1 pound freshly grated extra-sharp Cheddar (about 4 cups)
1/4 cup mayonnaise
1/2 sweet onion, grated
One 4-ounce jar pimentos, drained and finely chopped
Dash of hot sauce
Coarse kosher salt and freshly ground black pepper
Crackers, for serving
Celery sticks, for serving

Steps:

  • Combine the cheese, mayonnaise and onions in a bowl. Stir until well combined. Add the pimentos and hot sauce. Season with salt and pepper. Serve with crackers and celery sticks.
  • Making ahead: The prepared cheese filling can be refrigerated in an airtight container for up to 2 weeks.

  • Puree 1/3 cup sliced pimientos (drained) in a blender or food processor until smooth. Transfer to a large bowl. Add 3 cups finely grated sharp cheddar and beat with a mixer until combined. Beat in 1/4 cup mayonnaise.

2 cups shredded extra-sharp Cheddar cheese
8 ounces cream cheese, softened
½ cup mayonnaise
¼ teaspoon garlic powder
¼ teaspoon ground cayenne pepper
¼ teaspoon onion powder
1 jalapeno pepper, seeded and minced
1 (4 ounce) jar diced pimento, drained
salt and black pepper to taste

Steps:

  • Place the Cheddar cheese, cream cheese, mayonnaise, garlic powder, cayenne pepper, onion powder, minced jalapeno, and pimento into the large bowl of a mixer. Beat at medium speed, with paddle if possible, until thoroughly combined. Season to taste with salt and black pepper.

World's Best Pimento cheese image

Never liked pimento cheese until we ate it at Papa Robin's, a now-defunct restaurant in Jasper, Arkansas. This is a recreation of their marvelous pimento cheese.

Number Of Ingredients 9

4 tablespoons mayonnaise
1 (3 ounce) package softened cream cheese
3 cloves garlic
5 sprigs fresh parsley
3 dashes Pickapeppa Sauce
3 dashes Tabasco sauce
1 cup pecans
1 (5 ounce) jar diced pimentos, and all juice
12 ounces extra-sharp cheddar cheese

Steps:

  • Puree till smooth in processor the mayo, cream cheese, garlic, parsley and sauces.
  • Turn into bowl.
  • now, in food processor, process just till coursely chopped, 1 cup pecans; add pecans and pimentos, with juice, to mayo mixture.
  • Now grate cheese in food processor Put into bowl with remaining ingredients.
  • Stir well to combine.
  • Let stand, refrigerated, at least 1 hour.
  • Even better the next day.

We Southerns love our pimento cheese sammies!! I can't remember where I got this recipe but I like it very much. It can be used on crackers as well as a filling on celery sticks.

1/2 c extra sharp white chedder cheese
3/4 c sharp chedder cheese
1 c monterey jack cheese
1/2 c mayo
1 tsp red wine vinegar
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp paprika
1 dash(es) hot sauce
black pepper to taste
4 oz pimento

Steps:

  • 1. mix well (I run mine through a blender for a few minutes) and serve as a filling for sandwiches or appetizer on crackers/celery sticks I always like my pimento cheese sammies toasted but up to each one how you want it.

8 sheets of frozen phyllo dough
6 ounces palmetto cheese, original, jalapeno or 6 ounces bacon
2 slices bacon, chopped
1/2 cup butter, melted

Steps:

  • Preheat oven to 350 degrees.
  • Take a sheet of phyllo and brush with melted butter.
  • Place another sheet on top and repeat until you have four sheets stacked up.
  • Cut phyllo sheets into small equal squares that will fit into the cups of a mini muffin pan. Press each square into the cups of a mini muffin pan, making the phyllo form into a cup shape.
  • Scoop a teaspoon of palmetto cheese into each mini phyllo cup.
  • Sprinkle with chopped bacon.
  • Bake for 10 minutes or until the pimento cheese has melted.
  • Serve immediately.
