BRAISED MUSTARD GREENS

Number Of Ingredients 6

3 cloves garlic, peeled and sliced
1 pound bacon, chopped
2 bunches mustard greens, chopped
3/4 cup chicken stock
1/4 cup golden raisins
Salt and freshly ground black pepper

Steps:

  • On medium heat, saute garlic and bacon in a large saute pan.
  • While bacon is cooking boil water in a large pot. Blanch mustard greens in boiling water until bright green. Drain greens.
  • In a saute pan with the bacon, add greens and garlic. Stir together. Add chicken stock and raisins. Mix well together. Add salt and pepper, for taste, and let simmer for 5 minutes.

Steps:

  • Mix balsamic vinegar with brown sugar in a saucepan over medium heat, stirring constantly until sugar has dissolved. Bring to a boil, reduce heat to low, and simmer until glaze is reduced by half, about 20 minutes. Glaze should coat the back of a spoon. Let cool and pour into a jar with a lid; store in refrigerator.

Grandma's Greens Catalan-Style with Toasted Pine Nuts And Raisins image

3 Tbs. pine nuts
2 large bunches Swiss chard
3 Tbs. olive oil
2 large cloves garlic, sliced and then cut into slivers
2 Tbs. raisins
kosher salt and freshly ground black pepper

Steps:

  • Heat a small, dry skillet over medium heat and add pine nuts. Cook, shaking pan constantly, until nuts are fragrant and lightly browned - about five minutes. Set aside. Wash Swiss chard in several changes of cold water and drain. Trim and discard ends of chard leaves and slice chard into one-inch ribbons.
  • Pour a cup of water into a large, heavy-bottomed skillet, add chard leaves and cover. Turn heat to high and bring to a boil. Lift lid and use tongs to turn and wilt chard. Replace lid and continue to boil for four minutes, turning chard again with tongs after two minutes.
  • Drain chard in a colander placed in sink, rinsing with cold tap water to stop it from cooking further. Use a rubber spatula to press out as much moisture as possible and reserve. In a heavy skillet, heat olive oil on medium-low. Add garlic and raisins and cook, stirring occasionally, until garlic is soft but not brown. Add chard, season with salt and pepper and cook, stirring until heated through. Serve immediately.

  • Bring 1/2 cup water to a boil, add greens and cook over medium-high heat until wilted. Add the raisins and red onion, reduce the heat, cover and cook, stirring occasionally until greens are tender, about 10 minutes, adding more water if necessary. Meanwhile, in a pan lightly rubbed with olive oil, saute garlic until soft, about 1 minute. Stir in pine nuts and remove from heat. Toss together greens, garlic/pine nut mixture and balsamic vinegar. * Kale, collard greens, turnip greens or a combination can also be used.

  • In a very large pot, heat the oil over medium-high heat. Add the garlic and cook, stirring, for 1 minute. Add the mustard greens, stirring and working them down into the pot until they all fit. Cook for 5 minutes, stirring occasionally. Cover the pot, lower the heat to medium and continue to cook until the greens are very tender, about 10 minutes more. Remove from the heat, stir in the vinegar and season to taste with salt and pepper. Serve immediately.

2 tablespoons pine nuts
3 garlic cloves, peeled and chopped (or 1 1/2 tsp minced garlic from a jar)
1 tablespoon olive oil
3 tablespoons raisins
2 tablespoons balsamic vinegar

Steps:

  • Use a sharp knife to cut out the central rib and stem from each collard leaf. Rinse the leaves in a sink of cool water, lifting them into a colander to drain a bit (you want some water to remain on the leaves).
  • Toast the pine nuts over medium heat in a dry skillet for about 5 minutes or until golden.
  • Shake the pan often to keep the pine nuts from burning. Transfer to a plate, and set aside.
  • Place the garlic and oil in a large skillet, and saute over medium heat for 1 minute or until the garlic is fragrant.
  • Add the damp collards and stir, then cover the pan and cook for 2 minutes longer.
  • Add the raisins and pine nuts, and stir. Cover and cook for 2 minutes.
  • Stir in the balsamic vinegar, cover, and continue to cook for 1 to 2 minutes longer.

3 garlic cloves, peeled and sliced
1/3 lb sliced bacon, cut in 1/2 inch chunks
2 bunches mustard greens, spines removed and leaves roughly chopped
3/4 cup chicken stock
1/4 cup golden raisin
salt & freshly ground black pepper

Steps:

  • On medium heat, saute bacon in a large saute pan. When it is almost done, add your sliced garlic for a minute or two. Drain drippings when cooked and set aside.
  • While bacon is cooking, boil water in a large pot.
  • Blanch mustard greens in boiling water until bright green (about 2 minutes). *Cook's Note: Add a few greens a little bit at a time into boiling water. Make room for more greens by pushing down with a spoon. Drain greens.
  • Add greens to your saute pan full of bacon/garlic. Stir together.
  • Add chicken stock, raisins, salt and pepper to taste. Mix well together.
  • Let simmer for 5 minutes.
