1 garlic clove, minced
1/4 teaspoon salt

Steps:

  • In a medium bowl, combine all ingredients. Cover and refrigerate for 1-2 hours before servings.

  • In a medium bowl, combine 4 diced plum tomatoes, 2 tablespoons chopped cilantro, 1/2 minced red onion, 1 minced garlic clove, 1 minced jalapeño (seeded), the juice of 1 lime, 1 teaspoon fresh celery juice (optional), 1/2 teaspoon kosher salt and a few grinds of pepper; mix well. Cover and refrigerate to allow the flavors to meld, 1 hour or up to 3 days. Drain any excess liquid before serving.

2-4 jalapeño or serrano chiles or use more or less to taste, tops trimmed but not seeded
1 medium garlic clove
4 large, ripe fresh tomatoes, peeled but not seeded (about 2 ½ pounds)
6-8 scallions with part of green tops
¼ cup (not packed down) fresh cilantro leaves, stripped from stems
Juice of 1 large lime
Salt to taste
1 teaspoon Mexican oregano, or to taste

Steps:

  • With a large sharp knife, chop chiles very fine and reserve. Mince the garlic. Coarsely chop the tomatoes. Finely chop the scallions and cilantro. Place all fresh ingredients except chiles in a large bowl. If tomatoes are very dry and juiceless, gradually add up to ½ cup cold water to give a light salsa consistency. Stir to mix ingredients. Add chiles a little at a time, tasting, until it is as hot as you like. Add 1 teaspoon (or to taste) crumbled oregano. Squeeze lime juice into the salsa; gradually add salt to taste. Use at once.

Ok i learned to make this Pico de Gallo from my mother who learned it from her mother and it has been like that since the women in my family has been making it. This Pico de Gallo can can be as tangy as you want it to be if you want more lime add more if you want more spicyness add of course more jalapeños. Tips: Remove the seedsand veins of the peppers if you dont want it to be too spicy hot. Optoinal: Add Avocado to give the Pico de Gallo a blend between the spicy Jalapeños and the sweet Avocado. But be advised when you use Avocado you must eat it sooner since Avocado goes bad faster then the other ingredient, but the good news is that the acidic nature of the jalapeño keeps the avocado from spoiling so soon. Store in a sealable container in the fridge.

1/2 cup jalapeno, chopped (roughly around 5-6 peppers)
1/2-1 cup tomatoes, chopped (i use roma tomatoes but any tomatoes will doexcept green tomatoes)
1/2 cup onion, chopped (i use yellow onion, but white onions do just as good just make sure NOT to use sweet onions)
1/2 cup fresh cilantro, chopped (dont chop it until you will add it so it stays fresh longer)
2 limes, juice of (you just need the squeezed juice)
1 avocado, chopped or mashed (optional, i use Hass Avocado it has the black bumpy skin or shell)
salt, to taste

Steps:

  • Mix the chopped Jalapeños, Tomatoes, Onions in a medium size bowl. Optional here also add the Avocado if you choose to use it.
  • Add the Lime juice and salt to taste.
  • Finally add the Cilantro last because since its a herb it will wilt faster and you don't want brown little leaves in your food.

35-40 dried corn husks
2 tablespoons vegetable oil
1 medium-size white onion finely chopped
2 garlic cloves minced
2 poblano chiles roasted, peeled, tops removed, seeded, and diced
2 cups fresh or drained canned corn kernels or 1 package (10 ounces) frozen
1½ tablespoons chopped fresh cilantro leaves
Salt to taste
½ recipe Basic Tamal Dough

Steps:

  • Place the corn husks in a large bowl, cover with boiling water, and let soak while you prepare the filling.
  • Heat the oil in a large skillet over high heat until rippling. Add the white onion and garlic and cook, stirring often, until golden, 2-3 minutes. Reduce the heat to medium; add the poblanos, stirring well to combine, and cook 2 minutes longer. Stir in the corn kernels and season with cilantro and cook until the moisture has evaporated, about another 3 minutes. Season with salt. Cool thoroughly.
  • Fold or beat the corn mixture into the prepared tamal dough, being sure it is evenly distributed. Fill, fold, and steam the tamales, using about ¼ cup of the masa-corn mixture for each husk.
  • Serve with a picante sauce such as Pico de Gallo Norteño or Salsa de Tomatillo con Chipotle.
