½ a red onion
2 sprigs of fresh sage
1 slice of sourdough bread, (50g)
1 rasher of smoked higher-welfare streaky bacon
125 g slice of higher-welfare calves' liver

Steps:

  • Peel and very finely slice the red onion. Place in a large non-stick frying pan on a medium-high heat with 1 teaspoon of olive oil.
  • Reserving 2 nice leaves, pick, finely slice and add the rest of the sage. Cook for 5 minutes, tossing regularly.
  • Push the onions to one side, and add the bread and bacon to the pan. As soon as they crisp up, flip them over. Drizzle the soft, golden onions with a little red wine vinegar, toss with tongs, then move them on top of the bread, so they don't catch. Once the bacon is golden, move that on top of the onions.
  • Lightly season the liver, then add to the pan to sear for just 1 minute on each side, so it's golden on the outside, blushing in the middle.
  • Add the 2 reserved sage leaves alongside, with 1 teaspoon of olive oil to crisp them up, then serve.

RICH PORK PâTé



Rich pork pâté image

This rich pork pâté recipe has a wonderful meaty texture and is perfect alongside bread and chutney.

100g pig's liver
50g butter
1 large onion, finely chopped
2 garlic cloves, crushed
4 smoked bacon rashers
4 tbsp Madeira or port
8 fresh sage leaves, finely chopped
Large handful of fresh parsley, finely chopped
1 tsp cayenne pepper
25g fresh breadcrumbs
½ tsp ground white pepper
300g skinless pork belly, roughly chopped
25g unsalted pistachio kernels
4 bay leaves

Steps:

  • Preheat the oven to 180°C/fan160°C/gas 4. Run the liver under cold water, then trim, removing any tough membrane. Chop roughly. Heat half the butter in a pan and gently cook the onion and garlic for about 8 minutes until starting to soften. Transfer to a bowl. Heat the remaining butter and fry the liver and bacon for 5-6 minutes until golden. Set aside to cool.
  • Increase the heat and deglaze the pan: add the Madeira and bubble, stirring, until the pan residue is released. Tip into the bowl with the onion. Add the sage, parsley, cayenne, breadcrumbs, white pepper and a good pinch of salt. Mix well.
  • In a food processor, pulse the pork belly with the cooled liver and bacon until finely chopped, giving a textured but not too coarse pâté. Transfer to the mixing bowl and mix with the other ingredients. Fold through the pistachio kernels.
  • After testing the flavour, divide evenly among 4 x 200ml sterilised Kilner jars (see tips on sterilising, below), gently pressing down and smoothing over the top. Lay a bay leaf on top of each and clip the Kilner jars closed.
  • Put the Kilner jars in a deep roasting tin and pour in boiling water to come halfway up the jars' sides. Cook in the oven for about 1¼ hours until the pâté begins to shrink away from the sides of the jars. Remove from the roasting tin and leave to cool. Once cold, you can refrigerate the pâté for up to 1 week. Maturing it for a few days allows the flavours to mingle and develop. Remove the pâté from the fridge 15 minutes before serving, to allow it to reach room temperature.

Classic liver paté recipe with ground pork, calf, chicken, or pork liver, bacon and spices.

1 lb ground pork, or chopped pork shoulder
1 lb of liver - (chicken, calf's, or pig's), trimmed of connective tissue, diced
1 Tablespoons of cognac or brandy
1 Tablespoons of dry Madeira or sherry
1 cloves garlic
2 sprays of parsley
1/2 shallot or small white onion
1/4 teaspoon powdered ginger
1/8 teaspoon clove
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
1 teaspoon salt
1/4 teaspoon freshly ground pepper
Dash of Tabasco or cayenne
Sliced bacon - about 1/2 lb

Steps:

  • Grind the pork: Grind the pork through a meat grinder several times on a fine setting.
  • Process diced livers, cognac, Madeira, garlic, parsley, shallots, spices in a food processor: Place in a blender cognac or brandy, Madeira or sherry, garlic, parsley, shallot or onion, ginger, clove, cinnamon, nutmeg. Add diced livers and blend a cupful at a time. Season with salt and pepper, adding a dash of Tabasco or cayenne.
  • Mix the ground pork with the blended liver
  • Layer a terrine dish with bacon and pate mixture: Line a 4x8-inch terrine with strips of bacon, fill with mixture, and cover with bacon.
  • Place terrine in a water bath: Place the terrine in a larger baking dish and fill the larger dish with water up to the halfway point on the side of the pâté dish. This "water bath" will help the pâté retain moisture and make for a smoother consistency in the texture.
  • Bake: Bake uncovered in a moderate oven, 350 degrees F, for about 1 1/2 hours.
  • Cool under a weight: Cool the pate under a weight so that it will become firm and fine-textured. To do this, lay a piece of waxed paper or aluminum foil over the pâté and set on top of the entire surface a board weighted with a heavy object. Chill in the refrigerator for several hours. Serve: At serving time bring the terrine to the table, slice, and serve with crusty French bread or rolls and a glass of wine. Also good with lettuce and tomatoes. CHICKEN LIVER PâTé WITH RED ONION JAM

