SHRIMP PICO DE GALLO

1 lb pre-cooked shrimp meat
3-4 medium tomatoes (diced)
1 medium onion (diced)
1/3 cup chopped fresh cilantro (1/2 of a bunch)
1 cup freshly squeezed lime juice (about 5-6 limes)
1 bag tortilla chips
Hot Sauce

Steps:

  • Rinse and thoroughly drain the cook shrimp meat. Squeeze out excess juice with your hands.
  • Using citrus juicer, squeeze the juice from limes after washing them. Use fresh lime juice.
  • Combine shrimp and freshly squeezed lime juice and marinate in the fridge at least 20 minutes.
  • In the mean time, dice your tomatoes, onion and cilantro.
  • Combine marinated shrimp, and vegetables together. Mix well.

1/4 cup fresh cilantro, chopped
1/2 teaspoon ground cumin
4 Roma tomatoes, diced
2 jalapenos, seeded and minced
2 limes, zested and juiced
2 limes, zested and juiced
1/4 red onion, cut into small dice
Kosher salt and freshly ground black pepper
Tortilla chips, for serving

Steps:

  • Mix the shrimp, cilantro, cumin, tomatoes, jalapenos, lime zest and juice and red onions in a bowl. Season with salt and pepper. Serve with fresh tortilla chips.

This is an awesome, fresh, healty mixture that is really diverse. I use it on grilled skirt steak or chicken tacos, I use it as a salsa for chips, and/or I add shrimp and serve it like ceviche. This is my default summer dish since it's so healthy and I almost always have the ingredients on hand. I served it at a party recently with shrimp in it and everyone loved it! Note: The amounts below are what I find to be a good balance of flavors, they don't need to be exactly these amounts.

4 roma tomatoes or 2 large tomatoes, seeded, chopped
2 avocados, pitted, peeled, chopped
1/2 white onion, chopped
2 jalapenos, seeded, chopped into small pieces (You could use 1, I prefer 2 for the spice)
1/2 cup cilantro, large stems removed, chopped
1 lime
salt (I prefer kosher salt)
1/2 lb cooked shrimp, tail-off, shelled, deveined, cut into approximately 1/2 inch size pieces (optional)

Steps:

  • Combine all vegetables in a bowl.
  • Squeeze juice from lime into bowl with vegetables, stir.
  • Add salt to taste.
  • If adding shrimp, add to bowl once shrimp is thawed(if frozen)and chopped.
  • Note: For larger shrimp I usually cut them into thirds, for smaller shrimp I usually cut them in half.

This is a really tasty, low-fat salad recipe that I found in the Chicago Sun-Times, originally from the Miraval Spa in Arizona. Prep time includes the 30 minute chill time.

1/2 lb peeled cooked medium shrimp
1 cup chopped tomato
1/4 cup chopped red onion
2 teaspoons minced jalapeno chile
1 tablespoon minced fresh cilantro
butter lettuce (optional)
6 ounces nonfat sour cream
1/3 cup low-fat cream cheese, softened
1 1/2 tablespoons fresh lime juice (from about 2 small limes)
1/2 teaspoon sea salt
1/4 teaspoon white pepper

Steps:

  • Combine shrimp, tomato, red onion, jalapeno and cilantro and refrigerate while dressing is prepared.
  • For dressing, combine all dressing ingredients in a small bowl and whisk until smooth.
  • Gently stir dressing into shrimp mixture; refrigerate for 30 minutes before serving.
  • I serve this in bowls lined with butter lettuce.

4 Roma tomatoes, small diced
1 medium red onion, thinly sliced
1 bunch freshly chopped cilantro leaves
4 cloves garlic, minced
1 jalapeno, minced
1 lime, juiced
Salt and freshly ground black pepper
1 pound bag blue corn chips
1 pound bag white corn chips
2 cups shredded jalapeno Munster cheese
2 cup shredded smoked Cheddar
1 large Maui sweet onion
Oil
1 large beefsteak tomato, diced
1 Anaheim pepper, diced
Green onions, sliced, for garnish
Freshly chopped cilantro leaves, for garnish

Steps:

  • Pico de gallo: Place the tomatoes, red onions, cilantro, garlic and jalapeno in a serving bowl and combine well. Stir in the lime juice and season with salt and black pepper. Set aside.
  • Heat grill to medium heat.
  • Make a boat out of tin foil, add the corn chips sprinkle with cheese. Slice Maui onion thinly, brush with oil and place on the grill. Sprinkle chips with tomatoes and Anaheim pepper, cover with a foil tent and place on grill until cheese is melted. Remove chips from the grill. Transfer the grilled onions to a cutting board and dice. Sprinkle onions over chips and garnish with green onions and cilantro. Serve with pico de gallo.

