This is from the Frugal Gourmet cookbook. I've always counted on this recipe for a simple, yet fantastic, side pasta dish.

Steps:
- Thinly slice the garlic and saute in the olive oil until not quite browned.
- Add the cream, tiny bit of salt, and ample pepper.
- Simmer for a moment to reduce the cream.
- Toss the cream with the hot pasta, just removed from the water.
- Add lots of cheese and a parsley garnish.
QUICK 'N EASY GARLIC PASTA
Trying to find something quick and simple to make for lunch/dinner? Well, here's one of my solutions. This side goes well with anything Italian, particularly chicken dishes. Note: The fresh garlic cloves aren't strictly necessary if you don't happen to have any. In that case skip step 2.

- Cook egg noodles per instructions.
- While your noodles are boiling splash a frying pan with olive oil (just enough to _lightly_ coat) and saute garlic cloves until they're lightly browned and aromatic.
- Add all ingredients together and mix until noodles are completely coated.
- Enjoy.

Steps:
- Boil water, add pasta to cook.
- Pour olive oil into a heated pan.
- When oil is hot, add chopped garlic and sauté.
- When pasta is finished, drain and pour into a large bowl. Add olive oil and garlic, and toss until pasta is coated.
- Tear basil leaves into small pieces and sprinkle over pasta; mix.
- Grate cheese over top.
- Salt and pepper to taste.

- Separate garlic into cloves; remove papery skins. In a large skillet over low heat, saute garlic in oil for 20 minutes or until golden brown. Remove from the heat; add parsley, oregano, salt and pepper. Toss with pasta serve immediately.

SPAGHETTI WITH OIL AND GARLIC (AGLIO E OLIO)

- Bring a large pot of cold water to a boil over high heat, then salt it generously. Add the pasta and cook, stirring occasionally until al dente, tender but not mushy, about 8 minutes.
- While the pasta cooks, combine the garlic, olive oil, 1 teaspoon salt and the red pepper flakes in a large skillet and warm over low heat, stirring occasionally, until the garlic softens and turns golden, about 8 minutes.
- Drain the pasta in a colander set in the sink, reserving about a 1/4 cup of the cooking water. Add the pasta and the reserved water to the garlic mixture. Mix well. Add the parsley and lemon zest (if using). Adjust seasoning, to taste. Transfer to a large serving bowl or divide amongst 4 to 6 dishes. Serve topped with grated cheese, if desired.
GARLIC PASTA
Pasta with herbs, delicious sauteed garlic, and plenty of freshly grated Parmesan cheese. Chop the garlic so that some is minced and some is larger pieces. You can substitute 1 tablespoon Italian seasoning blend for the fresh herbs.

- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
- In a skillet, saute garlic in oil on low heat, just hot enough to make the garlic sizzle; about 10 to 15 minutes. Season with basil, oregano, parsley, and crushed red pepper, and remove from heat.
- In a large bowl, toss cooked pasta with garlic and herb mixture, and let sit for 3 to 5 minutes. Sprinkle with Parmesan, and serve.

- Heat olive in a medium pan over medium heat. Add garlic and stir until fragrant, 1 to 2 minutes. Add butter and stir constantly until melted. Pour in chicken broth; add pepper and salt. Bring to a boil. Add spaghetti and cook, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Add more chicken broth if pasta starts to stick to the pan.
- Stir Parmesan cheese, cream, and parsley into the pasta and mix thoroughly. Serve immediately.

GARLIC CHILLI PASTA

- Cook the spaghetti according to packet instructions,
- In a frying pan over low heat, saute the garlic in the olive oil until golden but not browned add chillies,
- add pasta (using tongs or draining spoon) straight to frying the cooking liquid will stop the garlic and chillies from burning,
- add salt and pepper and more extra virgin olive oil,
- cook and mix till most on the cooked liquid has gone,
- now add your chopped flat leafed parsley,
- serve when parsly is mixed in, enjoy !!
GARLIC AND PARMESAN GEMELLI PASTA

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat 1 tablespoon oil in a large, deep skillet. Add chicken and cook until no longer pink in the center and the juices run clear, 7 to 8 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken and cut into small chunks.
- Add remaining oil, butter, and garlic to the skillet and begin cooking over low heat. Add cilantro and basil and stir to keep the mixture moving. Slowly add cooked chicken, Parmesan cheese, Italian seasoning, salt, pepper, and red pepper. Cook, stirring often to keep the cheese from burning, for about 20 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add gemelli and cook, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Drain pasta and return to the pot. Pour in sauce and toss to coat.

- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Save ¼ cup (60 ml) of pasta water, then drain.
- Add the olive oil and garlic to a large cold sauté pan. Turn the heat to medium-low and slowly heat up until the garlic is fragrant and lightly colored, about 3 minutes.
- Add the chile flakes and cook for another minute.

CREAMY GARLIC PASTA
This is a great fast comfort food dish that my dad got a long time ago out of some gourmet magazine and has given to me. It's simple and cheap, and definitely for garlic lovers! Be prepared to sweat garlic in the gym the next day.

- Press all of the garlic with a garlic press.
- Start to heat the water for cooking the spaghetti now. Don't forget the salt!
- Heat the garlic and olive oil on very low in a frying pan for about 10-15 minutes. You know it's ready when other people can smell it from everywhere within your dwelling. DO NOT LET THE GARLIC BROWN. If it starts to sizzle, add some olive oil to cool it down.
- Meanwhile add the spaghetti to the water if it's boiling. Cook to al dente.
- Add the heavy cream to the garlic mixture and turn up the heat to medium. Stir occasionally until the sauce is consistent throughout.
- Add half a handful of the parsley to the sauce and cook for another two minutes.
- Combine the cooked pasta, sauce and parmesan cheese. Stir well and serve!
- Use salt, pepper, parmesan and more parsley for garnish.

First EVERY ingredient in this recipe is done to taste. The ingredients are just an estimate. When it's done right it hits the spot. I would say the first 2 times you make it won't be the best of the recipe, third time is a charm. Do not cut back on the salt! I can not say this enough. If you do the dish will lack that certain something.