1 stick (8 tablespoons) plus 1 tablespoon unsalted butter, softened
1/2 yellow onion, thinly sliced
1 clove garlic, chopped
1/2 teaspoon ground coriander
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground allspice
Kosher salt
8 ounces chicken livers, trimmed
1/4 cup heavy cream
1 tablespoon brandy
1 tablespoon olive oil
1 medium red onion, thinly sliced
1 teaspoon fresh thyme leaves
Kosher salt
1/2 cup dry red wine
3 tablespoons red wine vinegar
3 tablespoons sugar
Toasted baguette slices, for serving

Steps:

  • For the chicken liver pâté: Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the yellow onions and garlic and cook until softened, 5 minutes. Stir in the coriander, pepper, allspice and some salt.
  • Increase the heat to medium high and add the chicken livers. Cook, stirring occasionally, until golden brown on the outside but still pink inside, about 3 minutes. Add the heavy cream. Transfer the mixture to a food processor and puree until smooth.
  • With the motor running, add the remaining 7 tablespoons butter in three batches and process until fully incorporated. Add the brandy and pulse to incorporate. Season with salt.
  • Transfer the pâté to a bowl, cover, and refrigerate until firm, at least 3 hours and up to overnight.
  • For the red onion jam: Heat the olive oil in a medium skillet over medium heat. Add the red onions, thyme and 1/4 teaspoon salt. Cook, stirring occasionally, until softened, about 8 minutes.
  • Add the wine and simmer, stirring occasionally, until most of the wine has evaporated, about 10 minutes. Add the vinegar and sugar and cook, stirring often, until the onions are very tender and the liquid is syrupy, 3 to 4 more minutes.
  • Cool the jam to room temperature, and then refrigerate until ready to serve. Serve warm or room temperature
  • To serve, spread baguette slices with pâté and top with red onion jam.

3 cups water
1 pound chicken liver
1 onion, thinly sliced
¼ cup chopped onion
3 tablespoons cooking sherry
¾ cup butter, softened
¼ teaspoon salt
¼ teaspoon ground black pepper
⅛ teaspoon ground mace

Steps:

  • In a medium saucepan, combine water, chicken livers, and sliced onion. Bring to a boil, reduce heat to low, and cover. Simmer for about 20 minutes, or until liver is cooked and tender. Remove from heat, drain, and discard onions. Also remove and discard any hard portions of the liver.
  • Place cooked livers in a blender or food processor, and process until smooth. Add chopped onion, sherry, butter or margarine, salt, black pepper, and mace; pulse to blend. With hands lightly greased, form pate mixture into a mound, and place on a serving platter. Chill for 1 hour before serving.

1 tablespoon milk
1 tablespoon finely chopped onion
½ (8 ounce) package cream cheese, softened
½ teaspoon sugar
½ teaspoon minced garlic

Steps:

  • In a medium bowl, mix together the sausage, milk, onion, and cream cheese. Season with sugar, garlic, chili powder and Worcestershire sauce, and mix until well blended. Wrap in plastic wrap, and refrigerate for at least 2 hours, until firm.

CHICKEN LIVER PâTé

James Martin's luxuriously rich dinner party starter can be made up to two days in advance for fuss-free entertaining - serve with toasted brioche, cornichons and chutney.

375g unsalted butter
400g chicken livers, trimmed
2 large garlic cloves, 1 crushed, 1 finely sliced
3 thyme sprigs, leaves only
3 tbsp madeira
4 slices brioche
1 Bramley apple, cored and diced
onion chutney, to serve
cornichons, to serve

Steps:

  • Heat 1 tbsp of the butter in a non-stick frying pan over a medium heat. When the butter is foaming, add the chicken livers and fry for 2 mins each side.
  • Stir the crushed garlic, some of the thyme and Madeira into the pan with the livers. Fry for 2 mins, letting the Madeira simmer. Transfer the mixture to a food processor, reserve 200g of the butter and add the rest to the processor. Blend everything to a smooth paste. Season to taste, then spoon into 4 x 70ml clip-top jars.
  • Melt the reserved butter in a medium frying pan and add the sliced garlic. Turn the garlic in the butter until slightly golden. Pour into the 4 jars of pâté, ensuring a few slices of garlic and the remaining thyme leaves go in each jar, and chill in the fridge for at least 4 hrs, or until set. Can be made up to 2 days in advance.
  • Before serving, toast the brioche, then cut into triangular quarters for serving. Stir the diced apple through the chutney. Serve the pâté on small wooden boards with the toasted brioche, cornichons and chutney.