GINGER SHRIMP WITH PAPAYA PICO DE GALLO

1 pound large shrimp, peeled and deveined
3 tablespoons extra-virgin olive oil
1/2 teaspoon grated fresh ginger root
Kosher salt
3/4 cup diced papaya
3/4 cup diced tomatoes
1/2 cup diced yellow onion
2 serrano peppers, seeded and diced
2 tablespoons chopped fresh cilantro leaves
2 limes, juiced

Steps:

  • For the shrimp: toss the shrimp with the olive oil, ginger, and a pinch of salt. Let stand for 10 to 15 minutes or longer in the refrigerator.
  • For the Pico de Gallo: toss together the papaya, tomatoes, onions, serrano peppers (the more peppers, the more the heat, so act accordingly), cilantro, lime juice, and a pinch of salt. Set aside.
  • To serve: Heat the grill and grill the shrimp until cooked through, about 2 minutes per side. Simply plate the grilled shrimp with a nice heaping teaspoon of the Pico de Gallo. The tomatoes and the papaya go smashingly well with the heat of the chili and the twang of the ginger. Once again...good stuff.

1/2 bunch cilantro, chopped fine
1 serrano pepper, minced
2 tomatoes, small dice
1 small onion, small dice
Juice of 1 lime
1 (8-ounce) bottle ketchup
1/2 tablespoon Worcestershire sauce
1 teaspoon salt
4 drops hot sauce
2 ounces canola oil
2 cloves garlic
2 medium shallots
1 jalapeno, stem removed
1 bunch cilantro
Juice of 3 limes
2 ounces tequila
32 pieces shrimp, 16/20 count, peeled and deveined

Steps:

  • Combine all ingredients in a medium bowl. Fold together. Cover and refrigerate until needed.
  • In blender, add in canola oil, garlic, shallots, jalapeno, cilantro, lime juice and tequila. Blend into a smooth puree. In the refrigerator, marinate shrimp in a large bowl in puree for 1 hour. Grill over an open flame or in a grill pan or saute in 1 tablespoon oil. Serve shrimp warm with Pico De Gallo Cocktail Sauce.

3 (28 1/2 ounce) cans petite diced tomatoes
1 medium yellow sweet onion
1 cup cilantro
1/2 cup jalapeno pepper
1 medium head of garlic
1 tablespoon olive oil
1 lime
1 tablespoon vinegar
2 tablespoons salt

Steps:

  • Peel and mince the garlic; Combine with olive oil in a small skillet and sauté over low heat until it just starts to turn color – don’t let it brown; For a sharper taste, garlic can be left raw, and olive oil left out (great if you love garlic).
  • Wash and dice the tomatoes and place in a large bowl (one that can hold 1-1/2 gallons of salsa); Wash the cilantro, and cut 3/4 of the length of the stems from the bundle.
  • Wash the peppers, and remove the stems; Chop the onion, peppers (with seeds and veins), and cilantro and add to the bowl.
  • NOTE: The previous step will make a chunky salsa, or “Pico de Gallo,” and is the recipe I usually make (and most people prefer it); If you want a more traditional salsa texture, or just want to save a lot of time, use a food processor to finely chop everything except the canned tomatoes.
  • Strain the canned tomatoes to remove most of the water; If you don’t have “petite diced” canned tomatoes, then dice these; Add them to the bowl.
  • Add the sautéed garlic to the bowl.
  • Slice the lime in half and squeeze the juice from both halves into the bowl.
  • Add the vinegar.
  • Add 1 Tbsp of the salt, and reserve the other.
  • Mix well with wooden spoons and salt to taste (test by dipping with tortilla chips); The canned tomatoes contain salt and the Roma Tomatoes vary in sweetness, so this may cause variation in the right amount of salt.
