SPENT GRAIN BEER BREAD
I am a homebrewer and brew all grain beer. As a byproduct of mashing 10+ lbs. of grain to make wort for beer, you have 10+ lbs. of grain to use. I hate to dispose of anything, especially food, I wanted to find a good way to use this leftover grain. I use some of the grain for this bread recipe and put the rest into compost for my outdoor plants. Really there is no true combination of grain, I just use whatever I used to brew beer with. It all gets mixed together during the mash so it is never the same blend, but that keeps it interesting!

- Proof yeast in mixture of water and sugar (make a starter). You should see krausen in less than an hour.
- Put spent grain in large mixer bowl. Mix in starter, and start adding flour. Keep adding flour until the dough is smooth and no longer sticky. Place dough in a large bowl, cover with a clean towel, and let rise until doubled. Punch down dough, and either:.
- A) Split into two loaves and place in greased bread pans.
- B) Form into a round loaf and place on cookie sheet with a thin layer of corn meal under the loaf.
- Allow loaf(ves) to double in size, bake in 375 F oven 30 to 40 minutes until browned and a long pin, such as a turkey pan, comes out clean after being inserted into the center of the loaf.
SPENT GRAIN WHEAT BREAD
This bread is an excellent way to use some of the grain that is left over when brewing beer. Just make sure that you aren't using spent grain that has hops mixed in with it!

- Add everything to the Bread machine, in the order listed. (If your grain is particularly wet, you may need to add more flour.).
- If your Bread Machine has "Large loaf"and "Dark crust" settings use those. Otherwise, you could just use the machine to mix the dough then bake it in the oven at 350 Degrees Fahrenheit for approximately 20 minutes.
- Enjoy with a glass of whatever beer the grain was from.

SPENT GRAIN BREAD
This bread is made with grains leftover from making beer. If you are not a home brewer Your local micro brewer, homebrew shop or homebrewer friend I'm sure will give this to you! This bread has such a wondeful sweet and nutty taste. It will also vary in taste depending on the beer that was brewed.

- 1. SOAKER The soaker works to hydrate the grains in the whole wheat by mixing it with water and salt and let it sit overnight. This makes the grain softer but also enhances flavor and makes the bread a little sweeter. Just mix the SOAKER ingredents cover and let site for 12 -24 hours
- 2. BIGA 'Biga' for an overnight starter that uses a small amount of yeast and also soaks the whole wheat flour to increase flavor and acidity. Make a well in the flour. Pour the water into the well and then sprinkle the yeast in the water. Mix the water, gradually drawing in all the flour until hydrated. Once you have a ball of dough, knead in the bowl using wet hands for about two minutes. You may need to wet your hands again, but be careful not to add too much water to the dough. Let the dough rest for five minutes, and then knead again with wet hands for about one minute. This time, the dough will be easier to work with, although it will still be tacky. Cover and refrigerate for at least 8 hours.
- 3. DOUGH Now we make the bread. Remove the Biga from the refrigerator about two hours before starting to mix the final dough.
- 4. Chop the soaker and biga into 10-12 smaller pieces each - sprinkle some extra flour to keep them from sticking to each other. Hydrate the yeast in a little warm water (just enough to form a thick paste).
- 5. Add to biga and soaker pieces along with the remaining ingredients except extra flour. Mix with a spoon or knead with wet hands for a few minutes to evenly distribute all ingredients. Take the dough out onto a lightly floured surface. Knead for 3-4 minutes until dough is soft and tacky but not sticky. Form the dough into a ball and let it rest on the counter for five minutes.
- 6. Knead the dough again for about a minute. The dough should feel soft, supple, and very tacky. Place the dough into a lightly oiled bowl, covering it in oil on all sides. Cover the bowl and let the dough rise at room temperature for 45 to 60 minutes.
- 7. Form the dough into two loaves or smaller rolls. Cover loosely and let rise an additional 45 to 60 minutes.
- 8. IN A COVENTIONAL OVEN: Preheat oven to 425F. Add a steam pan to the oven and a hearth stone. When you put the bread into the oven, pour a cup of water into the steam pan and spray several times with a water mister inside the oven (not on the bread). The purpose is to create steam that will produce a crusty crumb on the bread. Lower the temperature to 350F and bake for 20 minutes. Rotate the bread 180°and bake another 20-30 minutes until the bread is done (thump the bottom to hear if it sounds hollow).
- 9. As you can see in the photo my bread has a pattern. I use reed bread forms to rise my breads. I purchase them from King Arthur Flour Company.

