This is an authentic recipe for Pico de Gallo from "Truly Mexican", a fabulous cookbook filled with authentic Mexican recipes. Use this recipe as a base and adjust to your taste - more or less spiciness, and even add olive oil if you want! This makes enough for 8 tacos (as a topping).

3 large tomatoes
1/3 cup cilantro/coriander leaves (, roughly chopped)
1/4 cup finely chopped white onion ((Note 1))
1 1/2 tbsp finely chopped jalapeño or serrano chilli ((adjust to taste))
1 - 2 tbsp lime juice ((adjust to taste))
1/2 tsp salt ((table salt) or 3/4 tsp kosher / sea salt flakes)

Steps:

  • Cut the tomatoes in half and use a teaspoon to scoop out the seeds and watery centre. Cut into 1cm / 1/3" dice.
  • Combine with remaining ingredients. Set aside for 5 to 20 minutes. Serve as a topping or side for things like tacos, burritos, enchiladas, quesadillas and any Mexican dish!
  • This can be made ahead up to 1 day. Leave out the lime juice and salt (otherwise the tomato juices will leech out), cover and refrigerate. Drain excess liquid, add lime juice and salt just before serving.

1/2 medium-size onion, more or less to taste
1 garlic clove (or about 1 teaspoon chopped garlic)
1/2 jalapeno (more if you like heat)
1/2 cup packed cilantro
1 1/2 pounds vine-ripe tomatoes
1 lemon (or 1-2 tablespoons lemon juice)
Salt, to taste

Steps:

  • Fit the bowl of your food processor with a chopping blade.
  • Add half the onion, the garlic, and cilantro to the bowl.
  • Put the lid on and pulse the processor 2 to 3 times.
  • When it's chopped, add the half of jalapeno (seeds and pith removed).
  • Pulse to chop again.
  • Cut the tomatoes in half, add them, and pulse just enough to chop.
  • Add salt and lemon juice to taste.
  • Pulse one more time to combine.
  • Pour in a bowl, cover, and refrigerate until ready to serve (or pour in a bowl, then add salt and lemon juice to taste and stir with a spoon, cover, and refrigerate until ready to serve).

1 bunch green onion, thinly sliced
3 jalapeno peppers, finely diced
1 cubanelle pepper, finely diced
1 anaheim chili, finely diced
2 tablespoons chicken bouillon (Maggi powder)
2 ounces lime juice
2 tablespoons dried cilantro

Steps:

  • Dissolve chicken bullion in heated lime juice.
  • Add all ingredients together and toss. The longer it sets, the better the flavors blend. The bullion, lime juice and cilantro measurements are estimated. Adjust to your own tastes.
  • Optional: Depending on how hot you like it, you may add 1/2 to 1 extremely finely chopped habanero or bonnet pepper. **Use caution when working with the peppers or you will regret it later. Try to use gloves.
