6 sheets frozen phyllo dough (thawed)
4 tablespoons unsalted butter
4 tablespoons sugar
1 tablespoon instant espresso powder
1 cup heavy cream (cold)
2 tablespoons sweetened condensed milk
1/4 cup mascarpone cheese
1/4 teaspoon ground cinnamon
Coarse salt
1/2 teaspoon unsweetened cocoa powder
2 tablespoons Baileys or Kahlua (optional)

Steps:

  • Preheat oven to 325.
  • Melt butter in a small saucepan or in a bowl in the microwave.
  • Phyllo dries out very quickly so lay a very slightly damp towel over the unused sheets while you work). Lay one sheet of phyllo flat on a work surface. Brush phyllo with butter and sprinkle with sugar (about 2 teaspoons worth).
  • Repeat layering twice more with phyllo, butter, and sugar (so you have three layers of phyllo).
  • Cut stacked phyllo into 12 pieces that are approximately 3 inches square and gently press each square into a cup of a mini muffin pan, crimping edges as needed so phyllo sits flat in bottom of cup.
  • Repeat with the next sheets until all the cups are filled.
  • Bake until phyllo is golden brown, about 20 minutes, rotating pan halfway through.
  • Let cool completely in pan on a wire rack. You can store them (un-filled) for up to 2 days in tupperware. They're delicate so don't squish them.
  • Meanwhile, in a medium bowl or a stand mixer, combine espresso powder with a small amount cream and stir until powder dissolves. Stir in remaining cream, condensed milk, mascarpone, cinnamon, liquor (if using) and pinch of salt.
  • Beat until firm but not dry peaks form. Refrigerate until ready to serve (up to 2 days).
  • Fill phyllo cups with cappuccino cream and sprinkle with cocoa powder. Serve immediately.

1 pound non-tempering chocolate, coarsely chopped
20 chocolate pastilles (small, chocolate disks in candy-making shops)
Cognac Caramel Ganache, recipe follows
Coffee Ganache, recipe follows
White Chocolate Ganache, recipe follows
Cocoa powder, for garnish

Steps:

  • Place the non-tempering chocolate in the top of a double boiler over hot, but not quite simmering, water. Melt the chocolate, stirring until it is smooth. Remove the boiler from the heat. Pour the chocolate into 1/2-inch circular molds and prepare the molds as directed on the chocolate packaging (reserve some melted chocolate for making the handle as directed below). Once hardened, pop the cups out of the mold.
  • To make the handle of the coffee cup, put some melted chocolate in a pastry bag. Using a fine-point tip, pipe out a "C" for each mug on a piece of waxed paper. Allow the chocolate to harden.
  • Using a fine point tip, pipe out a dollop of melted chocolate onto each pastille and place a cup on each to glue them together, making a coffee cup shape. Do the same for each handle and allow to harden.
  • Place the 3 ganaches in 3 different pasty bags. Using a circular motion, pipe 1/3 of the Cognac Caramel Ganache in the bottom of each mug. Next, pipe the Coffee Ganache up to the top of the mug. Then, pipe the White Chocolate Ganache on top. Dust each cup lightly with cocoa powder and serve.
  • 1/4 cup water
  • 1 1/2 tablespoons corn syrup
  • 2/3 cup sugar
  • 1/2 cup heavy cream
  • 2 tablespoons Cognac
  • Heat a medium saucepan over high heat. Add the water, corn syrup, and sugar and bring the mixture to a boil. Do not stir the mixture once the sugar begins to boil. When the sugar begins to caramelize on the sides, remove the pan from the heat and slowly stir until the color is a medium brown. Carefully add the heavy cream and stir; then add the cognac and stir until well blended. Store the ganache at room temperature until ready to use.
  • 1/2 cup heavy cream
  • 1 tablespoon instant coffee
  • 1 cup chopped white chocolate
  • 1 tablespoon coffee liqueur
  • 1/2 teaspoon coffee extract
  • Heat a medium saucepan over medium-high heat. Add the heavy cream and instant coffee and slowly bring to a simmer. Put the white chocolate in a bowl and pour the hot cream over the chocolate and stir. Add the coffee liqueur and stir well; then add the coffee extract and stir until it is blended. If you need to melt the chocolate more, use a double boiler (as described above).
  • 1/2 cup heavy cream
  • 3/4 cup chopped white chocolate
  • Heat a medium saucepan over medium-high heat. Add the heavy cream and slowly bring to a simmer. Put the white chocolate in a bowl and pour the hot cream over the chocolate, stirring until it is melted.

