't bubble.
  • Once the butter has completely melted, increase the heat until the liquid comes to a fast rolling boil. Immediately turn off the heat, tip in the sifted flour and beat vigorously with a wooden spoon until you a have a smooth dough that comes away from the sides of the pan. Spread over a large dinner plate to cool to hand temperature.
  • Allow to cool for a few minutes, then gradually add the eggs, mixing well between each addition until the mixture reluctantly drops off the spoon. Don't add all the egg unless you need to.
  • Cut two large sheets of baking parchment. On each one draw two sets of 'track' lines with a 10cm gap - these will be your guidelines so your eclairs will all be roughly the same size. Use the paper to line two large baking sheets - penside down.
  • Spoon your choux mixture into a piping bag with a 1cm star or round wide nozzle, or into a disposable piping bag with a similar-size hole snipped off for piping. Pipe two rows of well-spaced, squashed 'S' shapes on each sheet between the guidelines. Bake, one tray at a time, on a high-ish shelf for 25 mins, reducing temperature to 200C/180C fan/gas 6 as soon as they go in the oven.
  • After 25 mins, poke a hole in the end of each bun, or using a small serrated knife, split down the middle and return to the oven, upside-down, to dry out for 5 mins until crisp and golden. Set aside to cool.
  • While the buns are cooling, finish your filling. Whisk the cream until thick, then use your electric whisk to beat the cooled, set custard until just smooth again. Fold in the cream. Spoon your filling into a piping bag - use a small nozzle if you're filling the buns through the holes you've pierced, or a large nozzle if you've split the buns in half. Carefully pipe the custard into each cooled bun - they should feel heavy once full.
  • To make the icing, melt 100g plain chocolate and 25g butter together in a heatproof bowl over a pan of barely simmering water. Once melted, remove from the heat and stir in 75ml double cream and 1 tbsp sifted icing sugar. Once cooled a little, spread over the tops of the buns and leave to cool.