- Eliminate as much of the moisture content as possible by placing in a cheese cloth and squeezing out the water or placing spent grains in a colander over a baking sheet and pressing on it to squeeze out moisture. if you feel so inclined, a good old fist squeeze is really effective, just needs to be repeated quite a few times.
- Spread the spent grain into thin layer onto as many baking sheets as your quantity needs. You may need to dry two batches of four baking sheets consecutively. Keep any spent grains not being dried in the refrigerator.
- Dry in oven set to the lowest setting, usually this is 150°F, for 4 - 6 hours. Precise time depends on how much moisture you were able to squeeze out already and how thick you spread the grain onto the baking sheets.

- Preheat the oven to 375°F (190°C) and grease a loaf pan. If desired, sprinkle a little sugar into the greased pan to give your bread a crisp, sugary crust.
- In a large bowl, mix the spent-grain flour, all-purpose flour, salt, sugar and baking powder. Make a well in the center of the dry ingredients and slowly pour in the beer. Stir well until all of the elements are moist and well distributed.
- Pour the batter into the pan and bake for 45 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the bread from the oven and transfer it to a wire rack when the pan is cool enough to handle. Cool the bread completely before slicing.

- Compost it: Probably the easiest way to put spent grain to work is composting it. In most cases spent brewery grain could be classified as a nitrogenous waste (fresh = green matter) on the same level as grass clippings.
- Baking: Spent grain can be used in your own cooking and baking too. The Grain can either be used wet (usually after as much liquid has been pressed out of the grain as possible) or it can be dried and ground into flour.
- Stock Feed: If you happen to own or know someone that owns stock animals such as horses, cows, pigs, sheep, etc. spent grain can be a good source of feed.
- Flock Feed: Many of the same things are true of feeding spent grain to poultry as feeding it to stock animals. Spent grain is a good source of selenium which has been shown (PDF) to be important to poultry breeding and egg/meat quality.
- Grow Mushrooms: Another interesting use of spent grain is as part of the substrate used to grow edible mushrooms. Because of the spent grains high nitrogen content it is necessary to mix in some sort of carbonaceous matter (much like composting) such as straw or wood chips (a ratio of 1 part grain to 4 or 5 parts straw works well).
- Dog Treats: You can use your spent grain as filler for homemade dog treats as well, but please be aware that hops are very toxic to dogs, so never use spent grains that have come in contact with hops.

- Assemble Your Ingredients. First, make beer, as I outlined here, then wash your hands and clean the kitchen. Make sure you have thoroughly cleaned a work surface because we will have to knead the bread directly on the counter.
- Prepare the Yeast. When you buy bread yeast at the store it comes dehydrated and in suspension, so the first step in making bread is making the yeast up and making sure it's alive.
- Mix Everything. Add in one and a half tablespoons of salt and one cup of flour and mix to make sure everything is evenly distributed. Add the spent grain and two cups of warm water and stir until combined.
- Kneading. Place some flour on the clean counter and dump out the mixture. Knead the dough by pressing the dough away with the heels of your hands and then folding it over back toward you.
- Raising. When you are done kneading put some flour in a large bowl and plop the dough into it. Spread a little bit of oil onto some plastic wrap and place the plastic wrap over the bowl with the oil sound down, to prevent sticking.
- Shaping. While the bread is raising grease in flour the pans, if you are using them. This is done by taking some kind of fat, like margarine, butter or crisco, and using your fingers or a towel, to wipe every inside surface of the pan.
- Make a Snack. While the bread is in the oven, use the rest of the egg glaze to make scrambled eggs. Baking bread is hard work and you deserve a break.
- Remove From the Oven. When your bread looks done pull it out and dump the bread out of the pans immediately, or they will keep baking. Knock gently on the bottom of the bread, if they sound hollow they are done baking.
- Enjoy Your Bread. You worked hard! Have a sandwich. Homemade bread is easy and inexpensive to make and creates flavorful, healthy bread. It's simple enough for every day eating, but impresses people at a party.