1/4 cup unsalted butter
2 tablespoons butter
1/4 cup sugar
4 sheets phyllo dough
1/3 cup heavy cream
1/3 cup sour cream
2 tablespoons sugar
1/4 teaspoon vanilla
1/4 cup shelled pistachios, chopped and toasted
3 cups fresh raspberries

Steps:

  • Position rack in lower third of oven. Heat oven to 350°F Butter inside and rims of 6 LARGE muffin cups with 2 tbsp of butter.
  • Melt in sauce pan 1/4 cup butter.
  • Measure out sugar and set aside.
  • Stack 4 sheets of phyllo dough flat on top of each other and cover with plastic wrap and damp towel to prevent drying.
  • Place one sheet of dough on workstation and brush with melted butter then sprinkle with sugar. Cover with second sheet of phyllo dough; butter it and sprinkle with sugar in same manner. Repeat process for remaining sheets.
  • Cut stacks in 12 square stacks, 4 1/2 inches per side ( 4 strips lengthwise, 3 widthwise). Place 1 square stack in muffin cup; ease it in with the back of fingers so it covers half of the bottom and rises to hang over the side of the cup. Ease in second stack, slightly overlapping the first to cover the other half of muffin cup. Repeat for 5 remaining cups. Bake dough until golden brown, 10 to 15 minutes; let cool completely then remove from muffin cups.
  • Whip together in bowl until almost stiff heavy cream, sour cream, 2 table spoons sugar and vanilla.
  • Fold in pistachios.
  • Just before serving, place phyllo cup on serving plate and divide cream among cups.
  • Garnish cups with fresh raspberries and mint sprigs.
  • Serve immediately.

9 fresh phyllo pastry sheets or frozen, thawed (each about 17x13 inches), stacked and halved crosswise, forming eighteen 8 1/2x13-inch rectangles
10 tablespoons (1 1/4 sticks) unsalted butter, melted
8 tablespoons (about) sugar
8 tablespoons (about) finely chopped toasted hazelnuts
Chocolate Mousse
4 large eggs, separated
1/2 cup sugar
1/4 cup (1/2 stick) unsalted butter, cut into 1/2-inch pieces
1/4 cup water
1 teaspoon instant espresso powder
8 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1 1/2-pint basket fresh raspberries
2 ripe pears, peeled, diced

Steps:

  • For phyllo cups:
  • Preheat oven to 375°F. Generously butter every other cup in 12-cup muffin pan. Place 1 phyllo rectangle on work surface; cover remaining phyllo with plastic wrap and damp cloth to prevent drying. Brush rectangle with melted butter; sprinkle with 1/2 tablespoon sugar and 1/2 tablespoon hazelnuts. Place second phyllo rectangle atop first; brush with butter and sprinkle with 1/2 tablespoon sugar and 1/2 tablespoon hazelnuts. Repeat 3 more times; top with 1 more rectangle and brush with butter, making stack of 6 rectangles. Using small sharp knife and 6-inch-diameter plate as guide, cut out two 6-inch round stacks. Press each stack into 1 buttered muffin cup. Repeat procedure 2 more times, making 4 more phyllo cups (6 total).
  • Bake phyllo cups until golden and crisp, about 10 minutes. Immediately lift phyllo cups from pan, twisting carefully to loosen; place on rack. Cool completely. (Can be made 2 days ahead. Store airtight at room temperature.)
  • For mousse:
  • Whisk egg yolks, 1/4 cup sugar, butter, 1/4 cup water, and espresso powder in large metal bowl to blend. Set bowl over saucepan of simmering water (do not let bowl touch water); whisk constantly until thermometer inserted into mixture registers 160°F, about 3 minutes. Add chocolate and whisk until melted and smooth. Turn off heat; leave bowl over water.
  • Using electric mixer, beat egg whites in another large bowl to soft peaks. Gradually add remaining 1/4 cup sugar, beating until stiff and glossy. Remove chocolate from over water. Fold 1/3 of beaten whites into warm chocolate mixture to lighten. Fold in remaining whites. Cover and chill until set, at least 3 hours or overnight.
  • Fill phyllo cups with mousse (reserve remaining mousse for another use). Top with raspberries and diced pears and serve.

1 tablespoon cornstarch
1 cup half-and-half (or light cream)
2 beaten egg yolks
1 cup ground walnuts (or pecans)
4 teaspoons granulated sugar
4 sheets frozen phyllo dough, thawed according to package directions (17 x 12 inches)
3 tablespoons butter or 3 tablespoons margarine, melted
1 ounce mexican chocolate, cut up (or semisweet)
1 tablespoon butter or 1 tablespoon margarine
3/4 cup sifted powdered sugar
1/2 teaspoon vanilla
2 -3 teaspoons hot water
cocoa powder
1/2 cup whipping cream
1/2 teaspoon vanilla
grated semisweet chocolate (optional)
cinnamon

Steps:

  • In a small heavy saucepan stir together honey and cornstarch. Add half and half or light cream. Cook and stir over medium heat until mixture is thickened and bubbly. Cook and stir for 2 more minutes . Remove from heat. Gradually stir some of the hot mixture into the egg yolks. Return all to saucepan. Bring to a gentle boil; reduce heat. Cook and stir for 2 minutes longer. Move to a small bowl. Cover surface with clear plastic wrap. Chill.
  • In a bowl combine ground walnuts and granulated sugar. Set aside. Unfold phyllo. Place one sheet of phyllo on work surface; brush with some of the 3 tablespoons melted margarine or butter. Sprinkle evenly with one-third of the nut mixture. Repeat brushing, sprinkling, and layering 2 times. Cover with remaining sheet of phyllo; brush top with melted margarine or butter. Trim edges. Cut phyllo stack crosswise in fourths, and then lengthwise in thirds, to form twelve 4-inch squares.
  • Gently press phyllo squares into twelve greased 2-1/2-inch muffin cups, allowing edges to extend upward.
  • Bake in a 350*F. oven for 10-15 minutes or until golden. Cool completely on a wire rack. Carefully remove cups from pan. (If desired, cups may be baked ahead of time, then placed in a rigid plastic container and frozen up to 1 week. To thaw: let stand at room temperature 20-30 minutes.)
  • To serve:
  • In a small, heavy saucepan melt the 1 ounce chocolate and the 1 tablespoon margarine or butter over low heat, stirring until smooth, Remove from heat. Stir in the powdered sugar and the first 1/2 teaspoon vanilla. Add hot water, 1 teaspoon at a time, until it reaches drizzling consistency. Lightly drizzle melted chocolate on dessert plates. Sift cocoa powder over chocolate. (Chocolate can also be drizzled over edges and insides of cups.)
  • In a small, chilled mixing bowl, beat the whipping cream and remaining 1/2 teaspoon vanilla with an electric mixer on medium speed until soft peaks form; fold in chilled egg yolk mixture. Spoon cream into each phyllo cup. Top each with grated chocolate, if desired.Sprinkle with cinnamon if desired. Serve immediately. Makes 12 servings.
